I thought for a long time how to please you on this day, I’m not special in sweets, but I wanted to sweeten the congratulations. So I decided to stick with the no-bake cheesecake. Actually, I am friends with the test and my pies are excellent, but ... they will not pass the calorie face control for the Herbalife diet.

So I decided to look low calorie sweet, which will definitely get the approval of everyone who is fighting the figure. The cake did not dare to make, he settled on a cottage cheese cheesecake. The recipe attracted the fact that it did not require baking. Of course, I “spoiled” him, as usual, in the dietary direction, but along the way, this did not prevent him from remaining tasty and sometimes even sweet. 🙂

Classic variant cheesecake required the presence of harmful ingredients - butter, mascarpone, cream, sugar ... I figured it out and decided that 1% kefir, fat-free cottage cheese and natural honey. And I was not mistaken, everything turned out to be a “happening”.

Products

The basis

  • Long fructose biscuits - 200 grams
  • Kefir 1% or fat-free - 7-8 tablespoons
  • Honey - 1 tablespoon

curd cream

  • Fat-free cottage cheese - 400 grams
  • Kefir 1% - 250 ml
  • Honey - 3 tablespoons
  • Gelatin - 20 grams
  • Cranberries - 50 grams
  • Fructose - 1 tablespoon

Cooking method
  1. First, I diluted the gelatin, as it was written in the instructions on the package, and left it to swell. 40 minutes somewhere it turned out, plus or minus 10 minutes, I didn’t notice.
  2. I broke the cookies and crushed them with a blender into crumbs.
  3. Then one spoon poured kefir and stirred. How much did it take to desired consistency I didn’t know, that’s why I poured in “spoonful” until the cookies began to turn into a homogeneous sticky mass.
  4. I found a detachable form on the farm, we usually bake Easter cake in it, but it was quite suitable for a cheesecake. Distributed and "trampled" the resulting mass along the bottom.
  5. Then he took up the cream - put cottage cheese in a blender, poured kefir. added honey for sweetness and beat for about 5 minutes. I tried so that there were no lumps, but since the cottage cheese was dry, it was perfect smooth consistency didn't work out.
  6. Fructose was added to the swollen gelatin and heated until boiling. Removed from heat and cooled slightly.
  7. I connected 3/4 of the gelatin with the curd mass and mixed. 1/4 left for pouring, did not clean in the refrigerator.
  8. I poured the curd mass on the base and put it in the refrigerator.
  9. After a couple of hours, I took it out, put cranberries on top and poured gelatin on top.
  10. I left it in the cold overnight, in the morning the cheesecake was ready to eat.

Cheesecake review

Exactly I breathe for sweets, but I liked that it didn’t turn out cloying, on the contrary, I wanted to add a little sweetness. If only there were some fresh instead of cranberries sweet berry or fruit would be a better combination. Therefore, I advise you to use sweet fruits for filling.

We will need:

  • Natural yogurt - 100 ml;

  • 2 eggs.

Gelatin is dissolved in water, diluted lemon juice, heated in a water bath. Combine cottage cheese with yogurt and honey, add gelatin.
