If not, use a whisk or fork. First mix the eggs, then add milk and all other products except flour, mix well. Then add a little flour, mixing the dough thoroughly so that no lumps form.

Be sure to heat the pan well and grease it with oil.

I think that for the holiday it is better to bake intricate pancakes in the form of snowflakes. This is done quite simply. Pour the bulk of the pancake into the middle of the pan, and, turning it slightly, let the dough spread a little.

Then you scoop some dough into a spoon and draw patterns around. You can collect the test in a small plastic bottle and draw from it. This is somewhat more convenient, but the test is spent more.

When all the pancakes are ready, cover them with a plate or cling film to make them softer.

In the middle of each pancake, put a tablespoon of the filling, form a bag and carefully tie with onion feathers. During this procedure, it is better to involve children or a husband, let them also take part in the preparations for the holiday.

These bags are served cold to the table, but if you are making them on the eve of the holiday, it is better to warm them up in the microwave for a few seconds so that the pancakes are not harsh.

Meat rolls with cucumber and mustard.

Products:
- pork 400 grams;
- pickled cucumbers 2 pcs.;
- red onion 1 pc.;
- mustard grains 2 tbsp. spoons;
- salt pepper;
- flour for breading.

Cooking:
Cut the meat into thin plates, cover with a film and beat well, salt and pepper. Cucumbers and red onion cut into strips. Put grain mustard, pieces of cucumbers and onions on each piece of meat.

Roll into rolls and secure with toothpicks to keep them from unraveling. Gently roll in flour. Put seam side down first in a well-heated frying pan with vegetable oil. Fry on all sides until golden brown.

Herring under a fur coat in a roll

Products:

- herring - 1 pc.;
- potatoes - 4 pcs.;
- carrot - 1 pc.;
- beets - 1 pc.;
- mayonnaise - 200 g;
- bow - 1 pc.;
- vinegar for pickling onions.

Cooking:
Pre-cut the onion arbitrarily and marinate in vinegar for 2-3 hours. But you can put raw, at your discretion.

Boil potatoes, carrots and beets, cool, peel and grate on a fine grater or cut into small cubes.

Peel the herring, separate from the bones, cut into small pieces.

It is better to squeeze the beets through gauze to remove excess moisture. If your carrots are also juicy, then it is better to squeeze it out.

To make a roll, we spread cling film on the table, a cut plastic bag or foil, whoever has what. Mix the beets with mayonnaise and spread evenly on the film. Cover again with clingfilm and tamp the layer well. Remove this top film. You can salt the beets a little. Try to make each subsequent layer slightly narrower in width than the previous one. It is better to lay it not over the entire surface of the roll, but with a long log in the middle. We tamp all layers in the same way with the help of cling film.

Gently roll the roll around the herring log. We tamp the edges well. We wrap in the same film. We put the snack in the refrigerator, until the arrival of guests. Before serving, remove the film and cut into portions.

Cooking:
Grate cheese and carrots on a fine grater. Squeeze the garlic through a press. Mix everything and season with mayonnaise. If you use cottage cheese, then the taste will be different. I usually make half with cottage cheese, half with cheese.
Cut sausage or ham into thin slices. Roll into a ball and secure with toothpicks to keep it from unrolling. Fill with salad. Decorate with herbs, slices of red bell pepper, olives or just ketchup.

stuffed peaches

The appetizer has an interesting taste due to sweet peaches and salty filling.
Products:
- small, 200 grams, a piece of turkey meat;
- a can of canned peaches in halves;
- a can of canned corn;
- any spicy cheese, 200 grams;
- homemade mayonnaise or sauce;
- salt, pepper to taste.

For sauce:
- a jar of yogurt;
- lemon;
- mustard.

Cooking:
Boil the meat in salted water, cool.

While preparing the sauce. In yogurt, add a teaspoon of mustard, a tablespoon of lemon juice and add a little. Mix all ingredients well.

We take out the peaches from the jar, lay them on a towel. They need to be dried well. To do this, you can put them upside down to drain excess juice, or blot each piece with a napkin.

Then the bottoms for stability must be cut off, but be careful not to make a hole.

We got some kind of hut. Sprinkle it with "snow" - cheese and egg yolk or protein, as you like. The snack is ready.

Cheese balls

Products:

  • boiled potatoes 4 pcs.;
  • boiled eggs 4 pcs.;
  • crab sticks 10 pcs.;
  • hard cheese 200 gr.;
  • mayonnaise 2 tbsp. spoons;
  • pepper.

Cooking:
Grate cheese on a fine grater and set aside. Cut potatoes, eggs, crab sticks as small as possible, season with mayonnaise and pepper. Salt, in principle, is not necessary, but if you really want, you can. Mix everything well. With clean hands, roll into balls slightly smaller than an egg. Roll them in cheese. Insert skewers or toothpicks.

Method number 2

Products:

  • processed cheese 2 pcs.;
  • hard cheese 100 gr.;
  • a bunch of dill;
  • 3 garlic cloves
  • 2 boiled eggs;
  • paprika;
  • mayonnaise.

Cooking:
Wash the dill and dry well.
We rub the eggs and cheese on a fine grater, squeeze the garlic through the press and add a little mayonnaise so that the mass is not too wet. We mix everything thoroughly.
Finely chop dry dill. We set aside. Three, too, on a fine grater cheese. And we leave too. Pour paprika into a bowl. As in the previous recipe, we form balls and roll one at a time in seasonings. We got funny multi-colored balls.

Method number 3

Products:

  • a large package of crab sticks;
  • 150-200 grams of cheese;
  • 5-6 garlic cloves;
  • 4 boiled eggs;
  • 3 art. spoons of mayonnaise.

Cooking:
We rub the crab sticks on a fine grater and set aside - this is our sprinkling. Cheese and eggs are also three on a fine grater, garlic is passed through a press. Add mayonnaise, mix everything well. We make balls, as in previous recipes. Roll each ball in shavings of crab sticks.

As a decoration for all three methods of cooking Rafaelok cheese, you can use pickled champignons, pinned with skewers or toothpicks.

Recipes for hot holiday meals

Pork meat and potatoes in the sleeve.

Products:

  • pork meat, neck is better, 1 kg;
  • pitted prunes 200 gr. It can be replaced with dried apricots, cherries, any berries or mushrooms. For the marinade:
  • a wig and a half teaspoon:
  • mustard seeds 2 teaspoons;
  • ordinary mustard one and a half teaspoons;
  • garlic 3-5 cloves;
  • vegetable oil 4 tablespoons;
  • honey not bitter 1 teaspoon;
  • salt 1 teaspoon;
  • ground black pepper to taste.

For potatoes.

  • potatoes of medium size 1 kg .;
  • vegetable or olive oil 3-4 tablespoons;
  • salt about half a teaspoon;
  • any dry to your taste half a teaspoon.

Cooking:

Steam prunes with boiling water. Dry.

Wash the meat and pat dry with a paper towel. Make deep incisions not completely at a distance of 1-1.5 cm.

Mix all the ingredients for the marinade well, squeeze the garlic through a press.

It is good to coat the meat with marinade, not forgetting the pockets.

Put all the prunes in each pocket. Carefully transfer the meat to the roasting sleeve. The sleeve should be 2 times longer than the piece. Fasten the sleeve on both sides and refrigerate for a day or a little less.

When you need to cook, take a potato, cut off the bottom on one side.

Mix the oil, salt and seasoning well and pour the potatoes on top, not forgetting to get into the holes. Now we place the finished potatoes together with the form in the baking sleeve and fix it on both sides.

Remove the rack from the oven so that it is cold. Preheat the oven itself to 200 degrees. Now put the mold with potatoes and the mold with meat on the grate. Bake for an hour.

When the potatoes and meat are ready, when they cool down a little, put them on a dish, after tearing the sleeve and cutting the meat into portions.

Cut the meat into large pieces, salt, pepper and fry in a hot pan on both sides until golden brown. Place in a saucepan.

Cut the onion into half rings and fry until golden brown in the oil that remains after frying the meat. Put the cooked onion in the pan on top of the meat.

Add hot water so that it does not slightly cover the meat. Simmer for an hour on low heat.

Fry the walnuts in a pan or in the oven for about 3 minutes.

In the stew, add tomato paste, diluted in a glass of warm water, seasoned with salt - a tablespoon without a slide and sugar - a tablespoon with a slide, and pepper to taste. We put lavrushka, prunes and nuts. Close the lid and bring the meat to readiness, this is about half an hour. Do not forget to try the dressing in order to correct the taste in time if something does not suit you. Serve with any side dish.

And only an hour before setting the table, you will spend in the kitchen.     • Preparing the shrimp sauce, pour the shrimp. We cut the tomatoes. Cooking canapes. All together it will take 20 minutes.
    • Preparing the sauce for the turkey. 10 minutes.
    • Mix the salad right before serving. 2 minutes.

    • Drain the liquid from the olives, mozzarella, make a snack on skewers. I recommend entrusting this part to the children, then you will spend 5 minutes.
    • Spread the fish paste on the crackers. We decorate. 10 minutes.
    • Cooking mayonnaise, season Olivier. 10 minutes.

As you can see, it will take you only an hour to prepare on December 31st. If you want, you can form a meatloaf in the morning, refrigerate. This will further reduce the preparation time before the holiday.

If you are going to celebrate with a large company, you want to surprise the guests and not inflate the budget. So I made a relatively budget menu. The main thing with this option is not to cook a lot of dishes, but simply increase the amount of each. You can also ask for help with the preparation of one of the guests. Or ask to bring some of the salads or a cake with you. The main emphasis in this menu is made not only on its budget, but also on the fact that on the 31st you only need to put the finishing touches. And you still spend only an hour cooking. I quite boldly suggest that you include a salad with barley instead of the usual Olivier in the New Year's menu for the company. And for those who do not recognize salads with mayonnaise - potato salad. It can also serve as a kind of garnish. The number of ingredients for the salad can not be increased, each guest will get it. but make boiled pork from a piece of meat at the rate of approximately 150 grams per person. For a sweet end to the evening, I suggest buying tangerines and sweets for the cake. According to the recipe, you will get a cake for about 8 people.

Cooking plan:

  2. For 3-4 days. Cooking lean cookies with marmalade. Let the finished cookies cool and put them in an airtight box. The total cooking time is about 1.5 hours.
  3. 31th of December.
    • Let's start with the salad. If you use the attachments for a meat grinder, food processor or blender to grate vegetables, it will take about 15 minutes. If there are no nozzles, to speed up the process, ask your children or husband to help grate the vegetables.
    • We're making risotto. About 40 minutes. Do not forget that this is a dish that needs to be constantly stirred.

Everything is simple with my New Year's menu. I will celebrate the New Year with my family - my husband, daughter, parents and our godfather. I really hope that this year he will not come by himself. As a basis for the menu, I will take the above menu for the new year for a family of 4. Just calculate the amount of meatloaf so that would be left for breakfast. For each person, I will count 200 grams of pork (raw, before processing) for New Year's Eve. + 200g*3 for brunch or rather lunch on January 1st for me, husband and daughter. Plus, I will add another salad, because. adults will be 5-6 people + 12 year old daughter. What's left of the salads will be the same for brunch the next day.

If unexpected guests run in, I will have fruits, sweets, something for meat and cheese cuts, pickled plums, cucumbers, tomatoes - in general, something that can be put on the table very quickly as a light snack. Because from experience - after 12 at night, guests come already from the table and don’t eat much. And I don't want to cook too much.

If you don’t want to calculate for each type of dish separately, focus on an average of 500 grams of food per man and 350-400 grams per woman. If there is alcohol, then we increase the number of cold snacks (I have already increased). Remember that it is night, heavy dishes will create a feeling of heaviness. And instead of New Year's fun, you run the risk of sitting in a corner on an armchair, dreaming about mezim. Dessert and fruit count separately.
