You can cook a pink salmon pie with both canned and fresh fish. A pie with canned pink salmon cooks a little faster, but loses in taste and originality. Today I will cook a puff fish pie using red and white fish, namely pink salmon and pollock. Some people think that pollock is not suitable for making fish pies. Yes, if you use only one. But when you combine layers of different fish species with a layer of onions in a fish pie, the pastry turns out to be delicious.

I make a pink salmon pie using two types of dough, the main lower and the top jellied. I always start by preparing the main one, or I take ready-made shortcrust pastry in the freezer. Usually I make it in advance for several pies at once and freeze it in the freezer. But it is mainly suitable for sweet open pies, it makes a particularly good raspberry pie.

The base dough is prepared quite quickly. In a bowl I combine 430 g of flour, 75 g of margarine for baking cut into pieces or grated on coarse grater, one large egg, 95g sour cream 20% fat, a little salt and half a teaspoon of soda.

I begin to knead the dough with a fork, until pieces of margarine are visible.

Then I turn to manual kneading until such a dense bun is formed, as in the photo below. I put the ball from the main dough in plastic bag and put it in the fridge for an hour.

For the pink salmon pie you will need:

Main bottom dough 700g, pink salmon fillet 450g, pollock fillet 450g, onion 3pcs.For the jellied top dough - 2 eggs, 160g sour cream, 2 tablespoons flour, a pinch of salt and soda.

I prepare the jellied dough by combining flour, salt, soda, sour cream and eggs in a bowl.

Mix all the ingredients of the filling until a homogeneous mass is obtained.

Roll out chilled dough with a rolling pin big pancake and transfer to a pan with a diameter of 32 centimeters. Spread evenly throughout the pan and prick the bottom with a fork like this.

Pollack fillet cut into small pieces, salt, pepper, mix and spread the first layer on the main dough, evenly distributing over the entire surface.

I chop the onion medium and shift it in a second even layer on the first row of pollock.

The pink salmon fillet, as well as the pollock fillet, salt, pepper, mix and distribute the third even layer on top of the onion.

I evenly spread the open dough with pouring dough layered cake from pink salmon, so that there are no gaps.

I send the prepared raw fish pie to bake in an oven preheated to 200 degrees for about 45-50 minutes.

After this time, I take the pink salmon pie out of the oven and set it aside to cool. When the fresh salmon fish pie has cooled to warm state you can take it out of the pan. This is done quite easily, since it does not stick to the pan, although it has not been lubricated with anything. The trick here is that the lower main dough is made on margarine and simply cannot stick to the bottom during baking.
