You can make it at home using only sourdough, or with the addition of kvass wort. Kvass with the addition of wort turns out to be more saturated in taste, with a pronounced aroma and sharpness. The wort consists of fermented and non-fermented malt, as well as rye baking flour. Kvass wort can be purchased at shops or bakeries. Sourdough for kvass is made from dry kvass or rye crackers with the addition of other ingredients. To prepare the drink, you must prepare the sourdough in advance.

Composition and method of preparation of sourdough:

  • 125 grams dry bread kvass or 200-250 grams of rye bread;
  • 120–150 grams granulated sugar;
  • 8-10 grams of fresh briquette yeast (or 2-3 grams of dry);
  • 3 liters of water.

1. Pour 125 grams into a 3-liter jar thoroughly washed and sterilized with boiling water ready mix kvass dry bread, for example, the company "Pripravych" or any other. If this was not found, then put crackers from rye bread on the bottom of the jar.

During the preparation of sourdough, instead of purchased dry bread kvass, you can use homemade crackers.

Take 200-250 grams of rye bread, cut it into sticks and dry it to crackers in the oven. The sourdough will be tastier if you fry the crackers black.

2. Pour boiling water over the "shoulders" in the jar.

3. Put 120-150 grams of granulated sugar in a jar. Knead the thick and gently mix everything. Next, this liquid should cool down.

4. When the contents of the jar cool down to 30-40 ° C, pour half a glass of liquid from the jar, dissolve the yeast in it and pour it back into the jar. Stir again and cover the neck of the jar with gauze. After 12 hours, the sourdough will be ready.

Please note that yeast must not be diluted in a liquid that is too hot, otherwise the enzymes will elevated temperature will collapse, and in the future the desired reaction will not occur in kvass.

The main components and sequence of steps for making the drink itself:

  • 2 tbsp. spoons of dry bread kvass;
  • 3 art. spoons of granulated sugar with a slide;
  • 1 st. spoons of kvass wort, if available;
  • 2-3 crackers from black bread, for example, from Borodinsky;
  • a handful of raisins (optional)

You can buy kvass wort concentrate in the market or in the Auchan hypermarket in the department of dietary goods and food for diabetics.

1. Drain the liquid from the jar through gauze into the sink, it is no longer needed, as it has a sugary smell of yeast.

2. Leave 75% of the existing slurry at the bottom of the jar, and remove 25%.

This slurry is the finished sourdough, which can be reused when preparing a new batch of kvass.

We store it in glass container in the refrigerator, and if necessary, transfer to a 3-liter jar and then do everything according to the instructions below: 1) put to finished sourdough sugar, dry bread kvass, wort and crackers; 2) fill warm water and leave for a day or three to infuse.

3. Put the remaining ingredients in a jar of gruel: 2 tbsp. l. dry bread kvass + 3 tbsp. l. granulated sugar + 1 tbsp. l. wort concentrate + 2–3 crackers + raisins (preferably steamed in boiling water).

If there is no wort concentrate, then instead of it, you need to add 1 more tablespoon of dry bread kvass to the jar, but then the kvass comes out a little less tasty.

4. Pour the jar to the brim with warm boiled water, the temperature of which should not exceed 35 ° C. Cover the neck of the jar with gauze.

5. In a day the drink will be ready. It must be filtered through cheesecloth and poured into another container, for example, into a plastic bottle. Add (you can directly into the bottle) sugar to taste (about 2-3 tablespoons), mix well and put in the refrigerator to cool.

Such an infusion is called daily. But you can get a sharper infusion, leaving it to stand for less than three days. Pregnant girls are advised to drink a homemade drink that has fermented for no more than two days.

Those who are afraid to drink kvass from the refrigerator can pour it into a heated glass. Within a minute it will be possible to drink it without fear that you will catch a cold.

Who should not drink kvass?

This drink is undesirable for people with certain diseases. And in some cases, you should only limit the amount of drink you drink.

Strict ban:

  1. peptic ulcer;
  2. Gastritis with high acidity;
  3. Oncological diseases;
  4. Diseases of the liver, gallbladder;
  5. lactation period.

Moderate Consumption:

  1. Gastritis with low acidity;
  2. Urolithiasis disease;
  3. Tendency to flatulence.

If a pregnant woman suffers from preeclampsia, hypertension or edema (including those with a tendency to edema), then it is better to stop drinking kvass, because it is able to retain fluid in the body. It is for this reason that women should not drink kvass in the last weeks of pregnancy.

But even during the normal course of pregnancy, this refreshing drink should be drunk in limited doses - no more than 2 glasses per day.

This drink is designed to quench your thirst. But this only applies to homemade products. Modern manufacturers tend to add various preservatives and dyes, speeding up and reducing the cost of production. Therefore, during pregnancy, you should only drink homemade drink.
