Before I had time to freeze vegetables for the coming winter, I was already starting to use them little by little. But you can use vegetables and fresh ones. Now, let's move on to cooking.

The recipe for risotto with frozen vegetables includes the following ingredients:

  • Rice - 150 grams
  • Frozen vegetables - 200 grams (I used the following vegetables: zucchini, eggplant, tomatoes, carrots, cucumber)
  • Ground paprika - 1 tsp
  • Ground ginger - 0.5 tsp
  • Salt - to taste
  • A mixture of ground peppers - to taste

How to make frozen vegetable risotto:

Remove the vegetables from the freezer and send them to the pan. It is not necessary to defrost them, they will melt in the pan. If you are using fresh vegetables, wash them and cut into cubes. Then also put in the pan.

Wash rice under running water and add to the pan with the vegetables. As you can see, at first it seems that rice is 3 times fewer vegetables, but in the process of cooking rice will increase in volume by 3 times.

I poured risotto plain water. But you can use meat or vegetable broth.

Add a little water to the pan little by little and cook the risotto. When there is no more water in the pan, add more of it. And so on until full cooking. At the same time, do not forget to mix the rice with vegetables and do not close the pan with a lid.

Ingredients:

  • a glass with a slide of rice grains;
  • half a zucchini;
  • up to 200 g of carrots;
  • the same amount of onions;
  • and the same amount of sweet pepper;
  • two garlic cloves;
  • oil, spices.

Cooking method:

  1. First of all, let's prepare the vegetables. They must be fresh and mature. Zucchini and Bell pepper cut into cubes spicy vegetable and finely chop the onion, three carrots on a grater.

You can cook rice simply with vegetables, and if you add chicken, you get full lunch or dinner.

Ingredients:

  • an incomplete glass of rice grains;
  • one onion and carrots;
  • a can of corn;
  • the same amount of green peas;
  • sweet pepper fruit;
  • up to 400 g of poultry meat;
  • a spoonful of tomato puree;
  • spices, oil.

Cooking method:

  1. For the recipe, you can take any part of the bird, be it a leg or breast. We cut the meat into slices, flavor with spices and lightly fry.
  2. As soon as the chicken is browned a little, add the onion cubes and fry the food until golden. Then put the grated carrots and pepper cubes, fry for ten minutes.

Ingredients:

  • 1.5 st. rice grains;
  • half a kilo of frozen vegetables (mix);
  • half a pack of melted butter;
  • five garlic cloves;
  • spices.

Cooking method:

  1. Put a spoonful of melted butter in a frying pan and add frozen vegetables. Fry them for five minutes.
  2. In another, deeper pan, melt the remaining butter. We fall asleep in it rice groats, add some curry and turmeric.
  3. We combine rice with vegetables, salt, pepper, pour in water (ratio 1: 2). We stew the products until the grains are ready and five minutes before the end of the process we put the peeled garlic cloves to them.

  1. Chop the onion into cubes and sauté until soft. After, add the grated carrots and simmer the vegetables for 15 minutes.

  3. Then add the tomato paste, pour in half a cup of boiling water and simmer the food for 15 minutes.

  • two carrots and onion heads;
  • oil, spices.

Before I talk about how to freeze cooked rice, I want to say a few words about its cooking method. Only properly cooked rice will not disappoint you after defrosting. You should not leave cooked rice open on the kitchen table for too long, the grains can dry out and then the texture of the rice will be uneven. Some grains will be soft, while others will be dry and hard.


Once the rice has cooled, it can be transferred to bags and trays.

Transfer the rice to the bag using a spoon. Try to put so much of it that you can distribute it in the middle of the bag in one even, thin layer.

Close the bag tightly, letting out as much air as possible.


For ease of use of the frozen product, weigh the contents of the package. It will be possible to indicate the weight on the label and not waste time on additional steps after defrosting the rice.


Ready rice can also be frozen in special trays or containers for freezing food. Only when packing rice into trays do not tamp it and leave about 1 cm of free space to the edge of the tray.


Specify the data on the label: boiled rice, rice variety (round, long, brown rice etc.), weight and date of the workpiece.

To defrost rice, you need to transfer it to the shelf of the refrigerator and wait until the product is completely defrosted.

If the rice needs to be thawed faster, then you need to get it out of the bag, transfer it to a plate, add a little cold boiled water and put in the microwave. Turn on either the “Quick Defrosting” mode on the microwave panel, or warm up for a couple of minutes at minimum power.
