    For frying: olive oil, eggs and flour
  • Prepare the bottoms of the artichoke and put in water with lemon, finely chop the onion
  • Make the sauce: finely chop the onion, rub the garlic on a fine grater, cut the carrots into strips or cubes, chop the celery and sweet pepper as finely as possible.
    Sauté the onion a little, add the garlic and vegetables, turmeric for a yellowish tint, and pour in the water. Stew a little and add salt, black pepper, allspice, bay leaf. At the end, thicken everything with starch

  • You will need: for the breeze dough - 150g flour, 75g low-fat yogurt, 2 tbsp. margarine, 1 tsp salt.

How to choose artichokes

For easy cooking of artichokes, choose vegetables with tight-fitting leaves. A good artichoke should be firm to the touch. When you take it in your hand, it should feel quite heavy. This means that it is ripe and at the same time not dried out from the inside.

How to properly cut an artichoke

First of all, prepare a bowl of water and squeeze the juice from the lemons into it. This is necessary in order to preserve the color of the artichokes - when cut, they instantly darken. So try to dip your artichokes in lemon water more often. And leave them there to float before you start cooking.


Now, one by one, we tear off all the upper hard leaves, getting to the softer ones - we leave them!


This is how the artichoke will look after the procedure is completed.


But that's not all ... Let's move on to cleaning the artichoke legs. We remove the green shell along with the remains of the leaves at the base.


Here's what should happen.


Now cut off the top of the flower vegetable with a knife. About five centimeters. So that there are no more green leaves with sharp tips on the artichoke. After trimming, you will see a purple core inside. We also have to remove it.
