Our tomatoes are red, the variety of tomatoes is “cherry”, but you can take cream. Most importantly, take small tomatoes so that they fit in a liter jar.

Recipe for tomatoes under the snow, it is not necessary to cook in liter jars. Can be made in 1.5 liter or three liter.

The process of preparing pickled tomatoes for the winter

1. To prepare pickled tomatoes, we need: tomatoes, garlic, salt, sugar, vinegar and water.

2. Choose mature dense tomatoes, we have cherry tomatoes, you can take any.

3. In the place where the stem is attached, we pierce the tomato with a toothpick, this will prevent the tomatoes from cracking in boiling water. We had a very tight skin on the tomatoes, so some of the tomatoes burst.

4. Wash jars and lids. We sterilize on the stove, boil the lids or pour over with boiling water (for reliability, it is better to boil for 5 minutes).

Some housewives wash the jars in which they preserve vegetables with baking soda or mustard, I do not do this.

5. Pack the tomatoes tightly into jars. As I wrote above, for 3 liter cans we “left” 1.700 kg. tomatoes. Small tomatoes.

6. ordinary water Bring to a boil and pour tomatoes all the way to the top. Cover with lids and leave for 15 minutes.

7. In the meantime, peel the garlic cloves and grate them. You can use a blender or a press, but it turns out more beautiful. Indeed, tomatoes are like under the snow. Alternatively, peeled garlic can be finely chopped.

But the highlight is to grate the garlic, that's the whole point, the snow itself. When we fill jars with boiling brine, garlic becomes White color and how the flakes fall on the tomatoes.

Garlic take homemade, not store-bought, and even more so, not imported. We buy garlic because we don't grow it. But we try to take everything from friends who grow vegetables and fruits.

8. We also need to prepare a brine to pour tomatoes under the snow with garlic for the winter. Pour water into a saucepan.

We took 1.5 liters of water for 3 liter jars. We used almost all the brine, about 150 grams remained.

The proportions are as follows: for 1 liter of water, 1 tablespoon of salt, 3 tbsp. spoons of sugar. Therefore, calculate the proportions of salt, sugar and water.

Bring the brine to a boil and boil for 1-2 minutes to dissolve the salt and sugar. By the way, in no case do not use iodized salt for preservation.

9. After 15 minutes, drain the water that was in the jar. I pour it out, we won't need it anymore.

10. Add chopped garlic to each jar.

11. In a jar on top of the garlic, pour 2 tbsp. spoons of vinegar 9%. I never use vinegar essence in tomatoes or Apple vinegar so I can't tell the proportions.

12. Now fill the jars of tomatoes with boiling brine to the very edge.

13. Top with a sterile lid and close with a seaming key.

Shake the jars a little to distribute the garlic.

14. Turn the jars of pickled tomatoes upside down and wrap them in a warm blanket, leave to cool completely.

15. After cooling, the jars are stored in a dark, dry, cool place. Can be stored in basement or closet. We store all conservation in the apartment.
