How to make tubules with condensed milk. How to put condensed milk in wafer rolls

Arriving once again to visit my parents with my children, I found a waffle iron in one of the many lockers. Judging by the documents preserved in the box, in next year a quarter of a century will “knock” a waffle iron! The surging memories from childhood about crispy sweet wafer rolls with condensed milk inside made me wash the machine of old fat and start cooking. There were several recipes in the instructions for the waffle iron, but there was also a greasy sheet with a recipe, that's it, according to which waffles were prepared in my family.

Only this time I decided to replace the water with milk, however, only ghee was available, and the filling was made from cream with boiled condensed milk and butter.

So, for making crispy wafers with condensed milk filling I needed:

  • 100 g of spread, margarine was not in the nearest store;
  • half cups of sugar- sand;
  • 2 eggs;
  • 1 glass of premium wheat flour;
  • about half a glass of milk;
  • 100 g each butter and boiled condensed milk.

IN detailed instructions cooking waffles out of the box, it was said that all products for kneading dough should be the same room temperature, respectively, at least half an hour before cooking, they must be removed from the refrigerator.

How to cook wafer rolls with condensed milk:

1. The spread was rubbed white with sugar with a spoon.

2. I broke the eggs into the oil mixture and beat everything with a whisk to get a homogeneous mass.

3. I sifted a glass of flour there, again beat everything with a whisk, rather I didn’t even beat it, but simply stirred it with a whisk until there were no lumps left in the dough.

4. Further, according to the recipe, it was required to add liquids to the consistency of sour cream. I didn’t have clear memories of the consistency of sour cream during my childhood, I added milk intuitively, it took me half a glass of milk. As a result, the dough turned out approximately like pancakes. Now the test needs to stand up and “disperse”.

5. At this time, I took up the preparation of the cream. Soft butter with boiled condensed milk, I just stirred very well with a spoon. At the same time, of course, she noted in an old way that condensed milk is not the same now ... She put the cream in the refrigerator.

6. Before baking the first waffle, it was recommended to grease the surface of the waffle iron with oil, I greased it with a little vegetable oil.

7. Turned on the waffle iron at medium power and waited until steam came out of it (as advised in the instructions).
8. As can be seen from the recipe on the leaflet, it was necessary to lay out the dough with some kind of spoon from the set, but, of course, this set was no longer preserved. Practice has shown that for baking one waffle, you need to spread the dough with a volume of about one and a half tablespoons, so it is better to find a scoop of just that size.

9. She closed the lid of the waffle iron, but did not press it with force, otherwise it would not have turned out to be waffles, but a thin crumbly cobweb. It took about two minutes to bake one waffle (at first you can spy on them a little, then everything is cooked on the machine).

10. I picked up the edge of the waffle with a small knife and removed it from the surface, put the cake on the table and rolled it up along the long side. The whole procedure was carried out by hand, it is quite tolerable.

11. Next, I baked the waffles until the dough ran out. The photo shows about 2/3 of what happened, since the first wafer rolls were mercilessly eaten by children.

12. It's time to fill the wafer rolls with condensed milk cream. Parents didn’t have a confectionery syringe, therefore, in the old fashioned way, I just put the cream in a bag and cut off a small hole in the corner of the bag. Cream was squeezed into each tube on both sides.

Wafer rolls ready with condensed milk! They turned out exactly the way I ate as a child - indescribably delicious. I must say that while drinking tea with these waffles, the part of the brain responsible for the reasonable consumption of sweets completely turned off, I could not stop ...
I'm sure that such the recipe will do and for modern waffle irons. I wish you a pleasant family tea party.

It is important to consider that the wafer rolls should be thin. Is not Viennese waffles, which are much thicker - so this waffle iron model will not work. Heat well, grease the frying surface a little with vegetable oil - this needs to be done only once, before starting work. There is no need to constantly lubricate the waffle iron, as the dough contains fat (butter or margarine). When the waffle iron heats up well, pour a tablespoon of dough (without top) in the central part. Close the lid tightly so that the dough is evenly distributed over the surface. Cook waffle layers until golden brown.

8. Using a knife, remove the finished “cake” onto a dish or tray, and while it is still hot, roll it into a tube (with a hole inside).

9. Prepare the rest of the wafer rolls in the same way until you have finished all the dough.

10. Prepare the cream. To do this, beat with a mixer butter at room temperature with boiled condensed milk until smooth. Place the resulting cream in the refrigerator for 30 minutes, then fill the cooled tubes with it. Easier to fill wafer tubes confectionery syringe or a bag with a long nozzle (as for eclairs). Tip: the cream is much tastier and thicker if you add ground walnuts. You can also use whipped cream as a cream or Italian meringue(custard protein cream).

Boiled condensed milk for cream can be prepared independently. tin can With regular product fill with water and send to the stove. After boiling, cook for 1.5-2 hours, making sure that the jar is always covered with liquid.

Classic wafer rolls with condensed milk

Exist different variations tube dough recipes, but classic dessert involves the use of a sufficiently liquid composition on milk, which spreads well over the waffle iron.

The proportions of the ingredients in this case will be as follows:

  • 3 eggs;
  • 180 g of sugar;
  • 200 g margarine;
  • 300 ml of milk;
  • 320 g flour;
  • 1.5 g salt;
  • 2 g of soda;
  • 2 g vanillin.

Progress:

  1. Melt margarine to liquid state and let it cool down a bit. Meanwhile, whisk in lush mass eggs with sugar. Next, combine both compositions.
  2. Stir in the flour combined with the rest of the dry ingredients. Dilute the resulting thick mixture to desired consistency milk.
  3. Brush the surface of the hot waffle iron with a brush dipped in vegetable oil, bake the waffles. While they are still hot, wrap them in tubules.

For a serving for eighteen tubes you will need:

  • 500 g of ready-made puff pastry;
  • 1 yolk;
  • vegetable oil for greasing the cone molds and flour for dusting.

How to bake delicious tubes:

  1. Defrost the dough at room temperature, roll it out a little, sprinkle the table with flour, and then cut the rolled out layer into strips a centimeter thick.
  2. Lubricate the cones for forming tubes with oil and wrap with strips of puff pastry slightly overlapping. Lay the blanks on a parchment-lined baking sheet at a distance from each other.
  3. Lubricate the top of the tubes with beaten yolk and bake in an oven preheated to 200 degrees for about 15-20 minutes. Finished goods remove from cones, cool and fill with cream.

If in the arsenal kitchen utensils No special devices for decorating tubes, they can be made independently from baking paper. Roll a piece of baking paper into a cone so that it holds its shape. Put crumpled foil or parchment in the middle, then wrap the workpiece with strips of dough.

Cooking in an electric waffle iron

The electric waffle iron is suitable for baking waffle rolls from various kinds dough: classic on milk, margarine, sour cream, kefir or mayonnaise. IN last version The baked goods are crispy and sweet.

White Sauce Dough Ingredients:

  • 4 eggs;
  • 160 g of sugar;
  • 100 g butter;
  • 200 g of mayonnaise;
  • 240 g flour;
  • 3 g salt;
  • 1.5 g vanillin.

Cooking tubes in a waffle iron step by step:

  1. Eggs diligently rub together with sugar. Then add melted butter and mayonnaise. Rotational movements of the whisk to achieve uniformity of the mass.
  2. Lastly, add the flour, sifted with salt and vanilla, to the resulting mass, mix everything.
  3. Preheat the waffle iron well. Put a tablespoon of dough on the lower baking base, press it with the upper surface, bake for 3-4 minutes, depending on the power of the device.
  4. Get it hot cake and quickly roll into a tube. When all the hollow blanks are baked and cooled down, fill them with boiled condensed milk cream.

An important point: if the waffle iron is an old (Soviet) model, then before baking the first cake, it must be greased with oil.

Modern devices, as a rule, have a non-stick coating, so it is not necessary to treat them with grease.

For twenty-five crispy tubes you will need:

  • 3 eggs (category C0);
  • 100 g butter;
  • 100 g of sugar;
  • 60 g flour;
  • 60 g starch.
  1. Butter softened to a consistency soft plasticine, grind with sugar. Stir the eggs into the sweet mixture one at a time.
  2. When the composition becomes homogeneous, add flour sifted with starch. Carefully stir the mass. It should be thick, like for pancakes.
  3. Bake wafer rolls, using one tablespoon of dough for each portion of the dough. Very carefully, so as not to break the cooled blanks, fill them oil cream on boiled condensed milk.

In order not to burn your hands when folding products into tubes, you can use cotton gloves or, laying out hot billet on a clean cloth towel, roll up the edge of the cloth.

Heavy old-style waffle irons continue to faithfully serve their mistresses. Even having the opportunity to purchase a lighter modern model with a non-stick coating of baking surfaces, home confectioners prefer to bake tubules in proven “Soviet” devices.

The dough for such waffle irons is prepared from next set ingredients:

  • 4 eggs;
  • 200 g of sugar;
  • 200 g margarine (butter);
  • 130 g flour;
  • vanillin to taste.

Sequence of actions:

  1. Whip softened creamy butter with sugar. To make all the crystals dissolve faster, they can be replaced with powder.
  2. Then eggs are introduced one at a time, placing each subsequent one after stirring the previous one.
  3. It remains only to add flour with vanilla, and the dough is ready. The mass is quite thick consistency, but this is not a problem, since heavy baking surfaces will easily flatten it into a thin waffle cake.

The proportions of dough per tube remain the same as in previous recipes, - a tablespoon. Boiled condensed milk, whipped together with soft butter, will be an excellent filling for such baking.

The following table will help determine it:

Simple mathematical calculations will always help you accurately find out the number of calories “eaten” while drinking tea with your favorite dessert.
