What are dumplings

What is this famous and popular dish. This is a flour product stuffed with minced meat. The dough for classic dumplings is prepared quite simply, it includes flour, water and eggs. Some put minced deer, bear, elk or goose meat in them, you can also find dumplings with lard, fish or potatoes, but they already have a completely different taste. As usual, dumplings are boiled in boiling water until the dough and minced meat inside are completely cooked, but there is another way to cook this dish. So, to prepare the dough, you will need three cups of sifted wheat flour, 100 ml of boiled milk, 100 ml boiled water, one egg and a pinch of salt. After that, the dough is wrapped in cling film for 30 minutes, while minced meat is being prepared. To prepare it, you will need fatty pork, beef, onion and ground black pepper. If the pork is not fat enough, then you can add it to the minced meat lard. Ready dough rolled out thinly, with a glass or some other small round container, circles are squeezed out of it, in the middle of which a teaspoon of minced meat is placed, the dough is tightly stuck together and the dumplings are given their characteristic shape.

This recipe is taken from an old cookbook and, oddly enough, it is slightly different from our usual dumplings. The main difference between these dumplings is their filling. For her, only pork is taken, and the fatter - the better, she seasons heavy cream, ground, black pepper, salt and chopped nutmeg. The dough is prepared classical technology, but these dumplings are boiled in broth and served with it on the table. Dumplings can be seasoned with vinegar and pepper to taste.

Fish dumplings

The name alone of these dumplings speaks of their peculiarity. As you probably already guessed, the filling of these dumplings will be from fish. As for the test, it does not differ from the test for familiar dumplings, all the same water, eggs and flour. To prepare minced meat you will need 500 g fish fillet(as with meat, give preference to better than fish fatty varieties to make dumplings more juicy and rich), two onions, 50 g butter, 200 g seaweed, pepper and salt to taste. All ingredients must be crushed by adding pre-melted butter and mix until a homogeneous mass is obtained. Next, dumplings are prepared in the same way as meat dumplings.

What does it consist of dumplings harm?

What is included in dumplings

Dumplings are not harmful by themselves, but because of harmful additives. Today's producers like to save money and at the same time grossly violate the recipe, less valuable and sometimes low-quality meat is used for production, vegetable protein and fat are added to minced meat, which are much cheaper than the meat itself Bad quality. Among other things, many different dyes and preservatives are added to semi-finished products, which can harm our health.

Vegetable protein (soy), which is added to minced meat, is most often genetically modified, because all soy that enters our country is GMO.

Note that natural spices such as onion, garlic, dill, salt, and pepper should normally be listed item by item, and not generically "spices", because this word can mean different flavorings and flavor enhancers.

How to choose good dumplings?

If you want to buy dumplings, carefully read the composition of the product. All ingredients on the package are listed in descending order. For example, if pork is in the first place, it follows that it is the most in dumplings. Although, according to technology, the ratio of dough and minced meat should be 60/40, 50/50 or 40/60. It is better to trust the packaging, on which the components of these two components are written separately. If you see vegetable protein among the minced meat ingredients, in this case, refuse to buy these dumplings at all.

Pay attention to the color of the dough - it should be white, not gray or yellowish. This indicates that the product was not stored correctly or that various improvers are present in the dough, while the dough should consist of flour, water and eggs.

In the 21st century, many people have no time to even think that dumplings harm that they buy in the store can have a variety of health effects. Therefore, the most the best option, no matter how busy you are (after all, you can’t buy health anywhere later), cook dumplings yourself. Only your laziness can interfere with this.

To be honest, the results of this test once again did not please. We expected expensive dumplings to be just as tasty and high quality as homemade dumplings. One sample even indicated " self made". A total of 6 samples participated in the test (cost chart on the right).

What is the category of dumplings

The letters on the packages of dumplings (A, B, C, D or E) indicate the category of semi-finished meat products and indicate the minimum amount of meat in minced meat. The closer the letter is to the end of the alphabet, the less meat in the product. The edible parts of meat are muscle, fat, and connective tissue. At the same time, muscle is the most valuable and easily digestible, therefore the quality of semi-finished products is assessed precisely by its quantity:

  • category A: muscle tissue must be at least 80%
  • category B: content of muscle tissue from 60% to 80%
  • category B: 40-60% muscle tissue
  • category G: 20-40% muscle tissue
  • category D: the content of muscle tissue is less than 20%.

A fell, B disappeared... What's left?

With the letters denoting the category, uniform trouble happened. Laboratory tests have shown that only one sample of the test - " Siberian collection"- corresponds to the declared category. All other participants can be safely "disqualified" and transferred to a lower category, since they contain less muscle tissue than required by GOST (see table). Among the violators was, in particular, the most expensive sample of the test " At Palych", and dumplings" from Ilyina”, which the manufacturer arrogantly assigned to the highest category A.

Stuffing: what manufacturers are silent about

With bated breath, we waited for the results of the analysis of the composition of minced meat. The fact is that in order to reduce the cost of their products, manufacturers often add soy (vegetable protein) to it, wheat flour, starch, cereals, poultry meat, vegetable fiber, as well as all kinds of food additives (flavor enhancers, flavors, preservatives, etc.). This is permitted by law, but all of these ingredients must be listed on the packaging. However, we still hoped that the manufacturers did not mix anything superfluous into expensive dumplings. Moreover, on the packages of all samples, the list of products looked quite decent: beef, pork, onions, salt, black pepper, water, oil, salt, eggs, flour. In general, everything is as it should be. But is it really so?

Only half of the samples adequately withstood this stage of testing: “ from Ilyina», « At Palych" And " Siberian collection". Their minced meat fully complies with the declared composition and does not contain foreign ingredients. True, the analysis showed that the meat used in dumplings " from Ilyina”, frozen and, possibly, repeatedly.

But other test participants presented surprises. In the sample " Dymov» a significant amount of vegetable fiber was found, which the manufacturer kept silent about. Thus, these dumplings are meat-containing semi-finished products, and not meat, as stated. As part of dumplings " Siberian delicacy" turned out to be a moisture-retaining additive carrageenan, which is not reported on the label. In the same " Siberian delicacy" And " Caesar"an undeclared ingredient was also found, presumably an emulsion of the skin. But soy protein was not detected in any of the samples.

For little adults

- The boy, - said Ostap, - is it really bad?
Whoever says it's a girl, let him be the first to throw a stone at me!
Ilf and Petrov "The Twelve Chairs"

At the sample " Siberian delicacy". Dumplings "Appetizing. For the little ones, another problem was identified. The manufacturer claims that they “can be eaten by children from a very early age.” However, the product is made in accordance with GOST R 52675-2006, and not according to the special GOST R 51187-98 “Semi-finished minced meat, dumplings, minced meat baby food. General technical conditions". This standard contains more stringent requirements for the composition of children's products. Thus, the manufacturer misleads consumers. In addition, a water-retaining additive carrageenan and presumably an emulsion of the skin were found in these dumplings. And he did not report meat to the "kids", but more on this later.

Dough to meat ratio

We checked the ratio of dough and meat among the test participants. In almost all of them, the amount of minced meat was from 40 to 50% of the total mass of dumplings (see diagram). Most of the meat was in the sample " Siberian collection"(50.1%), least of all - in dumplings" from Ilyina" (41,7%).

But the statement of the manufacturer of children's dumplings " Siberian delicacy"The fact that meat in its products is 60%, and test 40%, was not confirmed. The study showed that minced meat accounts for only 44%, that is, the manufacturer saved it by almost a quarter! It would be better not to write anything than lie.

Only one test participant out of six is made in accordance with GOST (dumplings for children " Siberian delicacy"), so it must be correct. The rest of the samples were made specifications(TU), which means that the content of protein and fat in them is not correct to compare with the standards of GOST. The results of these studies are shown in the table.
