4. When serving, you can sprinkle the pancakes with powdered sugar. Or whip egg whites with sugar into a thick foam and serve with this cream. You can also sprinkle with nuts.

Very fluffy pancakes on kefir without eggs

This is a proven recipe, according to which pancakes always turn out very lush. For best results, use a kitchen scale.

Ingredients:

  • kefir - 200 gr.
  • flour - 160 gr.
  • sugar - 1 tsp
  • salt - 1/3 tsp
  • soda - 1/2 tsp without a slide
  • vegetable oil for frying

Cooking:

1. For the best result, you need to keep the kefir warm. To do this, take it out of the refrigerator for 2 hours. If this is not possible, then slightly warm the cold kefir so that it becomes room temperature.

2. Pour kefir into a bowl, add salt and sugar. Stir to dissolve these dry ingredients.

3. Introduce the sifted flour in parts and mix thoroughly. If you add all the flour at once, it will be difficult to mix well. The dough will be quite thick.

4. Lastly, soda is added and the dough is stirred very quickly. If you put soda at the beginning, then almost all of it will be extinguished and when frying, the pancakes will not rise much.

Do not mix the dough for a long time after adding soda. Before frying, the dough is also no longer mixed. This way you keep the necessary bubbles that will rise the dough when baking.

5. Pour a small amount of vegetable oil into the pan. You can spread the dough only in well-heated oil. Bake over low heat so that the pancakes are well baked in the middle.

6. When the first side is browned, turn the cake over. It is convenient to do this with a fork or spatula.

7. Such pancakes on kefir are tastiest when hot, piping hot. They are ruddy, soft, lush. It is better to cook a portion of pancakes at a time, especially since knead the dough very quickly to make fresh pastries.

By themselves, these pancakes are not sweet, so you can serve them with jam, condensed milk or honey.

Snack pancakes on kefir with cheese and boiled egg

Fritters don't have to be sweet like the traditional version. Fritters can be made with different savory toppings, making them more nutritious. In this recipe, hard cheese and boiled eggs are added to the dough, which increases the amount of protein in the finished product. As a result, pancakes are more satisfying. Ingredients:

  • kefir - 0.5 l
  • eggs - 5 pcs.
  • hard cheese (Russian type) - 80 gr.
  • sugar - 0.5 tsp

How to make pancakes with cheese.

1. Kefir is better to be at room temperature. Pour all the kefir into the bowl and beat 3 raw eggs into it. The other two eggs need to be hard-boiled in advance (cook 7 minutes after boiling).

2. Pour salt and sugar into kefir. Stir the kefir with eggs with a fork or whisk until smooth.

3. Pour a glass of sifted flour into the dough.

Flour can only be wheat, or you can diversify the taste and replace 1/3 of the flour with buckwheat, corn or oatmeal.

4. Stir the dough well so that there are no lumps of flour in it. It is better to work with a whisk to break up all the clots of flour. The finished dough will not be very thick, it will drain from the spoon with a heavy ribbon.

5. Pour sunflower oil into the dough and stir again. With oil, the dough will not stick to the pan. Leave the dough to rest a little on the table.

6. Prepare the filling. Cheese (hard or semi-hard) grate on a fine grater and put in the dough.

7. Finely chop the selected greens (very little) and also send them to the dough. Stir.

8. Grate two boiled eggs on a coarse grater directly into the dough and mix.

If you want lush pancakes, add 0.5 tsp to the dough before frying. soda. Wait one minute for the soda to react with the kefir.

9. Heat up a heavy-bottomed frying pan. Brush with vegetable oil. It is not necessary to pour a lot of oil so that the pancakes float. You need a little oil for frying. The pan must be hot for the dough to set immediately. You need to fry on medium heat. If the pancakes burn, reduce the heat.

This is another appetizer version of this dish. The filling is sausage and cheese. The result is hot sandwiches or instant mini-pizzas. This dish will please the whole family. Only choose high-quality sausage, preferably made according to GOST and using category A meat.

Ingredients:

  • kefir - 400 ml
  • eggs - 1 pc.
  • flour - 7-8 tbsp.
  • sausage - 100 gr.
  • hard cheese - 100 gr.
  • soda - 1 tsp
  • salt, sugar - to taste
  • vegetable oil - 2 tbsp. in the dough + for frying

Cooking method:

1. Break the egg into a bowl, add salt and sugar. Beat with a whisk until light foam.

2. Pour kefir into the egg, add soda and stir.

3. Grate sausage and cheese on a coarse grater, add to the dough. Also pour 2 tablespoons of sunflower or olive oil. Stir until smooth.

4. It remains to add flour. As with any pastry, the flour must be sifted.

  • pumpkin - 300 gr. (in a purified form)
  • apples - 200 gr.
  • flour - 400 gr.
  • kefir - 1 tbsp. (250 ml)
  • sugar - 5-6 tbsp. (taste)
  • egg - 1 pc.
  • vanilla sugar - 1 sachet
  • soda - 1 tsp
  • salt - a pinch
  • cinnamon - 1 tsp

Cooking:

1. Peel the pumpkin, cut into slices and grate on a fine grater. If there is a blender, then it is better to grind in it, cutting the pumpkin into pieces.

2. Grate the apple on a fine grater and put it on the pumpkin.

3. Pour kefir into this fruit and vegetable mixture and beat in an egg. Now mix everything well.

4. Now add sugar, salt, cinnamon, vanilla sugar. Sift the flour and knead the dough. At the end, add soda, mix and let the dough stand and rest for a while.

The amount of flour can be different for everyone. Focus on the consistency of the dough. It should be thick, very heavy drops fall from a spoon.

5. Fry the pumpkin fritters as usual: in well-heated oil, which does not need to be poured too much, over medium heat until golden brown.

Lush pancakes are obtained, slightly larger in size than in the classic version. The most important difference between pancakes is that they are baked in a dry frying pan, so they are not greasy.

Ingredients:

  • kefir - 0.5 l
  • eggs - 2 pcs.
  • sugar - 3 tbsp.
  • vegetable oil - 2 tbsp.
  • vanilla sugar - 1 pack
  • salt - 0.5 tsp
  • soda - 1 tsp
  • flour - 2 tbsp.

How to cook pancakes on kefir:

1. The dough is prepared very simply and quickly. Beat eggs into a deep bowl, add sugar, salt, vanilla sugar and stir with a whisk.

2. Pour in kefir and stir again.

3.Pour vegetable oil, mix.

4. In a separate bowl, sift the flour and combine it with a teaspoon of soda. Stir these dry ingredients. When soda is added to flour, it is not immediately extinguished with kefir and pancakes are more fluffy, do not float. If the soda is immediately extinguished in kefir, then there will not be enough “power” to raise the pancakes.

5. Add flour mixed with soda to the dough. Mix everything well with a whisk so that there are no lumps left. You can use not a manual whisk, but take a nozzle for a blender.

6. The finished dough is obtained in consistency, like thick sour cream, it flows down from the whisk with a wide ribbon.

7. A frying pan must be taken with a non-stick coating, because it will not be greased. Heat up the pan sufficiently. The dough will stick to the cold surface and the pancake will be spoiled. We'll have to wash the pan and start all over again. The dough is poured with a ladle into the middle of the pan. To evenly distribute it, you can shake the pan a little. It is not necessary to smear the dough on the surface. Make the heating medium or even slightly less than medium.

8. When a lot of bursting bubbles begin to appear on the surface, the pancake pancakes can be turned over.

9. Thus, you need to fry all the pancakes. They rise well.

If the pan is with a thick bottom, then the pancakes will bake well inside. If you take it with a thin bottom, then the bottom will burn, and the middle will remain raw.

2. Pour sugar, salt and sifted flour into warmed kefir.

3. Stir with a whisk to make the dough smooth and uniform. The consistency should be like thick sour cream.

4. Pour soda into a small bowl and pour a small amount of boiling water over it. The water should just cover the soda. Pour soda with water into the dough and slowly mix everything.

5. Now the dough is ready, you can’t mix it anymore, otherwise the splendor will disappear.

6. Start frying. Pour sunflower oil into the pan so that it covers the bottom, no more is needed. Heat up the oil well. The baking soda, when it gets into the dough, will begin to create bubbles. It is important not to burst these bubbles by stirring. Carefully scoop up the batter with a spoon and drop into the skillet. For convenience, you can work with two spoons - pick up the dough with one, help transfer it to the pan with the other.

7. Fry the pancakes over medium heat for about 3 minutes on one side until golden brown. Then turn over. Place the finished pastry on a paper towel to absorb excess fat.

8. Since there is little sugar in the dough, such pancakes are served with jam or honey. They are crispy on the outside and soft and light on the inside. Delicious. After cooling, these pancakes will not fall, but remain lush.

Oatmeal pancakes like grandma's

If you replace part of the flour with crushed oatmeal, you will get not only delicious pastries, but also healthy ones. Of course, if you wish, you can make pancakes only from flour. Then they will be denser and taller. But with oatmeal, you still get more benefits. Flakes must first be ground in a blender. Or take ready-made oatmeal. You can also use buckwheat flour.

Ingredients:

  • kefir - 0.5 l
  • eggs - 2 pcs.
  • salt - 1/3 tsp
  • sugar - 2 tbsp. with a slide
  • vanillin - on the tip of a knife
  • vegetable oil - 2 tbsp.
  • soda - 1 tsp
  • oatmeal or flour - 1 tbsp.
  • flour - 2 tbsp.

Products must be at room temperature.

Cooking:

1. Sift two cups of flour into a separate bowl. Grind oatmeal and add to flour. Also add soda. Stir these dry ingredients.

2. Beat the eggs into another bowl, stir them a little with a whisk. Add sugar and salt, stir again. Pour kefir and put vanillin. Stir until sugar dissolves.

3.Pour vegetable oil into the resulting mixture.

4. It remains to knead the dough. Pour the flour and soda mixture in two stages and stir. The dough should be smooth, without lumps, thick.

5. You need to fry these pancakes, as usual, in hot oil. Dough with the addition of oatmeal will be less viscous, unlike a dough with wheat only. Spoon the batter into the pan and bake until browned on both sides.

If you want even more fluffy pancakes, add 2-3 tbsp. flour.

8. Ready pancakes are porous inside, airy and fluffy. Very tasty, satisfying and healthy.

Small pieces of fruit or berries can be added to such pancakes. For example, grate an apple (you can also cut it into slices) or add mashed banana. It will be even healthier and tastier. This dough is a base with which you can experiment.

Lush pancakes on kefir with semolina

As you know, flour in baking can be partially replaced with semolina. This recipe also uses it. Fritters are also lush and tender.

Ingredients:

  • kefir 2.5% - 500 ml
  • semolina - 4 tbsp.
  • sugar - 4 tbsp.
  • salt - 0.5 tsp
  • soda - 1 tsp
  • eggs - 2 pcs.
  • flour - 14-19 tablespoons (you need to look at the consistency)
  • vanillin - on the tip of a knife

Cooking:

1. Pour kefir at room temperature into a bowl. Sprinkle sugar, salt and soda. Stir.

2. Beat in two eggs and add vanilla. Stir again.

3. Add 4 tablespoons of semolina, stir.

4. It remains to add flour. Sift the flour in parts and stir with kefir. The amount of flour for everyone can be different. The main thing is the thick consistency of the dough. The dough should not spread over the pan like pancakes.

5. Leave the finished dough for 15 minutes so that the semolina swells.

6. Fry pancakes according to the classics: over low heat in hot oil until golden brown. To make these pancakes bake better in the middle, fry them under the lid.

7. That's all. Fritters are quite sweet, so they are best eaten with sour cream. If you serve them with jam, it is better to reduce the amount of sugar in the dough. As you can see in the photo, these pancakes are very fluffy, porous and soft.

Today I will tell you how to cook lush pancakes on kefir, a step-by-step recipe, with a photo, as you like. And he's just bombastic! Since I found out this recipe, I have been baking only such ones, all the others have been forgotten as unnecessary.

Lush pancakes (for 10-12 pieces):

  • Wheat flour - 150 g
  • Sour kefir (three days old) - 200 ml. Can be replaced with curdled milk, natural yogurt
  • Chicken egg - 1 pc.
  • Melted butter - 25-30 g (approximately 2 tablespoons)
  • Sugar sand - 2 tbsp. l.
  • Salt - a pinch
  • Baking soda - 1/2 tsp
  • Baking powder - 1 tsp
  • Vanilla extract (optional) - 1 tsp
  • Vegetable oil for frying

How to cook delicious and fluffy pancakes:

We break 1 chicken egg into a bowl (I have a large one, CO category). We fall asleep 2 tbsp. spoons of sugar. We stir.

Add 200 ml of sour kefir. If kefir is fresh, with today's production date, let it brew. The next day, it can be called medium in strength, and on the third day, kefir will be ideal for making lush pancakes. The content of lactic acid bacteria in it is large, they will raise the dough. Such sour kefir is called strong.

If you are unbearable, you can cook pancakes on both weak and medium kefir. But please promise me that you will also someday bake on strong kefir 3 days (or more) ago. The difference will be noticeable!

A substitute for kefir can be sour buttermilk, sour whey, natural yogurt or curdled milk.

How to make curdled milk: leave the milk warm for 8-10 hours, then bring to the desired acid in the refrigerator (3-5 hours). Such a "special operation" is called samokvass.

So, 200 ml. Pour yogurt into a stirred egg with sugar. Kefir should be warm, but not hot! You can heat it on the stove (avoid boiling) or in the microwave in short pulses of 20 seconds, pulling it out and stirring it for more uniform heating.

If you dip your finger into kefir, it should be pleasantly hot, but not scalding (eggs can curl in hot kefir).

Melt the butter (2 tablespoons) and cool also to t 50 C or less. You can not heat the oil, but add well-softened.

In this recipe, you can replace the butter with an odorless vegetable oil, but with butter the taste is more delicate.

If you feel like adding vanilla extract to the batter, do so now, right after the butter.

Mix all dry ingredients in a separate bowl. There will be flour (150 g), baking powder (1 teaspoon), soda (0.5 teaspoon), salt (1/8 teaspoon, a pinch). First, we sift everything, then we take a spatula / whisk in our hands and begin to stir.

Do you want fluffy pancakes to taste like soda? No. And the situation when one pancake rises, and the other is thin and flat? I'm sure you don't want to. So, patiently mix all the dry ingredients: the more evenly the soda and baking powder combine with the flour, the more uniform the dough will be. Stirred? Great. Pancakes on kefir will definitely turn out lush and beautiful.

Combine dry and liquid ingredients together. But stir very carefully! Literally, in order for all the components to connect with each other, it is not necessary to achieve complete uniformity!

I think that in this moment the main difference between the recipe and all the others. Do you remember the expression "dough for pancakes"? Liquid dough with small lumps? Now look at the photo, what kind of dough for pancakes should turn out this time. Also with lumps, but much thicker than usual. The consistency of the dough is viscous, the lumps are large. A dough with such a structure will never spread in a pan (it is too thick for this). At the same time, the dough looks tender and lush, not at all heavy.

After kneading, wrap the bowl with cling film or cover with a towel. Place in a warm, draft-free place for 20-30 minutes.

What is happening at this time? Baking soda and baking powder react with kefir (curdled milk), as a result, carbon dioxide is released. It breaks the lumps of flour literally from the inside.

Thus, magic bubbles make the dough for pancakes loose and fluffy.

If you lift the dough on a spoon, it slowly creeps down from it. If you have achieved this consistency, everything goes according to plan.

Meanwhile, pour vegetable oil into a frying pan (choose one with a lid and preferably one with a thick bottom).

I use this mold so that the pancakes turn out to be an even round shape. But, of course, it is not at all necessary to resort to it.

To lay out a thick dough, we need a glass of warm water and a spoon. Before you collect the dough, dip the spoon into the water, then collect the dough and put it in the heated oil. For a large pancake like mine, you will need a few tablespoons (2-3) per serving.

Fry for 1-1.5 minutes until golden brown on the bottom, then cover with a lid and reduce the heat.

For small fritters that don't use a mold, I use a heaping spoonful of batter. It doesn’t matter what form of pancake you are frying, be sure to wait until the bottom is golden brown. Then turn over and cover (reduce heat to low).

Under the lid, simmer the pancakes for another 2 minutes so that they are thoroughly baked. As for the cover - there are two ways. If you want, you can leave it uncovered, but in this case, pour in more vegetable oil for frying so that the pancakes are half immersed in oil and bake better, in this case, make a small fire from the very beginning. If you cover, you can pour oil into a smaller pan, it will take a little more time to cook, but the resulting pancakes will not be as greasy as in the first version.

Many complain that condensation forms on the inside of the lid - small droplets - which drip into the oil and fireworks begin. I keep paper towels in the kitchen just in case. As soon as I see droplets, I urgently remove the lid and quickly remove the condensate with a paper towel. Each pan takes one such piece of towel, but the result of baking under the lid is always excellent!

Pancakes under the lid are warm on all sides, perfectly baked, rise high.

In addition, if a “barrel” of dough suddenly forms in the pancake (this rarely happens, but it happens if you put too much dough on one serving), you can let the pancakes stand in the turned off pan under the lid. This barrel in the heat remaining in the pan will "reach" to readiness.

Here in the photo I have just such a "hooligan".

I fried until the end (until the bottom was browned), then left the pancakes in a hot pan with a lid.

You can see in the photo: there is no test that came out.

We pry with a fork and remove our delicious homemade breakfast from the pan.
