How to cook pies with mushrooms and potatoes in the oven

Let's put the dough first. For dough, slightly heat water, dissolve sugar and yeast in it. We add 100 g of flour, knead the yeast mass until the lumps disappear, after which we set the bowl aside for 10-15 minutes. During this time, the dough should grow at least twice.

When the dough grows up, pour it into a bowl to sour cream and bring the mixture to a smooth consistency.

Sift the remaining flour into the dough. It is better to do this in 2-3 approaches, so as not to make a mistake with the amount, because sour cream always comes across a different density (although it is indicated on the label that it is 15%). This means that the amount of flour will also change. As you will notice when kneading that soft dough stopped sticking to your hands - you no longer need to add flour.

The dough is soft and elastic. We cover it with something and let it come up twice. After the first rise, we crush and leave again, after the second - we crush and proceed to the formation of pies. The dough rises quickly, on average it takes about an hour for both approaches.

During this time, the filling just has time to prepare and even cool a little. Mushrooms in the filling can be taken any. This time, mushrooms went to me, boiled and frozen immediately after collection (we collected them ourselves just a few weeks ago). I thawed them, squeezed out the liquid and only then weighed them. For the filling, mushrooms need to be finely chopped or ground into minced meat with a meat grinder or blender. Add chopped onion to chopped mushrooms and fry in oil.

We clean the potatoes, boil until tender, drain the liquid and mash it into a puree.

Next, mix the puree with mushrooms, add salt to taste, add seasonings and spices (I took ready mixes seasonings for mushrooms and for potato dishes). Knead and the filling is ready. Let it cool down a bit and start making pies.

We pinch off small koloboks from the dough, dust them with flour, roll them into thin flatbread. We spread the filling on the cake: a tablespoon with a decent slide.

We close the filling with dough, forming a pie, then put the molded pies on a baking sheet (oiled or lined with baking paper) with the seam down.

We heat the oven to 180-200 degrees. During this time, let the pies come up, then grease them with a beaten egg and send them for baking.

As soon as the pies are browned enough - take out and can be served. Pies with mushrooms and potatoes are delicious both hot and cold. Keep them covered so they don't dry out.
