Coffee impregnation:

  • instant coffee - 1 tablespoon;
  • sugar - 2 tablespoons;
  • cognac (optional) - 1-2 tbsp.
  • cream with a fat content of 33% and above - 400 gr;
  • boiled condensed milk - 300 gr.

Green buttercream for decoration:

  • cream with a fat content of 33% and above - 150 gr;
  • powdered sugar - 100 gr or to taste;
  • green food coloring.
  • egg whites - 3 pcs.;
  • sugar - 150 gr;
  • butter - 200 gr;
  • food colorings.

How to make hedgehog cake at home

We begin work on our future masterpieces with baking biscuits. Separately designed detailed step by step photo recipes you can find the links in the list of ingredients. I note right away that for both biscuits you will need 11 eggs. We use 7 of them completely, but there are still 4 proteins left. If you, like me, do not like unused leftovers after making a cake, you can use 2 eggs and 4 egg whites for a chocolate biscuit. The result will be excellent, and besides, you will save two whole eggs.

To bake a chocolate biscuit, we use a mold with a diameter of 24 cm. Cool the workpiece and cut it into two layers.

Butter cake is baked in a rectangular shape. I have a little less than the standard 30x40cm. We cut out a circle with a diameter of 24 cm from the layer. The rest will be used to prepare hedgehogs.

I additionally decided to soak the chocolate biscuit. Impregnation prepared the simplest. Pour sugar and coffee into a glass, add boiling water, stir and cool. I always add cognac to the cooled liquid. I am deeply convinced that 1 tablespoon of cognac per whole cake will not affect the well-being of children in any way and will definitely not be addictive. 🙂 And you look for yourself and decide how to act according to your convictions.

Using a teaspoon or brush, evenly soak the layers of chocolate biscuit from the side of the cut.

We put a tablespoon of cream on a dish, on top of it the first chocolate layer, cut up. We distribute half of the cream over it.

Then, we put butter biscuit, the remaining cream and the second chocolate layer cut down. We remove assembled cake into the refrigerator.

For the second cream, combine chilled cream with powdered sugar and a small amount food green coloring. We beat everything until a stable dense state. I strongly advise NOT to use dyes for Easter eggs. There is absolutely no way to eat them. If you want to cook beautiful children's cakes, get safe dyes: dry powder or gel.

It remains to let the hedgehogs out for a walk and create comfortable conditions for them: plant flowers and grass in a fabulous meadow.

To make it, I used nozzles of the “asterisk” type, and “planted” the grass with the nozzle of the same name already known to you for making hedgehogs. We decorate the middle of the flowers with confectionery pearls. Don't forget to pay attention to the sides of the cake as well. On the top and bottom, masking the irregularities, we plant the curbs using the “leaf” nozzle or any other at your discretion. To complete the picture, we plant pink flowers between the borders.

We remove the cake in the refrigerator for the night. In the morning, we not only admire our masterpiece, but also take pictures of it from all sides and with everyone. 🙂

When the biscuit is ready, we take it out of the oven and, depending on how high it turned out, cut it into two or three parts, each of which must be greased with cream.

The cream is prepared very simply: melt the butter over low heat, put the condensed milk in a container in which it will be convenient to whip it. Then pour the condensed milk with melted butter and begin to beat well until the mass turns light brown. After that, we proceed to the preparation of decorations.

Using a small and handy knife, cut out an oval figure - the basis for a biscuit hedgehog.

Trim the edges with scissors and slightly "bevel" them.

Now you need to lubricate the figurine with cream. Cream is made from scraps of biscuit. Add any of your favorite jams to them and mix to get a thick homogeneous mass.

We take a pastry bag, put cream in it and begin to make “thorns”, trying to place them as close to each other as possible so that there are no “bald patches”.

Now let's start making paws and ears. For this we need sugar mastic and marzipan. Cut out small semicircles and give them the shape of the ears.

We make the paws in the form of a “droplet” and with the help of a small knife we ​​cut two short stripes.

Eyes and nose can be made from pills or cream, which is enough imagination. We decided to make them from mastic and marzipan, which we dyed in advance.

Now we take a thin brush, food coloring and remember the drawing lessons in elementary school. Carefully draw the hedgehog's mouth, tint the eyes, nose, make red cheeks with a wide brush.
