  • ham - 200 g;
  • hard-boiled eggs - 4 pcs.;
  • Dutch cheese - 100 g;
  • walnuts - 5 pcs.;
  • apple (varieties Simirenko) - 1 pc.;
  • garlic - 2 cloves;
  • parsley - 1 bunch;
  • mayonnaise - 4 tbsp. l.;
  • salt and black pepper;
  • pomegranate seeds.

Cooking method:

  • Grind walnut kernels in a blender.

  • We cut the ham into strips.

  • We rub the cheese on a coarse grater.

  • We clean the eggs. Separate 2 proteins. Grate the rest on a coarse grater.

  • My parsley leaves. We discuss. We chop finely.

  • Grate the apple. Mix with other products.

  • We clean the garlic and pass it through a press. We send it to the salad. Salt. Pepper. We season with mayonnaise. Mix thoroughly.

You will need:

  • boiled potatoes - 2 pcs.;
  • small boiled carrots - 2 pcs.;
  • hard-boiled eggs - 3 pcs.;
  • boiled chicken fillet - 200 g;
  • cheese - 100 g;
  • walnuts - 50 g;
  • mayonnaise;
  • spices;
  • pomegranate seeds.

Cooking method:

  1. We clean the potatoes. We rub on a grater. Lay out on a plate. We season with spices. Lubricate with mayonnaise.
  2. Cut the chicken into cubes and spread on the potatoes. Salt, pepper and grease with mayonnaise.

Cooking method:

  1. Mushrooms cut into cubes. Fry.
  2. Add the chopped onion to the mushrooms. We fry for another 5 minutes. We take it off the fire.

In addition to salads, at least one appetizer should be on the table. It is better to serve in portions.

Usually this dish is associated with unhealthy fast food. However, if you approach cooking creatively, you can get a completely healthy and nutritious snack.

Ingredients:

  • chicken fillet - 500 g;
  • kefir - 250 ml;
  • vegetable little - 2 tbsp. l.;
  • garlic - 2 cloves;
  • black pepper;
  • salt;
  • Provencal herbs;
  • breadcrumbs - 200 g.

Cut the chicken fillet into medium rectangular pieces (approximately 5x3 cm). Next, they must be marinated so that they are not dry. For the marinade, kefir, pepper and salt to taste, garlic (finely chopped or chopped with a garlic press) and herbs are used. Mix everything and place the fillet pieces in the marinade for 20-30 minutes.

Next, each chicken nugget must be rolled in breadcrumbs. They are laid out on a baking sheet covered with parchment paper. The sheet is also smeared with vegetable oil using a cooking brush. Bake in the oven at 200C for about 15 minutes.

A fairly simple dish that can be used not only for the holidays. Beautiful design and interesting filling will make this appetizer the main decoration of the table. The dish can be served with different sauces or sour cream.

Ingredients:

  • milk - 500 ml;
  • eggs - 3 pcs.;
  • flour - 250 g;
  • vegetable oil - 60 ml;
  • sugar - 1 tbsp. l.;
  • a pinch of salt;
  • minced chicken - 500 g;
  • medium bulb;
  • red bell pepper - 100 g (you can use frozen);
  • canned corn - 100 g;
  • grated hard cheese - 200 g;
  • salt and spices to taste.

Preparing the pancakes themselves:

Whisk the eggs in a tall bowl. You can use a mixer for this or do everything manually. Add milk, sugar, salt to eggs. Mix everything well. Gradually add the flour sifted through a sieve. At the very end, add vegetable oil. The consistency of the dough corresponds to liquid sour cream. It is better to bake pancakes in a special pancake pan.

Fry minced meat in a pan with onions. Add salt and spices (eg black pepper and paprika, oregano, dry garlic). Add red bell pepper. Add corn and cheese to the already prepared minced meat.

Put the stuffing on the pancake and roll into a roll. Each roll should be approximately 7-10 cm so that it can be comfortably taken in hand. Therefore, a twisted pancake can be cut in half.

Fold the rolls into a circle, like a sun with rays. To make pancakes crispy, they are placed in the oven for 5 minutes at a temperature of 180C. In the center of the circle, you can put a bowl of sauce.

Ingredients:

  • dark bread;
  • olive oil - 1 tbsp. l.;
  • fatty cottage cheese - 300 g;
  • garlic - 2 cloves;
  • yogurt or sour cream - 1 tbsp. l.;
  • parsley - a small bunch;
  • salt.

Bread cut into rectangles or triangles. Coat both sides with oil with a pastry brush. Bake for 5 minutes in the oven or on a grill pan.

From cottage cheese, garlic and parsley, make a homogeneous mass with an immersion blender. Spread the resulting mousse on bread.

You will need:

  • small beets - 6 pcs.;
  • soft cheese - 150 g;
  • avocado 1 - piece;
  • lemon - 1 pc.;
  • garlic - 2 cloves;
  • thick sour cream - 1 tsp;
  • salt pepper;
  • greenery.

Cooking:

  • Boil the beets. We clean. Cut into rings 0.5 cm thick. Salt.

  • Mix the cheese with zest, chopped garlic and spices.

  • We clean the avocado. Add a couple of drops of lemon juice, sour cream and black pepper. Puree.

  • Lubricate each beet ring with the filling (we, as you understand, have 2 types).

  • If desired, the cream can be deposited using a pastry bag.

  • We form Christmas trees. Fasten with skewers. We decorate with greenery.

This appetizer should be prepared half an hour before serving!

With red fish

You will need:

  • slightly salted salmon - 150 g;
  • curd cheese - 150 g;
  • pickled cucumber - 1 pc.;
  • parsley.

You will need:

  1. Cucumbers cut into cubes.
  2. Mix with curd cheese.
  3. We cut the fish into thin slices and spread them on a cling film in a continuous layer.
  4. On the fish we distribute the curd mass with cucumbers.
  5. Lay the parsley leaves over the cheese.
  6. Roll up roll. We remove for an hour in the refrigerator.
  7. Cut the finished roll into pieces. We serve to the table.

You will need:

  • fish - 2 carcasses;
  • fish tails and heads - 1 kg;
  • carrots - 2 pcs.;
  • onion - 2 pcs.;
  • canned peas and corn - 3 tbsp. l.;
  • gelatin;
  • salt, laurel leaves, peppercorns.

Cooking method:

  1. I wash whole fish carcasses, tails and heads.
  2. We clean vegetables.
  3. We put everything in a saucepan. Fill with cold water. Add salt, black peppercorns, bay leaf.
  4. Cook for half an hour after boiling over moderate heat, periodically removing the foam.
  5. We take the fish out of the broth.
  6. Cook vegetables, heads and tails for another quarter of an hour.
  7. We filter the broth. Salt if necessary.
  8. We add gelatin. The amount of powder is calculated according to the formula 3 tablespoons per liter of broth.
  9. Pour some broth into the bottom of a deep dish. Put in chopped carrots. Pieces of fish fillet. Peas and corn.
  10. Carefully pour in the broth, filling the plate.
  11. Put in the refrigerator for at least 3 hours.
  12. Before serving, we immerse the container in hot water for a few seconds, and then turn it over and spread the contents on a flat plate.

Dessert

It is impossible to imagine a festive feast without dessert. A cake, a cookie or an unusual serving of fruit will surely become its decoration.

Ingredients:

  • cream (at least 30% fat) - 400 ml;
  • milk - 120 ml;
  • gelatin - 25 g;
  • powdered sugar - 50 g;
  • vanilla bean or vanilla extract.

Pour gelatin into a bowl and pour water, the temperature of which is about 30C. Water should be used a little so that it only covers the gelatin. Leave for 15 minutes.

Pour cream into a saucepan and put on fire. When they are hot, add milk, icing sugar and vanilla to them. The resulting mixture must be constantly stirred and heated well. But do not bring to a boil.

Dissolve the swollen gelatin in a water bath or microwave. Add to milk mixture. Mix well. Next, pour the mixture into jelly molds or glasses. To do this, it is necessary to use a sieve so that the undissolved pieces of gelatin do not spoil the delicate texture of the dessert.

Put in the refrigerator for 4-6 hours until completely solidified. You can serve with any berries, syrup, jam or honey.

Ingredients:

  • flour - 150 g;
  • cocoa - 2 tbsp. l.;
  • powdered sugar - 50 g;
  • a pinch of salt;
  • butter (cold) - 150 (100 + 50) g;
  • roasted hazelnuts - 200 g;
  • sugar - 150 g;
  • honey - 1 tbsp. l.;
  • water - 50 ml;
  • cream (fat content not less than 30%) - 150 (100 + 50) ml;
  • dark chocolate - 150 g.

Mix in a blender or by hand all the products for the dough: butter 100 g, flour, cocoa, powdered sugar and salt. Knead the bun, wrap in cling film and refrigerate for 20 minutes.

Take out the dough, roll it out and put it in a round shape with a diameter of 25 cm, covered with parchment. The sides can be trimmed with your hands to get an even circle. Pierce the dough with a fork. Cover the dough with parchment, and put the beans on top, which are used as a load, so that the cake does not rise. Bake in preheated oven for 15 minutes at 180C. Let cool.

To make caramel, you will need a heavy bottomed saucepan. It is necessary to place sugar and honey in it. Fill with water at room temperature. Put on fire and simmer until the sweet ingredients dissolve. After that, boil the caramel for about 10 minutes, stirring constantly, until it becomes an amber color. Remove from heat and add cream (50 ml) and butter (50 g). Mix well. Return to heat and cook for 2 more minutes. Add hazelnuts. Pour the caramel over the cake and let cool completely, then refrigerate.

Pour cream (100 ml) into a saucepan and heat very strongly, but do not boil. Remove from heat and place grated chocolate in a saucepan. In a few minutes it will melt. The result should be chocolate mousse. Pour the ganache over the caramel and refrigerate until completely set.

You will need:

  • kiwi, strawberries, tangerines, grapes;
  • a pineapple;
  • apple - 1 pc.;
  • carrot - 1 pc.;
  • toothpicks.

Cooking method:

  1. We cut off the top of the apple, set it on a flat dish.
  2. Carrots (preferably long ones) are peeled and fixed vertically in the center of the apple with a skewer. This will be the "stem" of our fruit composition.
  3. In a chaotic manner, we insert toothpicks into the carrots, like twigs.
  4. My berries.
  5. Kiwi cut into rings not very thin.
  6. From pineapple, using cookie cutters, we cut out a star, as well as little men, snowflakes, etc.
  7. We divide the tangerines into slices.
  8. We put the prepared berries and fruits on toothpicks.
  9. We put a star on top. Ready!

You will need:

  • flour - 250 g;
  • cane sugar - 80 g;
  • butter - 70g;
  • egg - 1 pc.;
  • cocoa powder - 1 tbsp. l.;
  • ground ginger - 1 tsp;
  • fresh grated ginger - 1 tsp;
  • ground cinnamon - 1 tsp;
  • ground cloves - 1/2 tsp;
  • soda - 1/2 tsp

For glaze:

  • powdered sugar - 250 g,
  • large egg white - 1 pc. ;
  • warm water - 2-3 tbsp. l.;
  • lemon juice - 1 tbsp. l.;
  • food coloring, confectionery sprinkles, edible beads, etc.

Cooking method:

  1. Butter at room temperature cut into cubes.
  2. Add sugar and eggs. Beat with a mixer until white fluffy mass.
  3. Pour in all dry ingredients. Knead the dough using a mixer.
  4. Wrap the dough in cling film and refrigerate for an hour.
  5. Roll out the chilled dough into a layer about 7 mm thick.
  6. Cut out cookies with punches. Lay them out on a baking sheet.
  7. We send it to the oven, heated to 180 degrees, for 10 minutes.
  8. In a mixer bowl, combine glaze ingredients. Whisk for 10 minutes. Add dyes as desired.
  9. Put in a pastry bag and paint the cookies. If necessary, decorate with confectionery sprinkles.
  10. After the glaze has hardened, you can take a sample.

  • cream of maximum fat content - 100 ml;
  • cream cheese - 500 g;
  • powdered sugar - 70 g.

Cooking method:

  1. Beat sugar with vegetable oil.
  2. Gradually add eggs to the mass. Whisking thoroughly each time. The result should be a white thick mass.
  3. In a separate bowl, combine dry ingredients. Stir with a whisk, saturating with oxygen.
  4. Combine mixtures. Knead the airy dough.
  5. Put chopped nuts and zest.
  6. We clean the carrots. We rub on a fine grater or pass through a meat grinder, setting the smallest mesh.
  7. Squeeze out the excess juice and send the carrots to the dough. We mix.
  8. We shift the dough into a baking dish with a diameter of 20 cm, first it must be covered with parchment, and the sides should be greased with oil.
  9. We send it to the oven preheated to 170 degrees for an hour.
  10. Cool the finished cake on a wire rack. After we cut with a thread into 4 layers of the same height.
  11. Whip the chilled cream to stiff peaks.
  12. We gradually introduce powdered sugar and cream cheese.
  13. Lubricate the cakes with cream. We collect the cake and decorate as desired. Before serving, the dessert must be infused, so we send it to the refrigerator for several hours.

Beverages

Unusual drinks will be the highlight of the holiday. Champagne, juice, wine are classics, but if you want to impress your guests, serve your own orancello, crunch and/or mulled wine.

You will need:

  • oranges - 4 pcs.;
  • sugar - 4 tbsp. l.;
  • high quality vodka - 0.5 l.

Cooking method:

  1. Wash oranges thoroughly. We discuss.
  2. Remove the zest (only the orange part). We fill it with vodka. We clog. We clean for a week in a dark place. The drink must be shaken daily.
  3. We put the oranges in a hermetically sealed container and send it to the refrigerator.
  4. After the specified time, we filter the tincture.
  5. Squeeze 350 ml of juice from oranges.
  6. Pour sugar into juice. Heat over moderate heat until sugar dissolves. We don't boil!
  7. We filter the orange syrup and mix it with a fragrant tincture.
  8. The finished drink is bottled. We remove to a dark place.
  9. After at least 3 days you can try. Drink chilled.

You will need:

  • strong tea with bergamot flavor - 1 liter;
  • high quality semi-sweet champagne - 750 ml;
  • high quality cognac - 50 ml;
  • cane sugar - 170 g;
  • oranges - 2 pcs.

Cooking method:

  1. Wash oranges thoroughly. We discuss. Cut into thin rings. We put it in a vase for a bowl.
  2. We add sugar. We mix. We leave for half an hour.
  3. Pour in cold tea and cognac. We put it in the refrigerator until everyone gathers at the festive table.
  4. Before serving, add cold champagne to the container and pour the drink into beautiful glasses.

  • semi-sweet red wine - 700 ml;
