In this recipe, Jamie Oliver will make not only a banana pie, but also homemade ice cream. Together, hot cake and cold ice cream will delight us with a great combination of flavors.

Ingredients

  • 4 large bananas
  • 4 heaping tbsp coconut flakes
  • 30 g butter
  • 150 g powdered sugar
  • 500 g unleavened puff pastry
  • 350 ml whipping cream
  • 200 ml condensed milk
  • 40 ml coconut milk
  • 30 ml white rum
  • sifted flour

1. At the beginning, Jamie Oliver recommends making ice cream. Whip the cream in a large bowl until fluffy, then add the condensed milk, coconut milk, rum and 2 heaping tablespoons of flaked coconut to a large bowl.


2. Using a blender, beat everything until fluffy, then transfer the mixture to a frost-proof dish and freeze in the freezer for approximately 3 to 4 hours, or until completely set.


3. When approximately 1 hour is left before the ice cream is completely frozen, preheat the oven to 190 C.


4. Place a 26cm diameter ovenproof skillet on the stove at medium heat. Add the butter, then, as it melts, pour in the sugar (powdered sugar) and dilute a little with water, stir occasionally so that everything dissolves well.

6. Peel and break the bananas into rough 4 cm pieces.


7. Remove the pan from the stove and gently stir in the bananas until they are caramelized. Thus, the filling in our banana pie is already ready.


8. Next, according to the recipe, sprinkle the desktop with flour and roll out the dough to 5 mm thick, and it should turn out to be a little larger in size than your pan in which we cook the banana pie.


9. Carefully roll the dough around the rolling pin, holding it slightly, unfold the dough into the pan, covering it completely (see recipe in the photo).


10. Tuck the edges around the bananas, make sure they are well covered with dough and there are no gaps, otherwise our banana cake may fall apart.


11. Place the banana pie in the hot oven and bake for 30 to 35 minutes, or until golden as shown in the photo. Meanwhile…


12. Place a small skillet on the stove at medium heat. Add the remaining 2 tablespoons of flaked coconut and fry for about 1 minute, or until golden brown.


13. Remove banana pie from oven and let cool slightly for 1 to 2 minutes.


14. Prepare a dish slightly larger than our banana cake, then carefully invert it straight out of the pan onto the dish.


15. Slice and serve banana pie with a scoop of homemade ice cream and top with toasted coconut.
