A healthy, real curd mass contains the most cottage cheese, a little less butter, and even less sugar. These are the products we will be using today. Shelf life of real curd mass, incl. and the one you cook is 72 hours.

Then add cottage cheese to the butter and beat everything again.




Put sour cream, sugar and whisk again. Now you need to beat the cottage cheese for at least 7-10 minutes to break up all its grains and sugar.










Tie the cheesecloth in a knot and hang the cottage cheese in a way convenient for you so that excess liquid (whey) flows out of it. The time for this process may take different for everyone, depending on the consistency of the cottage cheese. But I think that one hour will be enough for any cottage cheese.




After this time, transfer the cheese mass to a storage container and send it to the refrigerator, and if desired, put it on a plate and use it with fresh milk or tea.

How to quickly cook curd mass. Soften the butter, grind with powdered sugar, adding also vanillin, beat into a fluffy cream, without stopping beating in portions, add grated cottage cheese. Pour the mixture into a mold and refrigerate.

Recipe for sweet cottage cheese mass with raisins

You will need: 500 g of cottage cheese, 200 g of sour cream, 150 g of sugar, 100 g of raisins and butter, 2 eggs, vanillin.

How to cook cottage cheese mass with raisins. Twist the cottage cheese in a meat grinder, put it in a saucepan, beat in the eggs, grind, adding butter and sour cream, until smooth. Heat the mixture, but do not bring to a boil, remove from the stove, put the pan in an ice water bath, stir until the mixture cools. Pour sugar into the mixture, add the soaked raisins and vanillin, mix, put the mixture on a dish and put it under a press so that the whey comes out.

Recipe for salted curd mass with cumin, dill and pepper

You will need: 450 g of cottage cheese, allspice, dill, cumin, salt.

How to cook unsweetened curd mass. Rub cottage cheese, salt, add allspice, chopped dill and cumin, mix until smooth. Serve with sandwiches.

You will need: 400 g of cottage cheese, 4 eggs, ½ cup of sour cream and sugar, 5 tbsp. raisins, 3 tbsp. butter, vanilla, salt.

How to cook boiled curd mass. Rub cottage cheese, add butter, sour cream, sugar and a pinch of salt, mix, beat in eggs and add raisins, mix again and put in a saucepan. With continuous stirring, heat until boiling, but do not boil the mass, but immediately remove the pan from the stove. Cool the mixture in a cold water bath while continuing to stir.

  • If the cottage cheese used to prepare the curd mass is low-fat, and according to the recipe, fatty is needed, then in such a situation you can find an easy solution - add 100 g of butter for every 450 g of cottage cheese.
  • One of the options for standard proportions for the preparation of any sweet curd mass: for every 500 g of cottage cheese, 2-3 egg yolks and 50-70 ml of milk. First, milk and yolks are added to the curd, then all this is whipped with a mixer at low speed until smooth, then additional ingredients are added.
  • To make the mass sweet, but not too high-calorie, sugar can be replaced with liquid linden honey.
  • It is better not to add more than 3 additives to any curd mass at the same time - one of the flavors will surely kill the others. Large dried fruits (dried apricots, prunes) are cut before being added to the curd mass, raisins, dried cranberries and other medium-sized berries are left whole. You need to mix them into the cottage cheese last, without resorting to the help of kitchen appliances.
  • When preparing a curd mass with fresh or frozen berries, they must first be sprinkled with sugar, and the juice that has stood out must be drained.   • Rub the cottage cheese through a sieve.
  • Add sugar and sour cream. Beat with a mixer.
  • Pour in the vanillin, stir the mass again, at this stage you can also use the help of kitchen appliances.

It remains to shift the curd mass into a vase and serve. According to this recipe, it turns out tender, light.

Curd mass with egg

  • cottage cheese - 0.25 kg;
  • sugar - 20–40 g;
  • chicken egg - 1 pc.;
  • vanillin - 1 g.

Cooking method:

  • Suspend cottage cheese in cheesecloth over a saucepan for half an hour to separate excess whey.
  • Rub the cottage cheese through a sieve.

  • cottage cheese - 0.5 kg;
  • butter - 100 g;
  • powdered sugar or fine sugar - 100 g;
  • vanillin - 2 g.

Cooking method:

  • Cottage cheese to give it a smoother consistency, wipe through a sieve or turn through a meat grinder, temporarily set aside.
  • Remove the butter from the refrigerator in advance so that it softens by the time the curd mass is cooked.

  • cottage cheese - 0.5 kg;
  • fine sugar - 100 g;
  • vanilla sugar - 20 g;
  • raisins - 100 g;
  • salt - a pinch;
  • butter - 80 g;
  • sour cream - 60 ml.

Cooking method:

  • Pour boiling water over raisins. After 15 minutes, drain the water, squeeze the raisins, let it dry.
  • Remove butter from refrigerator to soften.
  • Rub the cottage cheese through a sieve and divide into three parts.
  • Beat the butter with a mixer until it turns white.
  • Add sugar, regular and vanilla, and salt to the butter. Whisk well.
  • In a container with oil, put one part of the cottage cheese and a spoonful (20 ml) of sour cream.
  • Beat everything together with a mixer until a homogeneous composition is obtained.
  • Add the second part of the cottage cheese and a spoonful of sour cream, beat.
  • Enter the remaining cottage cheese and sour cream, mix with a blender or mixer.
  • Pour in the raisins. Stir the curd mass with a spatula, trying to distribute it evenly.

The finished mass needs to be cooled, after which it can be served at the table. With raisins, you can make any curd mass, cooked with sour cream, eggs, and butter. It is only important to take into account that raisins are sweet, and so that the mass does not turn out cloying, it is worth putting a little less sugar in it than when cooking it without raisins.

Curd mass with cherries

  • cottage cheese - 0.25 kg;
  • sour cream - 50 ml;
  • butter - 50 g;
  • fresh cherries (pitted) - 50 g;
  • sugar - 50 g.

Cooking method:

  • Wash the cherry, let it dry. Remove the seeds from the berries, sprinkle them with a spoonful of sugar, leave for 10-20 minutes.
  • Beat the softened butter with the remaining sugar.
  • Add sour cream and cottage cheese rubbed through a sieve to the butter.
  • Whip the butter together with cottage cheese and sour cream.
  • Drain the cherry juice, put the cherry in the curd mass, mix.
