To properly bake a mushroom pie from puff pastry, you must first refer to the recipe for the dough itself.

The technique for preparing it varies, but we will draw your attention to the simplest and fastest method.

  • Flour – 4 tbsp;
  • Butter – 120 g;
  • Sunflower oil – 80 g;
  • Chicken eggs – 1 pc.;
  • Sugar – 1.5 tbsp. l.;
  • Salt – 1.5 tsp;
  • Dry yeast – 1 pack (15 g);
  • Milk – 1.5 tbsp.

Take 0.5 tbsp. warm milk and dilute yeast and sugar in it.

Beat in the egg and mix thoroughly until smooth.

Prepare a surface for kneading dough and sift flour onto it. Make a well and pour in the milk with the diluted ingredients.

Add salt and vegetable oil, combine with flour and start kneading the dough.

Then leave the dough to rise for 60 minutes in a warm place. During this time, knead the mass once and let it rise again.

Roll out the dough onto the surface into a thin crust and grease with butter, which must first be melted.

Fold the layer in thirds and roll out thinly again. Repeat the process 3 more times and you can start cooking.

Puff pastry without yeast for pies

You can also bake a delicious mushroom pie from yeast-free puff pastry. To do this, we suggest that you familiarize yourself with the dough recipe.

  • Butter (chilled) – 380 g;
  • Flour – 0.5 kg;
  • Salt – a couple of pinches;
  • Eggs – 1 pc.;
  • Cold boiled water – 230 ml;
  • Vinegar 6% – 2 tsp.

I must say that in this version the dough is made very quickly and easily.

Combine egg, vinegar and salt in water, beat lightly with a fork.

Sift the flour onto the prepared surface and rub in ¼ of the butter. Mix with flour, grate the butter again and mix again without pressing. In this case, make sure that the butter does not melt.

Pour water in portions and assemble the dough, but do not knead it. Try to ensure that the butter does not melt, but remains in pieces; to do this, keep it in the freezer first.

Collect the dough, put it in a bag and put it in the refrigerator for 1 hour. Then take out the dough, knead it and return it to the refrigerator for another hour.

Classic recipe for layer pie with mushrooms and onions

According to the classic recipe, a layer pie is prepared with mushrooms and onions. The last ingredient adds a special aroma and richness to the dish.

  • Puff pastry – 0.5 kg;
  • or – 0.5 kg;
  • Onion – 1 large head;
  • Vegetable oil;
  • Salt, spices.

When it comes to puff pastry, you can choose one of the two options above or use your favorite recipe.

So, let's make the filling: wash the champignons in water, and cut off the stems from the oyster mushrooms.

Peel the onion, wash it and chop it into thin half rings. Fry in oil for about 2 minutes over medium heat.

Cut the fruiting bodies into strips and add to the onion. Bring to readiness, add salt, pepper and mix. Turn off the stove and set the filling aside while we prepare the dough.

Divide the dough in half and roll both parts into the shape of a baking container.

Place one part in a greased pan and slightly stretch the edges, making sides.



Distribute the filling and cover with the second part of the dough, pinching the edges. Make random holes on the surface with a fork or toothpick.

Place the puff pastry pie with mushrooms in the oven and bake for 45 minutes at 190°C.

Layered pie made from ready-made dough with wild mushrooms

Layered pie with wild mushrooms is quite simple to prepare, but there are some nuances in preparing the filling. So, any forest fruiting bodies must be boiled in salt water for 20 minutes in advance.

  • Puff pastry – 0.5 kg;
  • Forest mushrooms – 0.5 kg;
  • Olive or vegetable oil;
  • Green onions - 10 feathers;
  • Salt pepper;
  • Egg – 1 pc.;
  • Garlic – 1 clove.

It is worth noting that you can make a pie with mushrooms from ready-made puff pastry, which is freely sold in supermarkets or convenience stores.

We remove as much liquid as possible from the boiled mushrooms; you can even crush them a little with your hands.

Cut this ingredient into strips or cubes and place in a heated frying pan with oil. Fry until half cooked, add chopped onion and garlic, salt and pepper, mix and bring to readiness.

Take the dough, divide it into 2 unequal halves and roll it out.

Place the thicker half on the bottom of the pan, greased with oil, forming high sides.

Fill the crust with filling and make a “cap” from the second half of the dough.

We pinch the edges and make holes with a toothpick to allow steam to escape.

Beat the egg into a bowl, beat lightly and brush the surface of the pie.

Place in the oven for 40-45 minutes and bake at 180-190°C.

Layered yeast pie with mushrooms and sour cream

The following recipe with a photo of a layer pie with mushrooms involves adding sour cream.

This component makes baked goods very tender and aromatic. In this version we use puff pastry. The delicacy can be served as an independent dish in combination with tomato juice.

  • Puff yeast dough – 0.6 g;
  • Mushrooms (champignons, oyster mushrooms) – 0.5 kg;
  • Sour cream – 4 tbsp. l.;
  • Onion – 1 pc.;
  • Butter – 30 g;
  • Egg – 1 pc. for greasing the pie;
  • Fresh greens - parsley, dill;
  • Salt, favorite spices.

Layered pie with mushrooms and sour cream is prepared in several simple steps.

The fruiting bodies are chopped into cubes and, together with onion half rings, fried in butter until the liquid evaporates.

Add sour cream, salt and spices to taste, and then simmer for 5-7 minutes over low heat.

In 2 minutes, add finely chopped greens, mix and set aside to cool slightly.

Meanwhile, the dough is rolled out into one continuous thin cake and the filling is laid out on the edge.

The pie is wrapped in a roll and brushed with egg.

Holes are made with a toothpick over the entire surface, after which the roll is laid out on a baking sheet, which is previously lined with parchment paper.

A layered yeast pie with mushrooms and sour cream is baked at 190°C for about 45 minutes.

Simple layer cake with mushrooms and fish

A very interesting, but at the same time simple recipe for a mushroom pie made from puff pastry. The fruit bodies combined with the fish make the baked goods delicious, adding their own notes of flavor.

  • Puff pastry – 0.4 kg;
  • Champignons – 350 g;
  • Fillet of hake, pollock or red fish – 350 g;
  • Onion – 2 medium heads;
  • Vegetable oil – 2-3 tbsp. l.;
  • Sour cream – 2-3 tbsp. l.;
  • Fresh dill, parsley – 3-5 sprigs each;
  • Salt and pepper - to taste.

I must say that the recipe for layer pie with mushrooms and fish is very simple, even those who have just embarked on the “culinary path” can cope with it.

Twist the fish fillet through a meat grinder or put it in a blender.

Fry peeled and diced fruit bodies together with onion half rings in oil.

5 minutes before readiness, add sour cream, reduce heat and simmer.

Combine mushrooms with fish, salt and pepper.

Line a baking pan with parchment and work on the dough.

Roll out the dough to the size of the mold and place it on the bottom, leveling it with your hands and making high sides along the edges.

Place the filling onto the layer and sprinkle finely chopped herbs on top.

If you have never cooked a layered upside-down pie with mushrooms and minced meat, then now is the time to take a pen and write down this recipe. This dish will crown any holiday or a simple family meal with comfort and gentle home warmth.

  • Puff pastry – 0.6 kg;
  • Oyster mushroom – 0.3 kg;
  • Minced pork and beef – 0.3 kg;
  • Onions and carrots - 1 pc.;
  • Hard cheese – 100 g;
  • Vegetable oil;
  • Garlic – 2 cloves;
  • Cream margarine - for greasing the pan;
  • Salt pepper.

Peel the onion and carrots and cut them into cubes 5 mm thick.

Cut the oyster mushroom caps into pieces and prepare the pan for frying.

Pour oil, heat it up and put carrots and onions on it.

After 2-3 minutes, add the mushrooms and fry the whole mass until cooked.

Then transfer the mixture to a separate plate, and add minced meat and crushed garlic to the frying pan.

Fry until light golden brown, turn off the heat and combine with the mushroom mixture. Stir, salt and pepper to taste, mix again.

Divide the dough into 2 unequal parts - approximately ¼ and ¾.

Take the larger part and roll it into the desired shape. And roll out the smaller part of the dough as thin as possible.

Grease a baking container with margarine and lay out a thin cake layer, making appropriate sides.

Spread the filling and grated cheese on top of the crust.

Cover the filling with a thick crust, carefully make holes with a toothpick and place in an oven preheated to 190°C for 40-50 minutes.

When the pie is ready, remove it from the oven and simply invert it onto a plate.

Layered pie with mushrooms and chicken liver

This mushroom pie with puff pastry can be made either open or closed. You can come up with your own presentation for such baked goods and thereby surprise your loved ones.

In this case, we will use the recipe for an open pie. The recipe for layer pie with mushrooms and liver will definitely be included in your family menu as a desirable dish for any meal.

  • Puff pastry – 0.6 kg;
  • Champignons (can be marinated) – 0.4 kg;
  • Chicken liver – 0.3 kg;
  • Heavy cream – 4 tbsp. l.;
  • Onion – 2 pcs.;
  • Vegetable oil;
  • Spices – salt, pepper, curry.

How to cook layer pie with mushrooms and chicken liver?

Cut the champignons into medium pieces and fry in oil with chopped onion.

A few minutes before the mushrooms are ready, add cream and chopped herbs.

Boil the liver in salted water and pass through a meat grinder.

Mix the offal with mushrooms, add salt if necessary. Season with pepper and add a pinch of curry, stir and set aside temporarily.

Roll out the dough and place on a greased baking sheet, making high sides.

Spread the filling on top and bake for 45 minutes at 190°C.

So, to prepare puff pastries with mushrooms we will need:

Puff pastry – 500 grams (2 sheets per package)

Mushrooms – 450 grams

One large onion

Milk – 0.5 cups

Cheese – 100 grams (I used Tilsiter, but I think you can experiment with other types, the main condition is the ability to melt)

Egg yolk for coating

Flour for sprinkling

First you need to cook the mushrooms. I only had frozen forest champignons. In my rating, these mushrooms take third place after porcini and obabok, for their amazing taste and amazing mushroom aroma. Many mushroom pickers ignore the forest champignon, perhaps because it looks like a toadstool, but if you know how to distinguish edible champignons from their poisonous relatives, then you can pick a whole basket from one clearing, since they grow in quite large families. There is only one condition: when processing forest champignons, you need to remove the skin from the cap, then you can do whatever you want with them - fry, stew, boil, freeze and, of course, make puff pastries with mushrooms.

My mushrooms were already peeled, so I gave them the opportunity to thaw a little and added them to the diced onions fried in vegetable oil. Now you need to simmer the mushrooms and onions until the liquid evaporates. Then add salt, pepper and milk. Next, simmer for some more time until you obtain a mushroom mass with a consistency suitable for filling pies.


On a table sprinkled with flour, roll out the thawed dough into a square, 0.5 - 0.7 centimeters thick, and cut into four strips. Each strip, in turn, is cut into four squares, and each square is cut diagonally.



Place 1/4 teaspoon of mushrooms in the middle of each triangle (more is possible in some places, it all depends on the size of the dough piece).

Place cheese cut into squares, 0.5 centimeters thick, on top of the mushrooms. The corners of the cheese squares are directed towards the sides of the dough triangles.

We form the pies as shown in the photo. Be sure to make “tails”, so the pie will not lose its shape during baking, and these “tails” look quite nice - the pie looks like either a bird or a kite.

You can try a different form. But here you need to grease the corners with yolk mixture (see below for details), otherwise the shape will not be preserved during baking.




Add a tablespoon of water to the egg yolk, shake and coat our pies with this mixture, place them on a dry baking sheet and place in a preheated oven. The oven temperature should be 180 degrees.


After 20 minutes, we take out our wonderful ones and take a sample.

Step 1: Prepare the mushrooms.

Fresh mushrooms should be soaked for 40 minutes – 1 hour in cold water. Then rinse them, clean if necessary, and rinse again, then dry them with a towel. Chop the mushrooms finely or coarsely, as you like (the smaller you chop, the faster they will fry). Pour sunflower oil into a hot frying pan, heat it a little and place the prepared mushrooms on the frying pan. They need to be fried until almost done ( 10 minutes).

Step 2: Fry the mushrooms with onions and cream.

Peel the onion, wash and chop very finely. When the mushrooms are almost ready and when the liquid has evaporated, add the onion to the pan. Stir all this well, cover and fry for a few more minutes until the onion is soft. Add cream to the resulting mass, stir well again with a wooden spatula and simmer covered for 10 minutes. Wash the egg, break it into an egg separator installed on a glass, separate the yolk from the white.

Step 3: Add cheese and herbs to the mushrooms.

Grate the cheese on a fine or coarse grater, rinse the parsley in cold running water, then pour over hot water heated in a kettle, this will give the parsley a bright green color and a rich aroma. Chop the greens very finely with a sharp knife. Add cheese, salt, pepper to the mushrooms with cream and wait until all the liquid has evaporated. Then add the chopped herbs and stir, turn off the heat and cover with a lid.

Step 4: Cut the puff pastry into squares and form puff pastries.

To save time, I cooked from pre-prepared puff pastry. The recipe for making it is quite simple. And if you have time, why not make it yourself?! Place the finished layer of dough on the table, roll it out a little with a rolling pin, if necessary, cut it into squares measuring about 6x6 cm. Place one tablespoon of filling on each square. Fold the dough squares with filling into triangles, as shown in the photo.

Step 5: Bake the puff pastries.

Place the baking sheet in the refrigerator for a few minutes, preheat the oven to 180 degrees, grease the baking sheet with a piece of vegetable oil or place baking paper on it. Place the puff pastries on a baking sheet, brush them with egg white using a brush and sprinkle with sesame seeds. They must be baked for at least 20 – 25 minutes.

Step 6: Serve the mushroom puffs.

Mushroom puffs are served not only for breakfast, but also as a second course for lunch or dessert. Place the puff pastries on a flat dish or in a basket lined with a towel. Puff pastries with mushrooms will be an excellent snack for alcoholic drinks, as they are very filling and high in calories. Enjoy your meal!

If there is more filling than dough, it can be served as a side dish for fish, meat or other dish.

You don’t have to sprinkle the puff pastries with sesame seeds or sprinkle them with cumin instead.

It’s better, of course, to make your own puff pastry. To do this you will need 2 cups of flour, a pack of butter, ? glasses of boiled water and? teaspoon salt. All this needs to be mixed, then kneaded, rolled out and placed in the refrigerator for a while.

Today I suggest making pies with mushrooms from puff pastry. It takes very little time to prepare, and the result is ruddy, delicious puff pastries with mushrooms on the table.

Let's prepare the products according to the list.

You can use fresh or frozen mushrooms for the filling. Thaw frozen mushrooms in advance. Pre-boil fresh wild mushrooms for 10-15 minutes.

Finely chop the mushrooms and fry in a heated frying pan until the liquid evaporates, about 4-5 minutes.

Add the onion chopped into small cubes. Fry over low heat until the onion is soft, about 4-5 minutes.

Salt and pepper to taste. Add finely chopped herbs and sour cream, stir. Warm over low heat for 1-2 minutes, stirring. Remove from heat and cool.

Thaw the finished puff pastry.

Lightly sprinkle the work surface with flour. Roll out the layer of puff pastry to a thickness of 2 mm, measuring approximately 40 by 20 cm. Then cut into 4 identical rectangles.

Lubricate each piece around the edges with egg white. Place 1 tbsp on one side. mushroom filling and cover with the other side.

Using a fork, press the edges of the workpiece well. The pies can be “fastened” with a fork on one edge, as in the photo on the left, or on three sides, as in the photo on the right.

From the remaining layer of dough we make pies in the same way.

Pour a little water or milk into the yolk, mix and grease the surface of the pies. Sprinkle sesame seeds on top if desired. On the pies, “fastened” on 3 sides, we make several punctures with a fork to allow steam to escape.

Place the baking sheet in an oven preheated to 200 degrees and bake until golden brown.
