If the fillet is cold before serving, use the microwave. And then pour the sauce over it.
    • Preparing the shrimp sauce, pour the shrimp. We cut the tomatoes. Cooking canapes. All together it will take 20 minutes.
    • Preparing the sauce for the turkey. 10 minutes.
    • Mix the salad right before serving. 2 minutes.

    • Drain the liquid from the olives, mozzarella, make a snack on skewers. I recommend entrusting this part to the children, then you will spend 5 minutes.
    • Spread the fish paste on the crackers. We decorate. 10 minutes.
    • Cooking mayonnaise, season Olivier. 10 minutes.

As you can see, it will take you only an hour to prepare on December 31st. If you want, you can form a meatloaf in the morning, refrigerate. This will further reduce the preparation time before the holiday.

Menu for a company of 8 people


If you are going to celebrate big company, I want to surprise guests and not inflate the budget. So I made up relatively budget menu. The main thing with this option is not to cook a lot of dishes, but simply increase the amount of each. You can also ask for help with the preparation of one of the guests. Or ask to bring some of the salads or a cake with you. The main emphasis in this menu is made not only on its budget, but also on the fact that on the 31st you only need to put the finishing touches. And you still spend only an hour cooking. I would rather boldly suggest that you include in new year menu for the company salad with pearl barley instead usual olivier.   2. For 3-4 days. Cooking lean cookies with marmalade. Let the finished cookies cool and put them in an airtight box. The total cooking time is about 1.5 hours.
  3. 31th of December.
    • Let's start with the salad. If you use the attachments for a meat grinder, food processor or blender to grate vegetables, it will take about 15 minutes. If there are no nozzles, to speed up the process, ask your children or husband to help grate the vegetables.

What will I cook for the New Year's table

Everything is simple with my New Year's menu. I will celebrate the New Year with my family - my husband, daughter, parents and our godfather. I really hope that this year he will not come by himself. As a basis for the menu, I will take the above menu for the new year for a family of 4. Just calculate the amount of meatloaf so that would be left for breakfast. For each person, I will count 200 grams of pork (raw, before processing) for New Year's Eve. + 200g*3 for brunch or rather than lunch January 1st for me, husband and daughter. Plus, I will add another salad, because. adults will be 5-6 people + 12 year old daughter. What's left of the salads will be the same for brunch the next day.

If they run unexpected guests, I will have fruits, sweets, something for meat and cheese cuts, pickled plums, cucumbers, tomatoes - in general, something that can be put on the table very quickly as light snack. Because from experience - after 12 at night, guests come already from the table and don’t eat much. And I don't want to cook too much.

This is the approximate amount of food that one person at the New Year's table will eat. If you don’t want to calculate for each type of dish separately, focus on an average of 500 grams of food per man and 350-400 grams per woman. Cold snacks - 100-200 gr. (cheeses, vegetables and cold cuts, fish, mushrooms)

1.Shrimp salad

1/2 head of Chinese cabbage

300 g peeled cocktail shrimp (royal prawns will not work!)

Boil the eggs, cool, separate the protein from the yolk, cut the protein. The yolk can be left for decoration. 2. Cook the shrimp in lightly salted water. 3. Then we throw into boiling water, after cutting into rings, squids. 4. Cut the crab sticks. 5. Now add a couple of tablespoons of mayonnaise, mix, and only then add red caviar (so as not to burst). 6. Salt and pepper to taste, but I advise you to add salt. After mixing everything, because. caviar and mayonnaise can give enough salt.

3.Smoked chicken salad with potatoes

Ingredients: 150 g smoked chicken

3 potatoes

1 carrot

2-3 pickles

2 tbsp mayonnaise

1 bunch green onions

canned peas -

salt and pepper

Cooking method:

Pre-cook potatoes and carrots. Cool and clean.

Boil the eggs, cool, peel and finely chop.

Dice potatoes and carrots.

Cooking method

Dip the squids in boiling salted water for 5 minutes, clean and cut into strips. Cut the eggs in the same way (I use an egg cutter - the size is just right).

Chop the onion into smaller pieces and simmer in vegetable oil until it starts to turn yellow (do not fry). Before putting the onion in the salad, the oil can be squeezed out with a spoon if dressing with mayonnaise is intended. You can leave the oil, then season with mayonnaise is not necessary.

5. Snack "Cheese balls with grapes"

blue cheese "Dor blue" ( room temperature) - 100 g,

INGREDIENTS

Finely chop the dill, grate egg whites, mix with melted cheese, adding a little mayonnaise.

Fill the tartlets with the resulting mass.

7. Snack for the New Year

300 gr. slightly salted salmon (or trout)

350 gr. Philadelphia cheese

1 tbsp gelatin

100 ml. cream with 20% fat

Mix cream, gelatin and leave for 5-7 minutes, so that the gelatin swells.

Heat the water almost to a boil. Put a container with gelatin and cream in hot water stir until the gelatin is completely dissolved.

Finely chop the dill.

Mix cheese, dill and cream.

Cover the form (I have 20x10x10) with cling film so that the edges hang down by 10 cm. Lay out the pieces of fish overlap.

Spread half of the buttercream filling.

Put a layer of fish.

Spread the remaining half of the creamy filling.

Put in the fish pieces.

Bend the edges of the film so that the fish is completely closed. Put in the refrigerator for 3-4 hours. Before serving, cut the roll into slices 1-1.5 cm thick.

8. Cheese "Raffaello"

processed cheese - 200 g,

butter - 200 g,

garlic - 2 cloves,

olives - 1 jar,

crab sticks - 1 pack

Grate cheese and cold butter on a coarse grater.

Pass the garlic through a garlic squeezer.

Mix cheese, butter and garlic until smooth.

From the resulting mass, make small balls and knead each ball so that cakes are obtained.

Put a stuffed olive in the center of the cake and connect the edges of the cake so that the olive is inside the cake.

Put the grated crab sticks on a plate and roll the finished balls in them.

9. Lavash roll with cod liver

Lavash thin - half a large one or 3 small round ones

Cod liver - 1 jar (190 g)

Boiled eggs - 2 pcs.

Chopped parsley - 2 tbsp. spoons

Green onion - feathers of 1 onion

Hard cheese - 125 g

Mayonnaise - 3 tbsp. spoons

Ground black pepper

For the filling, three eggs and cheese on a coarse grater. Finely chop the greens. Drain the oil from the liver, and chop the liver itself with a fork. Mix everything, add mayonnaise, salt and pepper to taste.

Baguette - 1 piece

Chicken fillet - 500 g

Onion - 1 pc.

Garlic - 1 tooth.

Champignons - 6 pcs

Cheese - 100 g

Sour cream - 2 tbsp. l.

Vegetable oil (for frying)

Butter (for frying)

Spices (thyme, basil, parsley, marjoram) - 0.5 tbsp. l.

Salt (to taste)

Black pepper (to taste)

Chicken fillet (it is better to take meat from the thigh, it will be juicier) can be chopped in a meat grinder, but I chopped it finely.

Cut the peeled onion into small cubes and fry in a pan with the addition of vegetable oil until golden color.

Cut the bar across into several pieces of 5 centimeters. Carefully remove the crumb with a sharp knife.

Mix minced chicken with fried onions, add spices, garlic, salt, mix and stuff the loaf with this mixture.

Peel mushrooms, cut into thin slices.

Fry in vegetable + butter until golden brown, add cream, a little salt and stew a little.

Pour mushroom sauce over stumps.

Cut the tomato, put it on the mushrooms and pour over the sour cream

Grate cheese and sprinkle on top.
