Production technology

Production can be divided into six main stages:

  1. First, the barley is dried. It is then soaked, and when it germinates after about 10 days, it is dried again, and in Ireland hot smoke from burning peat, beech wood or coal is used for this. This is how barley malt is obtained.
  2. To produce wort, crushed malt is soaked in hot water for 12 hours.
  3. Yeast is then added to the wort and left to ferment for two days. The output is already an alcoholic drink with a strength of 5%.
  4. The resulting drink is distilled twice. This is how whiskey is obtained with a strength of up to 70%, which is then diluted to 50-63%.

How to drink

As an aristocratic drink, whiskey requires special treatment and some kind of respect. Here it is important not only to choose the right brand, but also to know how to drink this drink. After all, not only its taste depends on it, but also the opinion that whiskey produces on a person.

In our country, few people know how to drink Black Velvet whiskey. That is why many people who have tried this drink could not fully appreciate its taste and enjoy it.

Among the striking examples, there is an erroneous opinion that whiskey, like other strong drinks, can (and should) be drunk in one gulp, while in fact everything is exactly the opposite. After all, only savoring, you can enjoy excellent taste drink, enjoy its aftertaste, feel an unforgettable, alluring aroma.

What is unacceptable

Whiskey, including Black Velvet, is an exclusively masculine drink, so jewelry, umbrellas, and similar attributes of women's cocktails are unacceptable with it. In addition, with regard to whiskey, it is strictly prohibited:

  • drink in large sips;
  • drink through a straw;
  • drink (and it does not matter, cola, juice or water);
  • have a snack (even with the most delicious food);
  • drink after whiskey any other drinks.

It is preferable to drink whiskey in darkened rooms, conducive to relaxation and peace, where everyday fuss and problems fade into the background, where you can relax and have fun.

  1. Whiskey is served in a cold dry bottle. To do this, it is enough to keep it in the freezer for half an hour, after which it is necessary to wipe it with a dry towel.
  2. Before bottling, the bottle is slightly shaken, after which the drink is poured into deep glasses, preferably with legs (and by no means into glasses, as you can see in many cool films).
  3. The glass is never completely filled. Indeed, in this case, you will not be able to enjoy the wonderful game of amber liquid overflow. Therefore, the glass is filled with whiskey by 1/3, no more.

Another myth is that whiskey, like cognac, is drunk exclusively in its pure form. This is not entirely true. True gourmets add at least a little to the glass cold water. In addition, whiskey is often an ingredient in cocktails, and not necessarily for men, but in most cases for glamorous, but strong-willed, beautiful ladies.

Whiskey glasses

Acquaintance with whiskey can turn into a strong sincere friendship. The noble drink has become an essential attribute of masculinity and confidence. However, it is still worth remembering that whiskey is a tradition, not a fashion, so as not to get into trouble at one of the tastings, scornfully looking around at the audience savoring the drink from original wine glasses.

tumblrs

Yes, whiskey glasses are not only the famous tumblrs, from which Scots in pubs or daring cowboys were famously cut.

  • Thick-bottomed, with straight edges, wide diameter, such glasses have become traditional rather from economic motives.
  • The owners of Scottish pubs have found an original way to dispose of broken bottles - they simply cut off the top, leaving the bottom.
  • Tumbler has certainly gained popularity in the world. However, such whiskey glasses are unlikely to allow you to enjoy the magnificent play of amber shades of the drink and feel the delicious bouquet.
  • The preferences of the Wild West are worthy of respect. By the way, it is from the tumbler that you can drink alcohol with soda, ice, cola, unseasoned and blended.

And yet such a whiskey glass will be preferred by a frequenter of noisy club parties. A true gourmets they will modestly demand more acceptable "tare", and drinking conditions - more restrained and "chamber".

Tulip

A true connoisseur knows that whiskey glasses should be tulip-shaped.

It is in them that the aged malt variety will reveal its rich aroma and magnificent color.

Tulip or Snifter glasses differ in volume, but the overall picture of presenting the nuances of the drink is very similar. By the way, instead of them it is quite appropriate to pour alcohol into wine glasses or cognac glasses in a close circle of friends. At the very least, it will be smarter than using faceted glasses.

Remember that the main purpose of the glass is to reveal the bouquet of whiskey as deeply and as widely as possible. Various production technologies and raw materials have led to the emergence of varietal diversity. Each whiskey has a unique character, and glasses are chosen accordingly.

  1. A drink devoid of a special aroma, and these are usually young cereal varieties, can be drunk from glasses-shorts.
  2. Malt definitely needs to be inhaled - a glass with a narrowed top will concentrate unique aroma, which is the most important part in the sensation of the drink.

When choosing glasses for whiskey, it is good to remember the decanter - a special vessel in which alcohol is served. When the whiskey is poured, it is saturated with oxygen, due to which the taste becomes more saturated and the aroma more pronounced.

The optimum temperature to which the drink should be cooled (or heated) is 20-22. It is with her that the whiskey opens up. By the way, cognac is served at the same temperature. If you heat more - a sharp alcoholic aroma can unpleasantly hit the sense of smell, while a cool drink will be tightly “closed”. However, on a young blend it will be almost imperceptible.

Snacks for whiskey

If you want to get the taste of the whiskey without overcooking it, don't use any snacks. But the drink itself is very strong, so you can have a snack for an unseasoned lover. You should choose dishes that would not overlap the taste of the drink, but only shade it a little, without relegating it to the background.

Can be used as an appetizer dried fish, meat and other goodies. It is customary for the Scots to use seafood, for example, red fish, smoked fish or even oysters. Meat can be served baked or fried.

Most connoisseurs love whiskey for its rich taste and aroma. There are several types that differ in taste and require special attention and various snacks:

  • Drink having spicy taste either a smoky aroma, it is customary to eat foie gras or beef tongue. Most Scottish drinks have these characteristics, notable examples are White Horse, Passport Scotch, William Grant's.
  • For Jameson, Glen Grant, Famous, the best snack would be smoked fish. It is best to choose salmon, its taste is great.
  • There are whiskeys with herbal flavors, such as Glenmorangie. It is great for seafood, such as oysters.
  • Peaty aroma characteristic of Irish whiskey, such as Tullamore Drew, goes well with roast beef and lamb.
  • Any whiskey can be eaten with melon - it does not interrupt the taste, it only softens it a little. It is not recommended to use citrus fruits as a snack, they completely kill the taste and hide the aroma of the drink.

How to distinguish from a fake

Black Velvet Reserve is a blended Canadian whiskey aged for 8 years in white American oak barrels.

This whiskey is appreciated by connoisseurs of spirits around the world. One of the most serious problems that the brand faced on the way to global recognition was the massive counterfeiting of Black Velvet.

In order to protect your whiskey from counterfeiting was developed unique design, knowing the features of which the consumer will be able to distinguish the original whiskey from a fake.

Let's take a look at the main features of the 8 year old Black Velvet Reserve.

1. A bottle of the original Canadian Black Velvet Reserve whiskey is made of transparent glass and has a 6-sided shape, while it has many reliefs.

The bottom of the 8-year-old Black Velet has a 6-coal shape, with embossed pattern along its perimeter. In addition, technical information about the production of this whiskey is stamped on the bottom of the bottle.

2. Black Velvet Reserve whiskey labels are of very high quality. A label of poor quality, with glue leaks or glued crookedly indicates a fake.

There are two labels on the front of the bottle, in the upper part in the relief cavity there is a round label with the brand logo.

Under the round label, the main rectangular label is pasted, which indicates the name of the whiskey, the volume of the bottle, the strength of the drink and other useful information.

WITH reverse side bottles there is a large rectangular counter-label, which has a barcode, as well as the name of the whiskey, its volume and strength, as well as other technical information.

3. The cork of real Canadian Black Velvet Reserve is covered with a protective branded film and closes the cork and the neck of the bottle.

When buying this whiskey, pay attention to the integrity of this film, because the creators of fakes could use old, already used bottles of Black Velvet Reserve to fill them with counterfeit, and re-cork the bottles.

As for the lid, it is simple twisting, similar to an ordinary vodka.

The use of whiskey in cooking

Whiskey has a reputation for being a gastronomic introvert. By and large, it is. A dank evening outside the windows, a prickly plaid, a red flame of a stove dancing in silent hysteria, and the dull clinking of ice cubes in a glass - that, in fact, is all that a person needs and mixed malt alcohol as an accompaniment.

It is clear where this reputation came from. For many years, whiskey was drunk almost exclusively as an aperitif, less often - a digestif, that is, before or after a meal. And rarely on time. But reputation, like the weather, tends to change.

This is also due to the fact that the tradition of long, thoughtful digestifs and aperitifs is gradually becoming a thing of the past, while whiskey remains. This is also due to the fact that, upon closer examination, whiskey turns out to be not such an introvert, but quite a gastronomically “sociable being”.

Whiskey is not good for all dishes

Of course, like any substance with a strong character, whiskey needs an appropriate level of dialogue. It is foolish to serve powerful single malt scotch with delicate dishes - it will simply smear them on the wall, hammer them.

In the company of whiskey, dishes can only get dishes with distinct taste dominants -

  • sweet,
  • bitter,
  • acute,
  • salty,
  • smoked,
  • sour,
  • spicy,
  • fatty, etc.

Actually, already from this list, without even going to specific examples, it is clear that the choice of gastronomic parties for whiskey is practically inexhaustible.

What products "sound" with whiskey first of all

Some foods and dishes in an alliance with whiskey perform better, some worse, but honey, cream and everything connected with them is certainly the champion in relationships.

A glass of the most outrageous single malt scotch behaves like a good boy in the company of creamy sauce or duck baked in honey syrup.

  1. beef stroganoff,
  2. cream soups based on full-fat milk and cream,
  3. salad dressings made from honey and mustard,
  4. fruit curries made from apples or figs with honey,
  5. fish stewed in cream - all this is an absolute, harmonious unity with any representative of the world of scotch, bourbon, etc.

Fish, meat and other spicy foods

Whiskey also performs well in the company of oily fish - salmon or sturgeon, stew, pilaf, most spicy dishes Asian cuisine containing pepper, ginger and bright, obsessive spices - like cinnamon, cloves, vanilla and anise - with all representatives of this whiskey shop, it is easy to find mutual language. The spicy notes found in the whiskey's bouquet find paths to balance with the spicy notes of spices and seasonings, turning the sound of dinner into a harmonious scale.

Spices

  • From herbs basil, cilantro are best combined with whiskey.
  • It is very appropriate in combination with leek whiskey, rhubarb, which has recently become terribly relevant as a base for salads, soups and desserts, is simply ideal in combination with whiskey.

Fruits

The fruit range works very well on old blends.

Similar effect on whiskey and citrus society, especially Sicilian oranges and lemons, whose acidity is not sharp, but slightly smoothed, enveloping.

Black Velvet Toasted Caramel is a fine blended whiskey from Canada. Corn and rye spirits are distilled separately, after two years of exposure they are mixed and aging continues in charred American oak barrels. Ripened whiskey received the poetic name "Black Velvet". The bouquet is filled with exquisite tones of caramel cream, framed by notes of roasted nuts, burnt oak and sweet hot toffee, raisins, as well as chocolate and fruit shades. The taste is dominated by tones maple syrup, citrus fruits, pepper manifests itself brightly and piquantly. The finish is light and long with bright oak notes.

Black Velvet is made from corn and a smaller amount of rye grain. The corn and the rye spirits are distilled separately, at different times, using a continuous four-column distillation process consisting of a beer column, an extractive distillation column, a fusel oil column, and a rectifying column. These columns are equipped with copper trays and mesh to ensure that no off-notes make their way into the spirit. This is a key factor in creating the clean crispness of Black Velvet.
The whiskey begins to take shape when newly distilled corn spirits are flavored with rye high wines. High wines are the highly concentrated spirit flavoring that is largely responsible for the spicy fruitiness of Black Velvet whiskey. Using a unique technique called “blending at birth”, rye high wines are mingled with corn base spirit then filled into new, charred, white American oak barrels. Here the two distillates marry and mature into the smooth, flavorful whiskey known the world over as Black Velvet.
To make Black Velvet Toasted Caramel, an extra step is added: An all-natural, proprietary blend of toasted caramel flavorings is infused into mature Black Velvet whiskey to create the final nectar.
Nose: Caramel cream, toasted oak and fresh hot toffee. Just a trace of rich sweet spirit rides a rippling swell of roasted toastiness which will soon have you hearing Yule logs a cracklin'.
Palate: Toffee-sweet with the woody heart of maple syrup, rousing warm pepper and a balancing citrus pith. The pepper grows more intense with each sip as a welcome rich, buttery creaminess envelopes the palate. Whiskey notes themselves hang way in the background at first, with just the essence of the rye overlain with buckets of toasty caramel. The simple and sweet beginning becomes much less one-dimensional as developing pepper and rye spices push the flavor more into whiskey territory.
Finish: Surprisingly long and whiskey-like with a slight heat and a delightfully clean tannic pithiness. Peppery rye spices that were masked in the caramel begin to glow softly in the throat.
Empty Glass: Bold and full caramel, fresh-baked buns, and vague wisps of grapefruit juice.

Whiskey is one of those items that everyone has their own taste for. Some like peaty and smoky whiskeys, while others prefer lighter, smoother whiskeys. Above, we have considered, in my opinion, whiskeys that do not claim to be loved, but must be tasted.

Let's look at this issue using the example of Scotch whiskey. After all, whiskey for many = scotch.

The color of Scotch whiskey in a bottle depends on:

- Barrels in which it was aged

- Exposure time

- External conditions (temperature, humidity)

- Dye (not least)

Strictly speaking, no one can say for sure in what year the Scots began to tint their national drink. We can only say with confidence that it did not begin yesterday, but approximately from the beginning of the 20th century. Scotch is an honest drink and hides nothing from its consumer. What kind of paint is added to whiskey and how to understand if it is in a particular bottle? This food coloring, which is burnt carbohydrates (sugar or corn syrup) - « natural dye caramel". On the back label, it will be listed as E150a. A similar ingredient (E150d) coca-cola owes its color. No other additions to Scotch whiskey are allowed. You can find caramel on the labels of both expensive and cheap scotch - blends and single malt drinks equally “sin” with this. No manufacturer will tell you how much caramel is in their whiskey, citing trade secrets, but some do add more caramel than others.

Why is this being done? Of course, for us consumers. Producers justify the addition of caramel with the desire to even out / standardize / smooth the color of the whiskey, so as not to confuse the buyer. This can be understood: in the production of a mass (albeit expensive) drink, the chief technologist (blend master) can guarantee the constancy of taste, but the color will change from batch to batch. 99% of whiskey is a blend of spirits of different shades, aged in different barrels for different times. Without dye, the liquid in the bottle of your favorite brand will surprise you with different shades in different countries and even in the same country in winter and summer. But there is a witty alternative to touching up - pouring scotch into opaque bottles.

Does caramel make whiskey taste better or worse? The question is debatable. On the one hand, caramel is not an inert component, on the other hand, everything depends on its quantity. It is not always possible for connoisseurs to even accurately determine the presence of this component in adhesive tape. Experts disagree, and blind tastings don't draw conclusions.

Are there any producers who do not add caramel to their whiskey? For example, all whiskey from the Bruichladdich distillery (Brukladi) is bottled without the addition of dyes. Scotch without caramel is considered more “honest” and authentic: after all, there is no need to guess what the color and taste of whiskey would be like until it was brought to the “standard”. In general, whether or not to avoid caramel in whiskey is, of course, your choice.
