I was lucky: a large bush of tea roses is just growing under my windows. The end of May, the beginning of June is the time when its flowering comes. To its sweet smell, worker bees flock from everywhere and, buzzing with all their might, collect nectar. When the rose bush is in full bloom, having admired its beauty enough, I start collecting petals to make rose jam from them. I set aside some of the petals for jam, and I must dry some of the petals in order to prepare no less fragrant and tasty tea in winter.

Ingredients:

  • Rose petals 300-400 g,
  • Sugar 1.2 kg,
  • Lemon 1 pc.,
  • Water 200 ml.

How to make rose petal jam

We carefully sort out the rose petals, put them in a large container and fill them with cold water. The remaining dust and debris that was on the petals will settle to the bottom. Then, using a colander, collect the petals and let the excess water drain.


Now let's cook sugar syrup. Pour sugar into a deep saucepan, pour water and put on a slow fire to cook.


When the sugar melts and the syrup begins to boil, it will form on the surface white foam. Remove the foam with a spoon.


Put the rose petals into the boiling sugar syrup.


Boil for 10 minutes and remove from heat. Let the jam cool completely and put it in the refrigerator for 12 hours.


After 12 hours, put the pan with jam on a slow fire and boil for 15 minutes. Then add lemon juice, 2-3 tbsp. will be sufficient. As the lemon juice is added, the jam will begin to lighten and take on an amber color.


In advance or while the jam is cooking, we sterilize the jars and lids. We lay out the hot jam in jars and roll up the lids. From the above ingredients, you should get three jars of rose jam with a volume of 450 ml, and somewhere around 50-100 ml remains. You can not wait a long time for winter, but immediately take a sample from the remaining jam, which did not fit in jars.


This dessert will great addition for tea in the cold season. You can also cook any kind of baked goods with it.
