How to make delicious frozen berry pie

  • To defrost berries or not? There are two opinions here, and which one is more correct, I cannot say, since everyone has their own preferences. If the berries are not thawed, but immediately added to the dough, then the cake will turn out to be more juicy. But there is also a risk that the juice will start to flow out of the cake, and it will take a very long time to cook. For example, I always defrost berries and mix them with starch to make a thick mass.
  • Use different berries, mix them with each other. This will allow you to discover new tastes and experiences.
  • In addition to berries, you can add any fresh fruits. Apples, oranges, pears - the choice is wide!

This pie with berries has a truly extraordinary palatability. The delicate airy structure of the dough literally melts in your mouth, and the appearance of this confectionery simply amazing. Bright, juicy, beautiful and delicious cake with frozen berries will certainly allow you to enjoy the tea ceremony.

Such a treat will appeal to those who do not like sugary-sweet pastries. A touch of freshness is given to it by a sour berry, which is generously used for the filling. However, to neutralize this acid, powdered sugar or sugar is still used, the amount of which can be adjusted to your liking. Frozen berries will serve as a filling for our pie. By the way, a good find - after all, fresh berries are available only in the season, and frozen ones, even if you could not freeze them yourself in the summer, can be purchased at any supermarket all year round.

The open pie with berries we will cook from butter-egg dough. The cooking process takes very little time. The main condition is to use softened butter. Then it mixes well with sugar. Instead of butter, you can use margarine or a mixture of both in equal proportions.

Ingredients

Berries (fresh or frozen) - 400 grams;
Flour - 200 grams;
Sugar - 1 cup (200-250 grams);
Powdered sugar for sprinkling - 2 tbsp. spoons;
Eggs - 4 pieces;
Baking powder - 1 teaspoon;
Butter (margarine) - 180-200 grams.

Cooking

In order for the recipe for a pie with frozen berries to be the most successful, it is better to use butter to make the dough. On its basis, it always turns out great pastries. But do not confuse spread and real oil, so look carefully at the packaging before buying this product.

So, grind the softened butter with granulated sugar until white. This is best done with a mixer - so the grains of sugar will “disperse” better, and the consistency will come out more homogeneous.

Next, you need to add to the mass one at a time chicken egg. I advise you to drive it first into a separate bowl and only then send it to total mass to avoid hitting the shell or worse, rotten egg into the dough. Don't forget to keep beating after adding one egg.

Thus, you need to introduce all four eggs into the butter-sugar mixture, constantly beating it with a mixer. The mass is airy, light and without lumps. And if you add yolks instead of eggs, then the dough will turn out even more beautiful and tastier. Yolks can be driven in 5 pieces. And from the remaining proteins, you can always cook a delicious meringue.

The next step is adding flour. In advance, pour a teaspoon of baking powder into the amount of flour we need. Mix and add in portions to the oil mixture. It is important to know that only sifted flour is introduced. This avoids the ingress of impurities into the dough, and with the help of sifting, we enrich the flour with oxygen. Baking powder is always mixed with flour. We continue to beat with a mixer the mass already with flour until we get a thick dough in consistency.

The finished dough can be easily taken with a spoon, and it does not fall off. Since we have a pie with frozen berries, which will definitely give juice when defrosted, you can add not 200 grams of flour to the dough, but 210-220 - look at the eye. This will allow the dough to keep its shape when the juice of the berries gets on it.

Put the finished dough into the form. You can use a silicone container. It does not need to be lubricated with oil. Other forms are best covered with baking paper.

Now let's start preparing the berries. You can use any, fresh or frozen. A pie with frozen berries is no different from baking with fresh fruits. Choose any fruits or berries according to the season. You can mix apples with currants (both red and black, white), plum, cherry plum. Cherries and apricots are also ideal for this pie. Just remember to rinse and lightly dry the berries in advance to prevent excess water get into the dough.

In this berry pie recipe, I added frozen cherry plums. I removed the bones and laid it on the surface of the dough, slightly pressing the filling. There was quite a lot of juice. But he didn't interfere at all. In general, it is best to remove the seeds from any fruit used (of course, the one in which they are). If the berries or fruits are large, you can cut them in half or even into quarters.

We send the blank for the pie to the oven, preheated to 200 degrees. It will take us about 20 minutes to bake.

An open pie with berries can be considered ready when it is reddened. But considering juicy stuffing, which can slightly "slow down" the baking process, it is still worth checking the dough by piercing it with a special wooden stick or match. If it remains dry, without sticky pieces of dough, then everything is ready. We take the cake out of the oven. Let it cool and, separating it from the baking dish, carefully transfer it to a dish. Sprinkle powdered sugar through a strainer or sugar. You can decorate the cake with the remaining berries, but for this purpose it is better to use whole, flawless fruits.

The cake tasted amazing! And what a breathtaking aroma was in the house - not to convey. The pie with frozen berries baked well and delighted our gourmet guests. Hope you enjoy it too.

Happy tea drinking! Olga Kiklyar

Many housewives are faced with the fact that after cooling, the cake stubbornly continues to “sit” in shape. It happened to me too, until I read one tricky way which I share with you.

Before removing the cake from the oven, dampen a large kitchen towel and lay it out on the counter. Take out the cake and place it straight on the towel in the form. Carefully wrap them around the sides, and cover with a dry towel on top and leave for 10-15 minutes. Everything, after the allotted time, your pastries will easily come out of the mold, leaving no trace on the bottom and walls.

In winter and early spring I want so much fresh berries and a pie with frozen currants, raspberries or cherries will be very handy. When excess moisture drains, you can prepare the filling. If you have chosen juicy berries, then it is better to use a little more starch than usual, 25-30 grams. A pie with frozen berries turns out just as good as with fresh ones.

This cake looks delicious, fragrant and extremely tasty. Only when you bake such a cake, you need the cake to become a bright golden color and bake well as a result. After all, the berries can release juice, which will prevent the cake from baking well. Yeast cake with berries is suitable for everyday lunches and dinners, as well as for festive celebrations.

Good afternoon

In our family, I love pastries, especially from shortcrust pastry and with berry filling. So today I want to share with you the recipe. berry pie, which I did the other day for the family.

The pie turned out tender and very tasty... a crispy base and a light, juicy and fragrant filling...

I made a pie great shape, so the number of ingredients is multiplied by 2, but if you make a pie in the usual form, reduce the amount by 2 times.

For the test, we need butter, it is better to take butter, not margarine.
-

-
The oil must be room temperature to make it easier to work with him.

To the oil you need to add 100 g. granulated sugar.
-

-
The rest of the sugar will go to the filling.

Add eggs to bowl with butter and sugar.
-

-
Thoroughly combine the contents until smooth and add flour and baking powder to the bowl.
-

-
It should also be taken into account that more or less flour may be required, it all depends on the quality of the flour.

The dough should be elastic, soft and easy to work with, so it should be well kneaded.
-

-
The dough needs to rest, so I put it in a greased form and send it to the refrigerator for 15 minutes.

By the way, you can divide the dough and make the cake closed, it all depends on tastes and preferences.
-

-
While the dough is resting, you need to take the berries, put them in a saucepan, add the remaining sugar and let the berries and sugar melt.
-

-
It should be remembered that sugar also needs to be added to taste so that the filling is not sour, a lot depends on the berries that you use in the filling. I have a mix of plums, strawberries, currants and cranberries.

To make the filling thick, I add starch to it, which does not give any taste to the berries, it only makes the filling thick.

Starch must first be diluted in water so that there are no lumps.
-

-
And add to the berries. Literally 5-7 minutes and the filling is ready. In general, it takes me no more than 10 minutes to prepare the filling. It is worth remembering that the filling must cool down, it cannot be laid out hot in the form.
-

-
We spread the filling on the dough, which we take out of the refrigerator.
-

-
That's all, the cake can be sent to the oven preheated to 180C, for 40-50 minutes.

Of course, it’s better to check the readiness of the pie, since the walls of my pie turned out to be thick and they may need more time, it all also depends on the oven.

My cake was in the oven for 45 minutes, that was enough.

The cake turned out not only beautiful, bright and summery, but also tender and very tasty.
-

-
I hope you like my recipe and find it useful.

Thank you for your attention and see you on the site!

I serve to the table in the form, because. I have a knife for cutting on Teflon, so the shape is whole and the cake looks impressive.

I used to make similar pies without jelly, but they, firstly, lost in appearance, and, secondly, when cutting the berries, everything fell off the pie, although they were still very tasty. • vanilla sugar,
  • sour cream (1 cup).

We dissolve the yeast in half a glass of warm milk, salt and pour a glass of sugar. Add flour to the consistency of fritters. In a warm place, we leave our dough to roam. When the dough rises well, add the sifted flour, butter, milk and sugar to it, add margarine and eggs at the end.

The elastic dough should rest for 20 minutes. We knead it until a homogeneous mass, roll it into a layer 3 mm thick. Mix in a baking dish.

Filling: cover the berries with a glass of sugar and let stand for 15-20 minutes. Remove the juice that has come out, pour into the mold and level. Bake 30-40 minutes.

Recipe 7. Puff pastry pie with frozen berries (from ready-made dough)

Puff pastry baking is essentially a lifesaver, as it greatly facilitates the process of preparing any dish. The main thing is to defrost the dough in time, and everything else is trifles.

  • puff pastry - 500 g (this is a whole store package);
  • any berries and fruits - 500 g;
  • potato starch - 3 tablespoons;
  • egg - 1 pc.;
  • sugar - 0.5 cups.

Remove puff pastry from the freezer and defrost. Wash the berries thoroughly and clean them from twigs and leaves directly under running water. After, we cut the large fruits, and leave the small ones as they are, filling them with sugar, and mix. Excess juice, which is formed after 10-15 minutes, must be drained, and starch should be added to the berries (this is done so that the starch becomes a link for the berries during baking).

We take a baking dish, I use a large baking sheet, grease with oil and set aside for now. Roll out the puff pastry neatly in one direction, put one layer on a baking sheet so that the edges come out a little, and leave the other on the table and make cuts in it.

Put the berries in starch and sugar on the dough,

cover with a cut layer on top, and pinch the edges from all sides. The slits in the top layer of the dough should open up a little to make holes. The future puff pastry pie with berries is gently greased with a beaten egg

and put in an oven preheated to 200 ° C, baking for 20-25 minutes.

The layer cake with berries is ready, but before removing the cake from the mold, it must cool slightly. In my opinion, the recipe for making a pie is very simple. Use it yourself and share with your friends.
