Ingredients:

  • Rice - 2 cups
  • Lentils (I have yellow) - 1 cup,

  • Spices (ideally baharat, but since we are preparing an analogue, take your favorites).

Cooking process:

The method of preparing this dish is quite simple, as is the composition. Of course, in the countries of the East, this dish is revealed by a special spice, or rather a bouquet of spices, which is called baharat. And it is customary to cook rice with lentils according to this recipe quite spicy. We, however, are not used to such a “fire” in the language, so we will put spices and spices to our taste.

Sort the rice and wash. There are many variations of this dish. And the rice in it can be absolutely any, both white (long or round), and brown, unpolished. You can also use bulgur.

Lentils also need to be washed. It is not necessary to soak before cooking. Lentils, like rice, can be used in any variety and color. Each time the dish will open up for you in a new way.

Part of the onion needs to be chopped into small cubes, and part - into half rings. Coarsely chopped onions will need to be fried separately until caramelized for decoration.

Fry finely chopped onion with vegetable oil. When the onion is lightly browned, transfer it to a saucepan and add 4 cups of water. This step can be done right away in a saucepan or tall saucepan.

Then add rice and lentils. Keep on high heat until it boils. Add salt to taste and spices. If you add turmeric to the dish, it will sparkle with golden colors.

  • ½ bunch fresh cilantro (coriander) or parsley, finely chopped
  • salt and freshly ground pepper

How to cook lentils with rice

1. We wash the lentils and put them in boiling salted water. We let it boil - so that it becomes soft, but not boiled. Dump in a colander and set aside.

2. Heat the olive oil in a wide frying pan and throw the onion into it.

3. Reduce the heat to a minimum, sprinkle the onion with cumin, salt and pepper. Stir until the onion begins to caramelize.

4. When our onions, soft and juicy, look like dark marmalade, pour vinegar into it. Stir until the vinegar evaporates.

5. Add lentils to the onion in the pan, mix and turn off the heat.

6. Throw rice into a saucepan with plenty of cold water. From the moment the water boils, leave the rice to cook for 12 minutes.

7. After that, remove the pan from the heat and overturn the rice in a colander.

8. We shift the lentils with onions into a wide deep salad bowl, add rice there, and mix.

9. If necessary, adjust the taste with salt. Pepper with freshly ground pepper, and sprinkle with finely chopped cilantro or parsley on top.
