      Preparation of pancakes with liver:

      Step 1: prepare the by-products.


      First of all, we thoroughly wash all offal under running cold running water from blood clots and other contaminants. Then we lay out in turn on a cutting board and continue cooking. We review each chicken liver and remove the gallbladder from it, if it is not removed, the dish will be bitter and the taste cannot be corrected by anything.       We cut the beef lung into pieces up to 5–6 centimeters in size and cut out the remains of the trachea and other respiratory tract from each.

After boiling, we drain the bubbling liquid from them, fill it with fresh cold and put it on the stove again. When the water begins to gurgle again, reduce the heat on all three burners to a level between the smallest and medium and cover the pots with lids.

      Offal is cooked different time: chicken heart- 1 hour, liver - from 10 to 15 minutes, beef lung– 20–25 minutes. When everything is ready, with the help of a slotted spoon we shift the products into one deep bowl and cool to room temperature.

      Pancakes stuffed with liver will require special attention mistresses. Leaver in his own way consumer properties is regarded no less than meat - due to its saturation with fats and vitamin D, it is especially useful for children. You can add chopped eggs, herbs and any spices to liver minced meat fried with onions.

      The thickness of the baking depends on the amount of dough in the pan.       Ingredients

      For test:

      • wheat flour - 6 tbsp.
      • milk - 1 tbsp.
      • vegetable oil - 1 tbsp. l.
      • chicken egg - 3 pcs.
      • salt - 1 chip.
      • sugar - 1 tbsp. l.

      For filling:

      • pig heart- 300 g
      • pork liver - 300 g
      • water - 2 l
      • salt - 1 tsp
      • bay leaf - 2 pcs.
      • black peppercorns - 5 pcs.
      • vegetable oil - 2 tbsp. l.
      • onion - 1 pc.
      • mixture ground peppers- 2 chips.

      Cooking

      1. First you need to prepare the liver filling for pancakes. Pork heart cooks twice as long as liver. Therefore, we will send the heart to cook first, and then add the liver to the same pan and bring everything to fully prepared saving a lot of time. So, we wash the pork heart, remove large vessels and fat. Fill it with cold water, add a couple of bay leaves and a few black peppercorns. Cook over low heat, not forgetting to remove the foam, for 30 minutes from the moment of boiling.

      2. While the heart is being cooked, be sure to soak it in a separate bowl pork liver- fill it with cold water and leave for 30 minutes to leave the characteristic bitterness.

      3. Soaked pork liver We send it to the same pan where the heart is cooked. Cook for another 30 minutes, skimming off the foam.

      4. Leave the liver in the broth in which it was cooked until cool. Then cut the liver and heart large pieces and pass through a meat grinder.

      5. In a frying pan, heat up the vegetable oil and sauté the diced onion on it. Pour twisted liver to the fried onion and fry for 5-7 minutes, salt and pepper to taste. The filling for pancakes is ready. If it turned out to be dryish, add a few tablespoons of the broth in which the heart and liver were cooked.

      6. It remains to cook pancakes in milk. To do this, beat the eggs into a bowl, add salt and sugar there.

      7. Stir with a whisk and pour the flour sifted through a sieve.

      8. Gradually pour milk into the dough, whisking it with a mixer or whisk until there are no lumps. At the very end, do not forget to add a little vegetable oil.

      9. We heat the pan, lightly grease it with oil and pour 1/2 ladle of dough into it, distributing it over the entire bottom of the pan in circular motions in the air. We bake pancakes on medium heat for 1-2 minutes on each side.
