In summer, the basis of our menu is drinking. Because of the hot weather, you want to drink almost constantly. And you don't have to deny yourself! Better let's see what refreshing drinks can be prepared in the summer.

Homemade Lemonade - This is perhaps the easiest option. At the same time, it perfectly removes thirst. It can be sour or sweet with a slight sourness - it all depends on you. To make homemade lemonade you will need:

  • half a lemon
  • Liter of sparkling water
  • 5 st. spoons of sugar

Juice is squeezed from the lemon and poured into a lemonade jug. Sugar and chopped pulp and lemon zest are also added there, everything is mixed and filled with sparkling water. The drink is ready! If desired, ice can be added before serving.

In fact, the amount of sugar and lemon juice in this drink is a matter of taste. Some people like it when it is very sour, others prefer to put more sugar. You can add one or another ingredient to it after cooking. But very quickly you will find your perfect combination and will cook according to your own recipe.

Kiwi lemonade
In principle, making fruit-flavored lemonade is very simple - for this, you need to add any fruit syrup instead of sugar to it. But I was more interested in the lemonade recipe with real kiwi. For its preparation need:
  • 6 kiwi
  • 1 cup of sugar
  • glasses of lemon juice
  • Liter of sparkling water

Make kiwi puree. Lemon juice in a jug is mixed with sugar, kiwi puree is added to it. Add sparkling water and gently stir the drink.

If you want to surprise your friends even more, you can add kiwi ice to this drink. To do this, cut 4 fruits into small pieces and arrange them in ice containers, add water to them and freeze.

non-alcoholic mojito In general, non-alcoholic mojito belongs to the same family of drinks. But, given its popularity, I simply could not not single out a cocktail in a separate recipe. In addition, a sour drink with mint perfectly quenches thirst. To prepare it you will need:
  • Several sprigs of mint
  • 3 teaspoons of sugar
  • lime
  • 200 ml carbonated water
  • crushed ice

Half a lime is cut into 4 parts, each of which is squeezed into a glass. Juice in a glass is mixed with sugar, the remaining lime zest, crushed mint leaves and ice should be put there. The drink is filled with carbonated water. Some recipes suggest using Sprite, but I prefer the regular soda option.

Refreshing julep It is believed that the name of this soft drink comes from the Arabic julab, which translates as "pink water". Juleps are prepared on the basis of various fruits. I bring to your attention one of the recipes. It will require:
  • 100 ml blackcurrant juice
  • 80 ml raspberry juice
  • 20 ml mint syrup
  • ice cubes
  • strawberries

Liquid components are mixed in a glass, ice is added to them. The drink can be garnished with strawberries.

Other fruit juleps are prepared according to the same principle.

Smoothies These drinks are chilled fruit mixes. Delicious and refreshing, they are also very healthy because they contain a large amount of vitamins. For example, let's take the simplest recipe - a citrus-banana smoothie. To prepare it you will need:

  • 4 large oranges
  • 1 red grapefruit
  • 3 bananas

Squeeze juice from orange and grapefruit and pour it into a blender. Cut the banana into small pieces and put in the same place. Add ice and mix everything until smooth. After that, you can serve.

Kvass To be honest, I don't really like this drink. In any case, I will not drink any kvass sold in bottles or jars even in the worst heat. At the same time, I remember very well with what pleasure in my childhood I drank homemade kvass prepared by my grandmother. And all because homemade and purchased kvass are two completely different drinks. I propose to remember how homemade bread kvass is prepared. It's hard and long, but it's worth it. To prepare it you will need:
  • Half a loaf of rye bread
  • 3 liters of boiled water
  • 25-30 g dry yeast
  • Half a glass of sugar
  • Raisin

Bread should be cut into small pieces. Put the pieces on a baking sheet and put in a slightly heated oven. We dry the crackers for about 10-15 minutes on low heat, then turn off the oven, leaving the baking sheet in it.

We spread the crackers in a three-liter jar and fill it with water up to the "shoulders". Add three tablespoons of sugar and leave to cool. Dissolve dry yeast in a glass of water. When the water in the jar has cooled, pour the diluted yeast into it, mix. We cover the jar with a lid and put it in a warm place for 2 days. After that, kvass must be filtered through cheesecloth to separate the thick. In the resulting drink, add the remaining sugar and raisins, cork and put in the refrigerator. After a day, kvass can be drunk.

And you can not throw out the thick, but put it in a separate jar. Then it can be used as a starter.

Strawberry kvass Fruit kvass are prepared according to a similar technology, only they use not crackers, but fruits and berries as a starter. As, for example, in strawberry kvass. To prepare it you will need:
  • 800 g strawberries
  • 250 g sugar
  • 4 liters of water
  • 25 g yeast
  • 1 teaspoon citric acid

Wash the berries, sort, slightly knead, pour hot boiled water and bring to a boil. Leave the decoction for 2-3 hours. Then strain through several layers of gauze, add diluted yeast, sugar, citric acid and leave for fermentation for 6-10 hours. Then strain again, cool and you can drink!

From day to day, the weather pleases us, and at the same time the air temperature is rising. The heat during the summer makes us lose fluids and if we don't drink enough fluids, we can become dehydrated. Instead of drinking unhealthy fizzy drinks, here are some cool drinks you can easily make at home.

Masala

Masala is a favorite in Gujarati (India) households throughout the year, but mostly in the summer.

To make 1 cup of masala, take one-third of a cup of cottage cheese, throw in half a teaspoon of grated ginger, half a teaspoon of green tea, a few curry leaves, 1 teaspoon of coriander or mint leaves, a pinch of hin and mix it all with a mixer for a few seconds. Add 2/3 cup water and salt to taste. Mix well and serve chilled. Masala is very good for the digestive system.

Mulberry Lemonade

Nowadays it is quite difficult to find mulberries for sale. But if you're lucky and find it, try this refreshing lemonade.

Preparation: put 200 g of mulberry in a bowl, crush it with a spoon and pass through a sieve, add ice cubes and mix with two tablespoons of lemon juice. Add ¼ cup powdered sugar, 500 ml soda water and serve immediately.

Aam panna

Raw mangoes need to be fried and then the pulp removed. Combine 1 cup sugar and 1 cup raw mango pulp and mix well. You can also use a mixer and mix it all for a few seconds. Sugar, salt and black jeera powder can be added to taste. Serve chilled with a few mint leaves. Cooling drinks are sometimes extreme)

jal zira

All over North India, you can see carts selling jal zeera. Instead of buying this drink from a local vendor where you're not too sure about the quality of the water, you can easily make this refreshing drink at home.

You need to mix 1 cup of lemon juice with 1 cup of water + 1 tablespoon of sugar. Add a few sprigs of mint and coriander leaves, ¼ teaspoon amchup or raw mango powder, and ¼ teaspoon grated ginger + one teaspoon roasted cumin. Mix ingredients well, serve chilled.

Garcinia sherbet

Soak 100 g Garcinia in hot water for 30 minutes and remove the pulp. Add 1 teaspoon black and rock salt, sugar to taste, 1 tablespoon roasted cumin powder, 1 teaspoon cardamom powder, a few sprigs of mint leaves, and 2 cups water.

Garcinia is rich in vitamin C and is a great cooling drink.

Coconut with lemon.

Iced tea is a summer favorite.

Boil a pot with 3 cups of water and add 3 teaspoons of tea leaves; let it brew for a minute. Strain and chill the tea. Add ice cubes, 2 cups coconut water, 4 tablespoons honey and 4 tablespoons lemon juice.

Garnish with mint leaves and thin slices of lemon.

Cooling drinks will help you enjoy this summer!

Here, Ami, cold mineral water! Drink! I said, holding out a misted glass of water to my uncle.
- Oh, from the fridge! - Uncle raised one eyebrow, and an ironic smile appeared in the corners of his lips, denoting "Yes, what are you young people only taught in these institutes?"
- And we are in Turkmenistan, do you know how they made cold water? When there were no refrigerators? I then worked as a driver. Here you pour water into a canvas bucket, hang it on the front bumper and go! ZIS-5, do you know how fast it travels? Thirty kilometers an hour! The heat is forty-five, and the bucket is there, in front, in the shade dangling, the wind blows it, and the water slowly seeps through the tarpaulin, and immediately dries up. That's how you go - an hour, two, and then you stop for a smoke, take a bucket, drink over the edge, the water pours on you, and the cold one already hurts your teeth!
Of course, this method of cooling water was not invented by my uncle or his comrades. This method has been used for many centuries, only in the old days, instead of a canvas bucket, a special khurzhun was used, and the role of the ZIS-5 was successfully replaced by a camel. However, in the parking lot, this method also worked perfectly, especially if it was windy. Khurzhun with water on a pole, a pole in the shade of a yurt, and now - cold water is always at hand. And if you wrap the meat and lower it into this khurzhun? Yes, here is a refrigerator for you!
What is there to say about the ability to cool water in a hot desert, if in Bukhara all year round, in any weather, you could buy ice at the bazaar!

Why am I telling you all this? Here happened the first really hot summer in Russia in my memory. Who to ask, who to learn how to endure such heat, and most importantly - what to drink?
I assure you that instead of using all sorts of foreign sodas, it is much better to turn your attention to the experience of peoples who have been living in a hot climate for thousands of years. Listen to me, I will not talk about what is well known and traditionally used in Russia even without me - about fruit drinks, fruit and berry compotes, kvass and other soft drinks. I will talk about what they drink in the heat in Central Asia and the Caucasus.

- the best drink in the heat, I assure you. No matter how hot it is, drink very hot green tea without any sweets or flavors. Just pour tea little by little, literally two sips in one bowl. Drink tea slowly, after a few bowls your thirst will definitely subside. It is not the amount of alcohol that is important here, but the time, because the tea must have time to act! Prepare a napkin to wipe the sweat from your forehead - now it will be cooler.

Yahna tea

But do not rush to pour out unfinished tea! Add boiling water to the teapot, let it brew a little more and pour the infusion through a strainer into a clean bowl. When the tea has cooled, put it in the refrigerator. Cold green tea also remarkably quenches thirst and you can drink it not in small bowls, but as you are used to, and as you like - in glasses. Anyway - this is not vodka - you won’t drink much, you won’t overdrink!

But there is no appetite, there is no appetite in the heat - that's what worries! There is only one desire. This is where you have to use what you have.

Correct ayran

Look, this is called syuzma. In fact, it is expressed. Preparing syuzma is very simple: take it, put it on several layers of gauze and let the whey drain. You will get a wonderful product; with the use of suzma, you can cook a lot of sauces, salads. But if you dilute syuzma with mineral water, you get the best ayran that only happens in the world.

Katyk diluted with water or, God forbid, store-bought ayran cannot be compared with homemade ayran on suzma. Salt it to taste, cool it and drink it to your health - this is both a drink and food at the same time.

apple ayran

If you want to decorate the taste of ayran, then this can be done with dried herbs: thyme, mint, basil and ... even green apples. Let it brew, let the aroma pass into the drink, and then add ice and drink to your health!

Raykhon sherbet

Fresh purple basil brews well and produces a thick, purple infusion. Add sugar to the infusion, whatever you think of sweets in this heat. Strain the infusion and add lemon juice to it. The infusion will instantly change its color to bright red and you will get an excellent sherbet.

Similarly, sherbet can be made from mint, tarragon and rose petals (only the rose must be of a special variety, do not try to use the bouquet given last Friday to make sherbet).

Raykhon ayran

An infusion of basil can be used to spice up ayran. Only sugar and lemon are useless in this case - ayran with basil already turns out with a wonderfully balanced taste and aroma.

honey ayran

Speaking of balance! Airan has a pleasantly sour taste. A pinch of salt is just what you need! But what if we go the other way? After all, we are pleased not only with sour-salty tastes, but also with sour-sweet ones! So add some honey to fresh, freshly whipped ayran! You can't even imagine how delicious it is!

Dried apricot sherbet

But the sweet and sour taste of summer drinks does not have to be artificially created by combining different products. You can just take a good dried apricots and pour boiling water over it. The perfect balance of taste in this drink is created by nature itself! After a few hours, when the infusion has cooled, put the jug in the refrigerator and drink in the morning, on an empty stomach. This is not only a soft drink - it is also healing! In the heat, it will support your heart, and it will also affect blood pressure in the most positive way.

And try to make the same infusion from barberry - the very one that the Uzbeks add to. It is very tasty, only the pharmacological properties of such a drink are even more pronounced, so drink it not in glasses, but in several sips.

Saffron sherbet

So saffron sherbet should not be drunk in large quantities. Indeed, in order to cook it, you will have to take dried mint and basil - herbs that are also used for medicinal purposes.
So, grind a pinch of saffron with a teaspoon of sugar, add basil and mint and brew with boiling water. Add two tablespoons of sugar to half a liter of boiling water, and when the infusion has cooled, its taste should be corrected with lemon juice. Strain and refrigerate - you have literally got a royal drink!

Banana cocktail

What a wonderful cocktail is obtained from milk and a banana, probably everyone knows. And what if you try to cook it with ayran? Banana, contrary to our expectation, will not give the drink the necessary sweet note. So, like it or not, you have to add some sugar. But the taste of ayran and banana cocktail is simply extraordinary! Try to cook it and I'm sure it will push you to new experiments.

raspberry experiment

Rub raspberries with sugar, mix with syuzma ayran or even plain yogurt. Don't forget to shake. After all, even the best katyk or matsoni, if beaten a little, turns from food into a wonderful drink. But tell me, is it a drink or is it quite a lunch?
