For the marinade:

  • Aleppo pepper - from ¼ to ½ teaspoon (or chili powder to taste);
  • fresh carrots - 1 kg;
  • finely chopped fresh dill - 3 tablespoons (or chopped fresh mint leaves - 2 tablespoons);
  • freshly squeezed lemon juice - 1 tablespoon.

For sauce:

  • natural yogurt - 3 cups;
  • freshly squeezed juice from a whole lemon;
  • puree from 1 clove of garlic;
  • 1/3 cup olive oil.

Pour the dried apricots with half a glass of boiling water. After 5-10 minutes, when it becomes soft, remove from the water, dry and cut into small cubes. Using kitchen appliances or manually chop the garlic and walnuts, put in a bowl, put cilantro and dried apricots in the same place, mix well. Pour in a quarter cup of olive oil, vinegar, salt, pepper and use a blender to turn into a paste. If it gets too thick, dilute it with water from soaking the apricots.
