The chef of Vespasia - his name is Valentino Palmisano, by the way - seems to be very confident in his own abilities, since he decided to call his food so boldly. "The best dish in the world" should be a perfectly cooked pasta with an impeccable sauce, a meal that should not be a single, even the most picky claim. And it was just such a pasta - simple, but grandiose.

But I have eaten perfectly cooked pasta more than once - and you probably will too. I even cooked it more than once - as you probably did, what's so complicated about it.

At lunch at Vespasia, there were many other perfectly prepared dishes - it’s not for nothing that the restaurant has a Michelin star. Appetizer in the form of lentil soup with parmesan. Thinly fried thymus with walnut sauce that added sweetness to it. Spelled pappardelle with a stew of muscular but soft boar. Tomato sorbet, which clearly showed that tomatoes are actually sweet berries. And all these were the best dishes in the world - because any dish properly prepared can rightfully be called that. The way the one who prepares it conceived it.

There are millions, hundreds of millions, billions of the best dishes in the world. They are cooked every day in houses and apartments, in cafes and bistros, in restaurants and on street stalls - in New York, Moscow, Guangzhou and in the village of Voznesenka, Buzdyaksky district of the Republic of Bashkiria, where I ate the best belish so far in my life.

Perhaps, indeed, into the forest: I wanted to get his autograph on the menu, as is my custom, but I could not find Valentino anywhere.

Cooking method:

  1. Place a metal baking sheet on the middle level of the oven and heat it to 225 degrees.
  2. Fry the bacon in a pan until it is crispy. Transfer to paper towels to absorb excess oil. Break bacon into small pieces.
  3. Pour balsamic vinegar into a saucepan. Bring to a boil, then reduce heat and simmer for 4-5 minutes until liquid is reduced by half. Add strawberry jam and hot sauce, mix well. Remove sauce from heat and cool to room temperature.
  4. Roll out the pizza dough into a circle with a diameter of about 35 centimeters. Sprinkle a sheet of baking paper with semolina and transfer the dough onto it.
  5. Peel the onion and cut into thin half rings. Cut the chicken fillet into small cubes and mix with 2 tablespoons of balsamic sauce.
  6. Pour the rest of the sauce on top of the dough and spread evenly, leaving 2 centimeters free from each edge. Lay the chicken on the dough.
  7. Sprinkle the chicken with 3/4 of the cheese and then evenly distribute the bacon and onion. Sprinkle with remaining cheese.
  8. Transfer the pizza to the hot baking sheet in the oven and bake for 8-10 minutes, until the cheese is melted and the edges of the pastry are golden.
  9. Remove pizza from oven and let cool slightly.
  10. Slice the strawberries and finely chop the cilantro. Sprinkle the pizza with cilantro and strawberries and serve immediately.

It is not possible to determine the exact geographical origin of dumplings. In general, this is a dish of Russian cuisine, which has ancient Chinese, Finno-Ugric, Turkic and Slavic roots.
