Delicious and healthy food in post recipes. Strict fasting and not strict - what is the difference between them? What can you eat in a post

Fasting for a believer is a special time, a time of prayers and deep thoughts.

During this period, human nutrition also changes greatly, serious restrictions are imposed on it. When wrong organized meals in the post possible deterioration general condition and even exacerbation of certain diseases. On the other hand, fasting is a time of purification, including the physical one. Therefore, from the point of view of medicine, fasting is a completely reasonable event, only with the proviso that you need to approach it thoughtfully.

I’ll make a reservation right away that you can find out about the spiritual meaning of fasting by contacting your spiritual mentor. Here I want to consider the post from the point of view of a nutritionist.

Basic principles of proper nutrition in fasting

  1. The main rule is the exclusion of all animal food: meat, fish, poultry, milk and dairy products, eggs. Respectively, the basis of the diet will be herbal products - cereals, legumes, vegetables, fruits, nuts, mushrooms.
  2. Try not to suffer during fasting diet. Do not skip breakfast, do not forget about snacks.
  3. In the absence of animal foods, which are rich in protein and contribute to a long feeling of satiety, frequent bouts of hunger are possible. During this period, there is a great temptation to overeat pastries and sweets. However, there is no question of any purification in this case. In order not to experience hunger, eat regularly, include in your daily diet foods rich in complex carbohydrates and containing vegetable protein - whole grains and legumes.
  4. Particular attention during the period of fasting should be given soy products. There are now a great many of them - soy milk, cheese-tofu, all this should be included in your diet.
  5. Sometimes it's not as hard to start a post right as it is to end it. It would seem that everything is over, the bans have been lifted, you can eat forbidden foods. However, I want to warn you against overeating after fasting. Start Incorporating Animal Foods into Your Diet After Fasting Gradually and be sure to combine it with plant food- Vegetables and grain products.

Lenten menu for the week

MONDAY

Nutritionist comment:

Begin Lenten menu want with traditional breakfast in an unusual performance. Oatmeal contains complex carbohydrates alimentary fiber, vegetable proteins vitamins of group B.

To maintain health, an adult should consume at least 400 g of vegetables daily (and preferably more). Unfortunately, few people can boast of such a diet. One way to enrich your menu with vegetables is light vegetable salads. These salads are “light” both in execution and in terms of calories.

In addition to vegetable protein, lentils contain folic acid and iron.

Recipe for green beans butter should be replaced with olive oil.

Strict character

Also excluded, for example, sweets and mayonnaise. Recipes contain ingredients only of plant origin: vegetables and fruits, cereals, mushrooms, nuts, pickles. Sometimes on holidays (the Annunciation and Palm Sunday), as an exception, Lenten dishes containing fish are allowed. On many days, dry eating is practiced: bread, vegetables, fruits and water. On Tuesday and Thursday - dishes without oil content. On the other days for cooking it is recommended vegetable oil. Lean food and vegetarian dishes are very different, so do not confuse them. The second does not exclude cow butter, cheese, eggs, but forbids fish products. While lean food does not contain "milk", the eggs of any bird, but fish, caviar and all kinds of seafood are allowed on certain days.

Make it delicious!

Many people tend to consider this kind of food something tasteless and even joyless (as far as the process of cooking can bring joy and pleasure). However, if you look closely, excluding many animal proteins from the list, we leave in it a lot of necessary and useful products, of which, for sure, proper preparation, you should get a delicious lean meal. And sometimes these dishes can be tastier than ordinary, meat or dairy. We must not forget about the need for proper registration. After all, artfully decorated food is more pleasant to eat. You can use a variety of greens - it is usually consumed in fasting in unlimited quantities! Now let's move on to cooking.

Lenten food: recipes

Like regular table, lean is divided into first, second courses, different snacks and salads, drinks. Only ingredients allowed at this time are used everywhere. As already mentioned, we exclude meat, dairy products, animal fats, eggs from the menu. Everything else can be cooked. So, let's start with the first dishes.

Rassolnik

Ingredients: three medium-sized potatoes, one pickle, one carrot, onion, half a glass of barley, a handful of shredded cabbage, seasonings (whoever likes what).

Boil pearl barley in a small saucepan. When the cereal has not yet been cooked, add the diced potatoes. In the meantime, grate the carrots and cucumber. We cut the onion finely. In vegetable oil, we prepare a fry of onions and carrots. We add it to the pan, then we throw in the cucumber and cabbage, prepared in advance. Stir and cook for ten minutes over low heat. Before cooking, we throw in seasonings and salt to taste. Great alternative pickle on meat broth ready! Some may not even notice (judging by own experience) that there is no meat in the soup, such a delicious lean meal is obtained. Pickle recipes may vary. For example, you can chop a lot of greens - onions, parsley and dill - and put them in soup before serving. You can use sour cabbage instead of fresh cabbage. In our opinion, it tastes even better this way.

Lean soup with vegetables

Ingredients: cauliflower - 300 grams, a couple of potatoes, carrots, onions, green pea(fresh or canned) - 100 grams, olive oil, spices.

We disassemble the cauliflower into inflorescences. Throw cabbage and potatoes into boiling water (cut everything except cabbage into cubes). Saute onions in olive oil with carrots. Then add to vegetable broth. We cook everything together for another fifteen minutes. Before serving, sprinkle the soup with chopped herbs and seasonings to taste.

Rice with vegetables

A good tasty fast food for every day is rice cooked with vegetables.

Ingredients: half a kilo of rice, soy sauce, one eggplant, one zucchini, two carrots, one pepper, one onion.

The dish is very easy to prepare. Boil rice until fluffy. Eggplant needs to be baked in the oven (you can, by the way, other vegetables - it will be tastier), cut into cubes. All other vegetables - finely chopped. Mix with rice, season to taste soy sauce and simmer a little in a large frying pan with a tight-fitting lid (enough for 10 minutes). Serve sprinkled with sesame seeds and finely chopped green onion.

Sweet pilaf

As an option, lean food for every day - sweet pilaf with dried fruits.

Ingredients: rice - 300 grams, pitted raisins - 100 grams, dried apricots - 100 grams, pitted prunes - 100 grams, a little sugar and vegetable oil.

Boil rice without salt. We wash all dried fruits and fry over low heat in vegetable oil, stirring constantly, otherwise it will burn immediately. Add the cooked rice to the dish and simmer lightly, stirring for about five minutes. Such a dish worthy replacement traditional pilaf on meat. You can add browned onions and a head of garlic, as a seasoning option for pilaf, barberry and curry are suitable. This is how we got lean tasty food: just lick your fingers!

Beans with vegetables in the oven

You need to take: a pound of large beans, a couple of sweet bell peppers, three cloves of garlic, three tomatoes, a little vegetable oil, seasonings to taste and salt.

Soak beans in water overnight. Boil in the morning until softened. We cut all other ingredients finely and lightly simmer in a frying pan in vegetable oil. We spread the beans in a baking dish and pour stewed vegetables on top (they have already turned into gruel, letting the juices out). We put in a well-heated oven for half an hour. When serving, decorate with fresh herbs and chopped green onions.

Lean delicious food. Recipes with fish

On certain days it is allowed to use fish dishes. There are a lot of recipes - simple and complex - involving fish or seafood. Here are just a few of the most popular ones.

Fish lean vinaigrette

Ingredients: fish fillet - 300 grams, three potatoes, one beet, one carrot, two pickles, onion, vegetable oil, seasonings to taste.

Boil the fillet and cool. We cut to pretty small pieces. We cook vegetables separately, clean, cut into small cubes. Cucumbers cut into cubes. We chop the onion. Mix everything together thoroughly and gently. Fill with olive oil. Garnish with fresh herbs before serving.

Soup fish (ukha)

Ingredients: half a kilo of white fish, one carrot, one onion, two potatoes, vegetable oil, flour, herbs, seasonings. Some add cereals: pearl barley or millet.

We clean the fish from skin and bones (or you can immediately take it already finished fillet). Cook the fish for thirty minutes small fire. At the end of cooking, add seasonings to beat off the smell. Coarsely grate the carrots. Pass the onion, then add the carrots and fry with a small amount flour. We cut the potatoes into cubes. We catch the fish from the broth, and filter it. We cut the fish into small pieces and send it back to the broth. We put all the other ingredients there. Cook another fifteen minutes. If you decide to use grits, add them in the middle of the soup, along with the potatoes. The soup is served garnished with herbs.

Lenten dishes: what are they? Is it necessary to stock up on recipes for delicious lenten dishes, if fasting is the time to limit oneself in bodily pleasures in order to grow spiritually?

There is a time of the church year when the Orthodox are allowed to cook and eat only fast food. Of course, fasting imposes certain restrictions. But the Church does not forbid trying to diversify the Lenten menu with simple recipes delicious fast food. Many fasting people (for example, children) may not be able to fast if they do not make a delicious lenten menu. It is important not to forget that the main thing in fasting is prayer, dialogue with God and an attempt to get closer to Him. Lenten dishes are usually very light and easy to prepare, which helps in fasting to think less about the body and more about the spiritual.

Many secular establishments, cafes and restaurants have a special menu of lenten dishes during the fasting period, but vegetable cutlets, dishes from variety of vegetables And lean borscht can be cooked at home. In addition, food Lenten table, usually refers to diet meals. And for many, these recipes can be useful outside of fasting. Because they are made up of available ingredients will become great side dish and diversify your usual menu.

Do not forget that God does not require us to harm ourselves and, if for health reasons you cannot observe a strict fast, then before moving on Lenten dishes, it is better to consult with your doctor and confessor. In such cases, relaxation of the fast is allowed.

The Orthodoxy and the World portal has prepared for you an extensive list of recipes and information on cooking during Lent.

In our rational and scientific age, with its abundance of information, shocking upheavals of catastrophes and misfortunes, there is a lack of a good miracle that brings quiet joy, peace of mind. And we forget that this miracle is always near us, even within us, it is given by God through our repentance and the desire to change our lives internally, to harmonize it with God's will for us. This miracle is the transformation of a person. Is it not a miracle when a person, accustomed to living according to the flesh, aspires to the spiritual, who has never known prayers, finds sweetness in church hymns, comprehends the joy of doing good, the consolation of repentance for sins. Great Lent pushes us to all this with all its structure: long biblical readings, penitential prayers and hymns, the charter on food. During the Holy Week of Great Lent, the strictest fast is observed.

Great post. How do we fast?

We fast with a fast that is pleasing to the Lord. true fasting is the alienation of evil, abstinence of the tongue, renunciation of wrath, excommunication of lusts, utterances, lies and perjury. This impoverishment is a true and auspicious fast. (from the Liturgy of Great Lent)

People say: " a good start is half done“. Apparently, therefore, many Christians fast more strictly in the first week of fasting. Great Lent implies the exclusion from the diet of meat, dairy, fish food and eggs, but the measure of your fast must be agreed with the confessor, not forgetting to remind you of your state of health.

And the Orthodox hostess is concerned with how to make the Lenten meal varied enough so that those who are fasting do not lose heart, and at the same time not arouse the passion for gluttony. Therefore, it is not bad if the food is prepared in the usual way and at the same time does not contain non-lean components.

Lenten cereals

If you regularly cooked porridge for your family, then you can also cook it in fasting, only not with milk, but with water, and not season with oil, but serve sauce, or sweet to it: based on jam or jelly, berries, steamed and chopped dried fruits, nuts, honey, cocoa, vegetable corn cream, or unsweetened: vegetable, mushroom; in both cases, variations using spices are very interesting. Do not forget about the diversity of the main component - cereals: rice, buckwheat, pearl barley, oatmeal, semolina ... whole, crushed, flakes. Play on the consistency of porridge: from a mash close to soup-puree to crumbly “grain to grain”. Additional components can not only be served as a sauce, but also added during the preparation of porridge.

It's great if soups are common in your family diet. Most of them have very pleasant lean options or easily adapted to the post. Technology Highlight lean soup: timely laying of the components, so that by the end of cooking they are all ready at the same time, first harder, then more tender, for example, for borscht, beets and carrots are laid before potatoes and cabbage. Pleasantly improves the taste soup lung frying vegetables. Most lean vegetable soups acquires best taste and flavor when added at the very end of the chopped garlic cloves. Do not forget about other spices, herbs, bay leaf. Can also be used ready mixes or cubes for broth, you just have to monitor their composition: are there any non-lean components added. Perhaps separate cooking vegetables, chopping all or part of the components in a puree soup, serving with croutons or crackers, or even, in an oriental way, with unleavened rice (here it makes sense to cook a soup with a very pronounced taste, spicy or salty).

A thematic excerpt from the Prologue of Prot. V. Gurieva:

Spiritual fasting

(A word about fasting, and about slander, and about condemnation)

Some of the simple Christians think that fasting should consist in abstaining from food and drink, and nothing more. Do not eat fish during fasting or do not eat oil and wine - this, in their opinion, exhausts the whole commandment about fasting. But is it? No. It is true that fasting should be bodily as well, but spiritual fasting must certainly be combined with bodily abstinence. This is what the Holy Church teaches. “By fasting,” she says, brethren, bodily, let us also fast spiritually.

What kind of spiritual fasting is this, and why is it necessary?

The Holy Fathers define it this way. “If you fast, show from your deeds. What? Seeing a beggar, have mercy; make peace with the enemy; do not envy a person who is in happiness; do not look at a woman shining with beauty. Fast without hypocrisy; fast with your eyes, and your heart, and your ears, and your hands, and all your members ... Keep your hands from appropriating what does not belong to you, your feet from going to games; keep your ears from hearing slander and lies, and let your mouth also fast, refraining from condemnation” (Prol., Apr. 9).

Such, brethren, is spiritual fasting. We need it, because without it, bodily fasting loses all meaning. “What is the use, he says, to thin the body by abstinence, when the spirit puffs up with pride? What praise shall we have for being pale from fasting when we turn pale from envy? What virtue is it not to drink wine, but to revel in anger and hatred? (Ep. 14, vol. 2). - “There is nothing, says the Prologue, if you do not eat meat or fish, but eat the flesh of the brethren by slander” (Prol., Apr. 9). So, fasting bodily, we also fast spiritually, i.e. the outer actions of fasting are compatible with the inner ones. Purifying the body by abstinence, let us cleanse the mind from vain thoughts, and the heart from evil desires. Mortifying the body with fasting, let us also mortify the passions: anger, evil lust, greed for gain, and similar evils. Decorating the body with bodily fasting, let us decorate the soul with virtues: mercy, meekness, humility, reconciliation with enemies, almsgiving. This will be a true fast, and pleasing to God, and for us, therefore, saving. Amen. (Arch. V. Guryev, Prologue, April 9)
