Why is whole wheat flour better than white?

Whole grain (whole grain) flour is flour from the same wheat, the benefits of which no one questions. But in the production of whole grain flour it contains all the constituent parts of the grains wheat along with all the useful components contained in it, and there are a lot of them: vitamin B, protein, calcium, magnesium, phosphorus, etc. At the same time, in the production of white flour, it is processed in such a way that all the most valuable elements: the shell and the germ are removed and we are left to be content with starch alone.

And now the most interesting: the use of starch contributes to the deposition of fat, the removal of calcium from the body, the deterioration of the absorption of vitamin C and iron by the body, and many more different and terrible things.

At the same time, whole grain and white flour are almost the same in terms of calories, the fundamental difference is the process of their digestion by the body.

Recently, most often I bake 100% whole wheat bread in a bread machine (I have a Kenwood), the recipe of which I will treat you today. This recipe, like many others that I will share with you from time to time, was developed by the best culinary school in Greece, Le Monde.

I’ll make a reservation right away that the main guarantee of success when baking bread in a bread machine is the unquestioning observance of all requirements. I have repeatedly convinced myself that with the slightest deviation from the recipe, the result will never be 100% successful.

Salt and sugar are important components of the right bread

Now let me take a step back and say what was the experiment. As you can see in one of the pictures above, I have salt and yeast in the container in the corners. This is because I don't have sugar. I replaced it with the same amount of honey that I put directly after sunflower oil. As a result, everything worked out. The experiment was a success. But I want to warn you that it is impossible to completely exclude sugar or honey. I tried this last time, although I knew that without sugar, the yeast does not activate well. As a result, I got a dense and moist bread with a sticky texture, quite, in principle, edible, but not very pleasant when chewed. Although the crackers went just right. And I don’t recommend completely excluding salt either, because in addition to taste, it also affects the texture of bread. That's why at least half a spoonful of salt should always be added.

  • water - 300 ml.

Cooking:

  • 1-2 tbsp any fatty product: sour cream, butter, melted fat, vegetable oil,
  • salt - about 5 tsp,
  • baking powder - 2 tsp,
  • spices as desired.

Cooking:

1. Rub honey with butter until smooth, then pour in the milk and mix everything.

2. Add oatmeal and 1 cup flour, as well as salt and baking powder (you can use soda slaked with vinegar), mix. For spices, I added cardamom.

3. Now pour in the rest of the flour in parts until the dough becomes steep so that you can make round bread out of it with your hands.


I want to note that I usually add bran and flaxseed flour to baking: they improve the beneficial properties of the product and slightly reduce its calorie content. In this recipe, I added 2 tablespoons of these products. Especially such additives are useful if ordinary premium flour is used.

4. Put the bread on a baking sheet or in a mold (I have a silicone mat), sprinkle oatmeal on top for beauty, and put in the oven at 220C for about 30 minutes, checking the readiness with a wooden stick.
