Cooking dough. We take soft curd, put in a bowl. If you have dry cottage cheese, then you can add a couple of tablespoons of yogurt or low-fat sour cream and beat in a blender. Add sugar as desired. I did not add, as the filling is quite sweet. Gradually add flour (it is better to sift it through a sieve). Knead the dough (you may need a little more or a little less flour. It all depends on the curd).
We divide the dough into 2 parts. We roll each part into a rectangle (I have about 30x20 cm) 2-3 mm thick. Rolling out the dough is not difficult, the main thing is to sprinkle well with flour on one and the other side. It is also better to sprinkle the rolling pin with flour.
We spread half of the filling on the rolled out dough, not reaching the edges of 0.5 cm. We wrap it in a roll. If the dough sticks to the table, then we help with a silicone stirrer (it's not scary if it breaks, carefully glue it together). We wrap the roll in a film and put it in the freezer for 15-20 (at least) minutes.
During this time, we do everything too with another piece of dough. Then, line a baking sheet with parchment. We heat the oven to 200 C degrees.
We take out the rolls from the freezer and cut into circles 1 cm thick (I got 27 pieces). Lay out on a baking sheet. You can spread the cookies at a small distance from each other, as the cookies will not increase in size.
Bake for 20-25 minutes until golden brown.
