Before describing the recipe, I would like to talk a little about yeast, or rather dry yeast.
On sale you can find several types, most often instant yeast and simple granular ones.
Instant yeast can be immediately mixed with flour and immediately begins to "work". But simple, granular, for example, from Dr. Oetker, it is advised to activate first. Therefore, in any recipe using dry yeast, you need to focus on their features when kneading the dough.
I like Dr. Oetker's products and therefore I use just such dry yeast in my recipes.

Well, let's start by activating the yeast, i.e. Let's get them up and running.
To do this, add sugar and yeast to warm water (about 37 degrees). Mix well with a whisk until the sugar is completely dissolved. Cover with a towel (yeast loves the dark) and leave for 10 minutes.


After the set time, a plentiful foam cap forms on the surface - the yeast "came to life" and is ready to prepare the dough.
You can now safely add salt and vegetable oil, mix everything together a little for uniformity.
Now mix in the flour, be sure to sifted.
To begin with, pour half the norm and mix - the dough looks like a sticky, watery mass.
Then gradually add the rest.

When (in your opinion) it will already be possible to knead with your hands - put the dough on the work surface and continue kneading, adding a little flour if necessary. By the way, all the flour may not go away (in any case, it happened to me), just observe the state of your dough - it should turn out to be quite plastic, but not sticky to your hands and surface.


Then transfer it to a voluminous bowl for lifting, while covering with a thick towel (lid).


The dough will rise for about 1-1.5 hours, it should increase at least twice.


In the meantime, the dough comes up to the desired condition, we work further - we prepare the mushroom filling.
This is probably the most simple stuffing for pies - onions and mushrooms.

You can take absolutely any mushrooms - champignons, for example, are sold in our time all year round. This time I have forest - from summer blanks. They were carefully sorted, slightly boiled and frozen. All I had to do was just take them out of the freezer to thaw.

Now everything is quite simple: peel the onion from the husk and chop, if possible, finely.


Mushrooms also cut into small pieces.
Next, in a well-heated frying pan, first fry the onion until softened and light golden.
And then add the mushrooms and fry until the liquid is completely evaporated. Season with salt and pepper to taste. The filling should be as dry as possible so that when baking, the dough does not remain, as they say, sticky.

But when it cools down, you can add a handful of chopped dill (so it does not darken, but retains its color) and mix.


Now, when the filling has cooled and the dough has risen, it's time to form the pies.
Can in the usual way, i.e. divide the dough into equal portions, flatten a little, put the filling in the center and then pinch the edges.
And it is possible in another way, which I will show now.
Roll out the dough into a flat layer, not thin, about 0.5 cm thick.
Cut into 12 equal sections with a sharp knife. In each, in the middle (sharp) part, make several cuts. By the way, so that the dough does not wrinkle, it is very convenient to do it with a pizza cutting wheel.

A rare person refuses to try pies with mushrooms. In addition to the main ingredient, vegetables, cereals, greens, chopped eggs or meat are added to the filling for such baking, it all depends on the hostess's imagination. And as a basis, they take yeast, yeast-free, puff, cottage cheese and even potato dough.

You can cook the dish both in the oven and in the pan. Consider different ways cooking pies with mushroom filling.

Fried pies with mushrooms are prepared on a yeast or yeast-free basis. This recipe shows the first way.

For cooking you will need:

We supplement the recipe with cabbage

If you combine mushrooms with cabbage, carrots and bell peppers, you get delicious stuffing for pies. They can be made on a yeast-free basis and baked in the oven or fried in a pan.

You will need:

  • one and a half glasses of kefir;
  • egg;
  • 20 ml of lean fat;
  • 4 cups flour;
  • salt;
  • soda;
  • 0.25 kg of cabbage;
  • 0.25 kg of mushrooms;
  • 3 onions;
  • 2 carrots;
  • sweet bell pepper;
  • spices.

Cooking sequence:

  1. Cut cabbage and send to fry.
  2. Cut the onion, carrot, mushrooms and bell pepper, and when the cabbage becomes soft, add the prepared ingredients to the pan, sprinkled with spices.

Baked treat in the oven

Fasting or a strict diet for health reasons is not at all a reason to refuse delicious meals. You can bake pies in the oven without the use of dairy products and eggs.

Required:

  • a glass of water or potato broth;
  • 25 g of granulated sugar;
  • 18-20 g baking powder;
  • 7-8 g of salt;
  • 25 ml vegetable fat;
  • 4.5-5 glasses of flour;
  • 0.58-0.6 kg of mushrooms;
  • several onion heads;
  • spices.

Actions:

  1. Pour into a deep bowl warm water or potato broth, add sugar, salt, lean fat and dry yeast, mix thoroughly.
  2. Pour flour into the workpiece, knead and leave the base to rise. It will take no more than 45-50 minutes.
  3. Fry the mushrooms with onions and seasonings, cool.
  4. Cut the risen dough and fashion the pies, then spread them on a baking sheet covered with oiled tracing paper and send to the oven.

Advice. Baked without egg yolk lubrication, patties may seem unattractive. To correct the situation, you can apply to ready-made pastries a small amount of vegetable fat with a pastry brush.

Since we will have yeast dough, in order for it to rise, before adding yeast, kefir must be allowed to warm up to room temperature. In order not to waste time and not to wait a long time, pour kefir from the refrigerator into a glass and put in the microwave for 1-2 minutes. Crumble yeast into a bowl with kefir.

Pour in right amount sugar and salt.

Pour refined sunflower oil into the dough.

Mix all the dough ingredients with a whisk until smooth.

It remains to add wheat flour to the dough. Sift the flour beforehand and add in small portions to the dough.

Knead the dough with your hands. Leave it for one hour for it to fit properly.

While the dough is rising, prepare the pie filling. For the filling, we will use champignons - wonderful mushrooms for cooking many quick mushroom dishes. Peel and finely chop the onion.

Rinse mushrooms under cold water. Cut them into small pieces with a knife.

Try to cut the mushrooms and not too finely, given that during frying they decrease significantly in volume. Fry the onion in vegetable oil.

Put out the mushrooms. Salt and pepper them. If desired, you can also add a bay leaf to them.

Saute mushrooms with onions for 10 minutes over low heat. During frying, be sure to stir the mushrooms.

Transfer the mushroom filling for pies to a plate and let it cool. Roll the dough into a ball the size of large plum. Flatten it between your palms. Form into a loaf shape with your fingers. Put a tablespoon of fried mushrooms.

Fold the edges of the cake together and pinch tightly. You can walk to one side and the other. Give the pie itself an oval shape.

Heat up a frying pan with oil. To get fried and ruddy pies, there should be at least 2 cm of vegetable oil in the pan. On hot pan put the pies next to each other.
