You will need:

  • 15 g gelatin
  • 100 ml oat milk
  • 400 g low-fat cottage cheese in a briquette
  • 50 g cocoa powder
  • 2 tsp. honey
  • strawberries for decoration

Preparation:

It is necessary to soak gelatin in 100 ml of water room temperature. Let it brew for 30 minutes. Then heat the gelatin (but do not bring to a boil) until completely dissolved and let cool.

Add cottage cheese, milk, cocoa powder and honey to a bowl. Add cooled gelatin. Mix everything thoroughly and put it in a springform pan. Place the dessert in the refrigerator for 3 hours. Afterwards, decorate with whole strawberries.

For the base we take:

  • 20 g gelatin

We dilute gelatin according to the instructions. Separate the whites from the yolks. Beat the whites thoroughly with stevia. Knead the cottage cheese, add proteins and gelatin.

Mix well, put in a springform pan and remove freezer for 15 minutes.

For the jelly you need:

  • 20 g gelatin
  • 200 g seasonal berries
  • 250 ml berry juice

Pour gelatin berry juice, let it brew for 30 minutes. Then, without bringing to a boil, heat the gelatin until completely dissolved.

I thought for a long time about how to please you on this day, I’m not a sweet tooth, but I wanted to sweeten the congratulations. So I decided to go with a no-bake cheesecake. Actually, I’m good with dough and my pies turn out great, but... they won’t pass the face control for calorie content for the Herbalife diet.

So I decided to look low-calorie sweets, which will definitely receive approval from everyone who is fighting the figure. I didn’t dare make a cake, I settled on cottage cheese cheesecake. The recipe was attractive because it did not require baking. I, of course, “ruined” it, as usual, in the dietary direction, but along the way this did not prevent it from remaining tasty and sometimes even sweet. 🙂

Classic version cheesecake required the presence of harmful ingredients - butter, mascarpone, cream, sugar... I figured it out and decided that 1% kefir, low-fat cottage cheese and natural honey. And I was not mistaken, everything turned out to be a “happening”.

Products

The basis

  • Long-lasting fructose cookies - 200 grams
  • Kefir 1% or low-fat - 7-8 tablespoons
  • Honey - 1 tablespoon

Curd cream

  • Low-fat cottage cheese - 400 grams
  • Kefir 1% – 250 ml
  • Honey - 3 tablespoons
  • Gelatin – 20 grams
  • Cranberries - 50 grams
  • Fructose - 1 tablespoon

A detachable form - mine was 14 centimeters in diameter.

Cooking method
  1. First, I diluted the gelatin, as prescribed in the instructions on the package, and left it to swell. It turned out to be about 40 minutes somewhere, plus or minus 10 minutes, I didn’t time it.
  2. I broke the cookies and crushed them into crumbs using a blender.
  3. Then add kefir one spoon at a time and stir. How much was needed before desired consistency I didn’t know, so I poured in “spoonfully” until the cookies began to turn into a homogeneous sticky mass.
  4. I found a springform pan on the farm; we usually bake Easter cakes in it, but it was also quite suitable for cheesecake. I distributed and “tromped” the resulting mass along the bottom.
  5. Then I got to work on the cream - I put the cottage cheese in the blender and poured in the kefir. added honey for sweetness and beat for about 5 minutes. I tried to ensure that there were no lumps, but since the cottage cheese was dry, it was perfect smooth consistency it didn't work out.
  6. Add fructose to the swollen gelatin and heat it until it boils. Removed from heat and cooled slightly.
  7. Combined 3/4 of the gelatin with the curd mass and stirred. I left 1/4 for filling; I didn’t put it in the refrigerator.
  8. I poured the curd mixture onto the base and put it in the refrigerator.
  9. After a couple of hours, I took it out, put cranberries on top and poured gelatin on top.
  10. I left it in the cold overnight, and in the morning the cheesecake was ready to eat.

Review of cheesecake

I have a soft spot for sweets, but I liked that it wasn’t cloying; on the contrary, I wanted to add a little sweetness. Now, if instead of cranberries there were some fresh ones sweet berry or fruit, it would be a better combination. Therefore, I advise you to use sweet fruits for filling.
