We are preparing an original festive snack for the New Year's table "Beet Christmas Trees". This dish will please many guests. The light appetizer "Beet Trees" must definitely find its place among the numerous salads, jellied meats, sandwiches, hot and strong drinks.

Our recipe will have two types of creamy fillings, from tender cheese with an unusual lemon tint and the most healthy avocado - in a word, a win-win option. And, mind you, no mayonnaise!

Ingredients (for 6 servings):

  • small beets -6 pcs
  • cheese soft -150 gr
  • lemon zest -1 tsp
  • garlic - 2 cloves
  • avocado -1 pc
  • thick sour cream - 1 tsp
  • lemon juice - 1 tsp
  • salt, pepper - to taste
  • greenery - for decoration
  • wooden skewers (toothpicks) -6 pcs

Cooking:
1. Boil the beets in their skins or bake them in the microwave. Cool, peel and cut into slices 5 mm thick. Salt and pepper to taste.



2. Put the cheese in a salad bowl, mix with lemon zest, finely chopped garlic and Provence herbs. Add ground black pepper for taste. You should get a homogeneous air mass.



3. The second filling will be from avocado. Put the avocado pulp with a spoon in the same way in a salad bowl, add sour cream, a few drops of lemon juice, ground pepper and knead thoroughly with a fork.

Tip: If your avocado is hard, put it on a warm radiator overnight, it will become softer. Be sure to put a napkin under it.

  • olive oil - 150 ml

Wash the beets and leave in the oven for 1-2 hours at a temperature of 190-200 degrees. Before baking, do not remove the skin, do not remove the tail and tops. When the vegetable has cooled, peel it and chop it in a blender. Enter most of the nuts and grated cheese, peeled garlic, salt and pepper into the gruel. Stir the pesto, gradually adding the oil. Put the finished sauce on crackers, sprinkle with the remaining cheese, nuts and herbs.

  • slightly salted salmon - 300 g
  • cream cheese - 300 g

  • lemon juice - 1 tbsp.
  • red caviar - 50-60 g.

Rinse and finely chop the herbs. Cucumbers cut into small even pieces. In a deep bowl, combine cream cheese, dill and cucumber. Cut the salmon into strips. Cover a flat surface with cling film and lay the pieces of fish on it so that their edges overlap slightly. Spread the cheese mass over the salmon.

Lift the edges of the film and carefully roll the workpiece into a roll. Leave it in the refrigerator for an hour. After that, remove the film and divide the roll into pieces. To keep the cheese from sticking to the knife, wet the blade with water. Decorate serving dishes with lettuce leaves, arrange rolls on them and pour lemon juice over them. Put some red caviar on top.

Olive penguins

Children will be delighted with the guests from the North Pole! Ingredients (for 8 servings):

  • pitted olives - 16 pcs.
  • curd cheese - 150-200 g.
  • carrots - 1/2 pc.
  • red bell pepper

Cut eight olives in half. Put the cheese between the halves to make a penguin body with wings. You can take mozzarella in balls and attach pieces of olives to the sides. Place a whole olive on top - the bird's head. Peel the carrots, wash, cut into circles. Cut a quarter from each and insert it into the hole of the olive like a beak.

Put the remaining circle with a small slot under the cheese ball - these will be the legs of the penguin. If you are using bell peppers for other dishes, cut off the tops and use them as Christmas hats. Thin strips of vegetable will make excellent scarves for birds. Nothing creates a festive mood like an elegant spruce. Ingredients (for 8 servings):

  • salted herring fillet without skin and bones - 200 g
  • eggs - 2 pcs.
  • mayonnaise - 2 tbsp. l.
  • mustard - 1 tbsp. l.
  • salt, pepper - to taste
  • white bread - 1 pc.
  • medium cucumbers - 3-4 pcs.
  • beets - 1/4 pc.

Boil the beets in advance until cooked, and hard-boiled eggs. Pass the fish through a blender. Add egg yolks to the mass (whites can be used for other dishes), mayonnaise, mustard, salt and pepper. Mix the ingredients until smooth. Take bread that does not crumble well, cut it into slices of medium thickness. Remove the crusts to give the pulp the shape of a rectangle.
