The most important thing when buying seafood is the freshness of the product, as invertebrates spoil quickly. Therefore, try to buy them only in trustworthy stores. Invertebrates should be intact and, like fish, smell fresh and clean. When buying frozen seafood, make sure that the packages are intact and that their contents remain firm and not thawed. When thawing, put the product directly in the package on a plate and leave in the refrigerator until completely defrosted.
Thawed and floating invertebrates are prepared immediately. Secondary freezing is not allowed.

Heat olive oil in another saucepan, put garlic, onion in it, fry a little. Add tomato cubes, mix thoroughly and pour in white wine. Put pieces of fish, rice and pour in a little broth obtained from boiling shrimp and shellfish. Throw Bay leaf, cilantro, salt, hot pepper and leave to cook. When the dish is almost ready, add seafood to the pan and leave to cook again, making sure that the rice does not overcook - in other words, that there is enough broth left at the end of cooking.
