The recipe for lean pies with green lentils will come in handy for fasting people and vegetarians. Green lentils contain a lot of iron, protein, fiber and other substances. It is very tasty and healthy. The soft lentil filling with herbs is perfectly complemented by the crispy pastry dough.

Lenten pies with lentils are baked in the oven from a dough kneaded from a mixture of white and whole grain flour in water with vegetable oil.

For test:
- white flour - 2 cups
- whole grain flour - 1 cup
- warm water - 1 glass
- vegetable oil - 1 tbsp. spoon
- salt - ½ teaspoon

For filling:
- dry green lentils - 1 cup
- onion - 1 pc.
- kale (or other greens in the mixture) - a large bunch
- soy sauce - about 1 tbsp. spoons (to taste)
- savory - a pinch
- coriander - to taste
- salt, ground black pepper - to taste

Additionally:
- vegetable oil for greasing the baking sheet - 2 tbsp. spoons

Cooking lean pies with green lentils

1. Pour dry green lentils with boiling water for 30 minutes, then drain the water. Pour 2 cups of cold water, bring to a boil and cook over low heat for 40 minutes, stirring occasionally. 5 minutes before the end of cooking, add salt to taste.

2. Transfer boiled lentils to a large bowl, add chopped greens, onion cut into small pieces, soy sauce, savory, coriander. Salt and pepper. Blend the filling into a smooth paste using an immersion blender.

3. For the dough, mix both types of flour and sift. Make a depression in the hill, add salt and vegetable oil. Adding a little warm water, knead a smooth elastic dough.

4. Tear off walnut-sized pieces from the dough and roll into thin circles. You can roll out the whole dough at once and cut out circles with a cup of the appropriate size. But then the trim will have to be rolled out again.

5 .Put the filling on each circle and mold the pies in the shape of a crescent.

6. Grease a baking sheet with vegetable oil and put the pies on it at some distance from each other.

7. Place the baking sheet with the pies in the oven, preheated to 180 degrees, and bake for about 15 minutes. If you turn on the convection mode 5 minutes before the end, then thanks to hot air blowing, the pies will get a more beautiful blush.

8. Transfer the prepared lean pies with green lentils to a dish and serve with your favorite salad.

I give you the recipe pies with lentils. Lentils can be used any (green, red). Many people think that lentil pies are very similar in taste to liver pies. Dough on kefir with sour cream - it is prepared simply, but it turns out very tasty, tender, airy.

For cooking pies with lentils we need the following ingredients:

  • kefir - 1 glass
  • sour cream - 2 tablespoons
  • flour - 2 cups
  • sugar - 1 tablespoon
  • soda - 0.5 teaspoon (do not extinguish)
  • salt - 0.5 teaspoon
  • vegetable oil for frying

For filling:

  • lentils - 1 cup
  • onion - 300 grams (3 pieces)
  • salt, pepper to taste
  • vegetable oil for frying

We wash the lentils, pour them with cold water and cook for 30 minutes after boiling. Don't forget to salt.

We clean the onion, cut it into half rings, send it to fry in vegetable oil.

When the lentils are cooked, and the onions are fried, we pass them through a meat grinder, mix well, pepper. The filling is ready.

Let's start preparing the dough. We mix kefir, sour cream, salt, soda, sugar, and gradually add flour. First, mix with a spoon, and when the dough becomes thick enough, put it on a table sprinkled with flour and knead with your hands.

We divide the dough into small pieces. At the cut, the dough will remain sticky, so roll each piece in flour. Roll out the cut pieces with a rolling pin, 3 mm thick. We spread the filling and blind.

Fry in vegetable oil on both sides until golden brown over medium heat.

1 kg flour
2 cups warm water
3/4 cup vegetable oil
3 teaspoons of sugar
1 heaping teaspoon of salt
pinch of soda**

For filling

450-500 g lentils
5 medium onions***
frying oil
salt pepper

Prepare the filling.
Lentils can be cooked in a slow cooker: in Panasonic-18 for 4 multi-glasses of lentils - 8 multi-glasses of water (salt is not needed !!!), cook in the automatic "Buckwheat" mode.
If you don't have a slow cooker, cook in a saucepan according to package instructions. Cook over low heat without salt (!!!) until the lentils begin to burst. Drain excess water (if any) into a cup, then you can add it to the filling for softness (well, as in ordinary mashed potatoes).
While the lentils are cooking, finely chop the onion and fry until tender in vegetable oil. Oil can be poured into the pan more, lentils love it.
Add the fried onion to the cooked lentils, season with salt and pepper to taste, then mash with a masher. Cool until warm.

Knead the dough.
I dissolve salt and sugar in water, add a pinch of soda, traditionally - a drop of vinegar (although smart people say it does nothing), add oil, mix everything thoroughly with a whisk. Then I add the liquid to the flour and knead the dough.
Here, see for yourself - you may have to add something - either liquid or flour. You know - it all depends on the humidity and quality of the products. This time, for example, I added water.
Focus on the fact that the dough is not too steep, but rolled out easily.

Then take a large frying pan, pour vegetable oil into it (not deep-fried, of course, but don’t be greedy either - the oil should be like on pasties). Heat up.
Form pies in the form of crescents, like pasties. Fry on both sides until golden brown. Immediately after frying, fold a paper towel to absorb excess oil.

** Soda really needs only a pinch - not a teaspoon or even half. It does not have any fundamental significance, but in the absence of eggs in such a dough, I sometimes add soda. It is noticed - it is molded and rolled out easier.

*** If you are embarrassed by such an amount of onion, reduce it. We just love onions very much, besides, do not forget - lentils themselves are quite dry, and extra juiciness does not interfere with it. When mashed, the extra onion will not be felt at all.

My comments: I kneaded the dough in HP.
I baked half a serving (how many lentils were). Made 24 pcs. Those. they were not too big, and I rolled out the dough thinly - at first, some pies were torn when frying.
The onion in the filling is very out of place! Without it, it will be dry, really.))) I also added a chopped clove of garlic to the onion.

Step 1: prepare the lentils.

To start, sort the lentils and remove the damaged fruits. Then throw the lentils into a fine sieve and rinse under running water. Place the lentils in a deep saucepan, fill with water so that it completely covers the fruits and is 2 to 3 fingers higher than them. Place the saucepan with the ingredient on the stove, turned on at a high level. To keep the lentils from overcooking, add to the water 1 teaspoon of vinegar and salt to taste. Boil the lentils 30 minutes, no more, during this time it will reach the desired consistency, and its structure will become soft. Then drain the water, discard the lentils on a fine sieve, let the remaining liquid drain and transfer to a deep bowl. Peel the onion with a knife, rinse it under running water, lay it on a cutting board and chop it into a medium cube with an approximate diameter of 1 by 1 centimeter. Place a frying pan on the stove on the middle level, pour vegetable oil into it and heat it. Place the onion in the hot oil and sauté it for 45 minutes until translucent, then add the lentils and simmer the 2 ingredients together for more 5 - 7 minutes, then transfer them back to a deep bowl. Season the minced meat to taste with ground black pepper, hops - suneli and ground paprika.

Step 2: Prepare the dough for the lentil patties.

Lentil pies can be prepared from different types of dough, but we will follow the simplest and most delicious way, we will cook the dough on kefir. To do this, pour the sifted wheat flour into a deep bowl, make a small indentation in the center with your hand and add vegetable oil, salt, sugar. Then pour in kefir, beat in a chicken egg without a shell, and extinguish the soda with vinegar directly into the bowl with all the ingredients. Knead the dough with a tablespoon or by hand until it is lumpy and thick enough to knead on the table. Then add more 1 - 2 tablespoons vegetable oil Lay the dough out on the kitchen table. Pre-dusted with wheat flour and knead the dough of medium density. High-quality dough should not stick to hands and be without lumps, homogeneous mass. Place the finished dough in a deep bowl in which it was prepared, and let it brew. 10 - 15 minutes. If it floats, knead the dough again to the consistency you need.

Step 3: form lentil patties.

Divide the dough with a knife into 2 - 3 parts, alternately take the parts of the dough, roll them into bundles with your hands and cut into small pieces with an approximate mass in 150 - 200 grams. Roll the dough balls into balls and press down with the palm of your hand. You should get cakes with about the thickness up to 1 centimeter. In the middle of the resulting cakes, lay about 2 tablespoons minced lentils and blind the pie, smoothly connecting the edges of the cake along the edges with your fingers. Wrap the pies formed in this way in wheat flour and place on a wooden cutting board sprinkled with flour. In the same way, prepare all the pies until you run out of minced meat.

Step 4: Fry the lentil patties.

After you have formed all the pies, turn on the stove to a medium level and put a frying pan with vegetable oil on it. Gently lower a few pies into the heated oil and fry them on both sides, periodically turning them from one side to the other with a kitchen spatula. Brown the patties on all sides until golden brown, or toast them however you like. Put the finished pies on a large flat plate and go ahead to taste!

Step 5: Serve the lentil patties.

Lentil pies are served warm, stacked on a large flat plate. Traditionally, several deep bowls with different types of sauces are placed side by side, such as fragrant tomato sauce, sour cream, yogurt sauce, cucumber sauce, or any other that you like. Often this type of pies is served with sour cream, cream or homemade mayonnaise. It is very pleasant to savor lentil pies with fresh vegetable salad and drink freshly brewed and very sweet tea.
