The idea of ​​molding almond shortbread cookies in the form of cute funny lambs from dough balls is the embodiment of my imagination :))) children! Let's get started! Prepare the butter powdered sugar, flour, egg, almond flour with peel, cocoa powder.

Soft butter room temperature combine with powdered sugar.

Mix the butter with the powder with a fork and break into the resulting mass egg, mix until the mass is smooth.

Pour regular and almond flour into a mixture of butter, powder and eggs. If you are cooking almond flour on your own, you need to warm the nuts in the oven, and then grind them in a blender or coffee grinder.

Knead the dough with a fork, quickly gather it into a ball with your hand, divide into two parts, 2/3 and 1/3. Stir in the cocoa powder to the smaller portion. Both light and dark dough Wrap individually in cling film or bag and refrigerate for at least 30 minutes.

Then take out the dough and start shaping the sheep. Prepare shortbread lamb shaped cookies and color them with protein sugar icing. The recipe provides a sketch on which you can cut out cookies. In order to paint the lambs with glaze, you need a cornet and a cream nozzle.

It takes 120 minutes to prepare, and the ingredients listed in the recipe make 6 servings.

Ingredients.

For test:

wheat flour - 210 g

soda - 3 g

butter - 80 g

sugar - 100 g

milk - 30 g

chicken egg (yolk) - 1 pc.

salt - 2 g

For decoration:

powdered sugar - 200 g

chicken egg (protein) - 1 pc.

black food coloring

black food marker

Lamb cookies - recipe.

Make the dough: take butter at room temperature. Separate the yolk from the protein. Beat butter and sugar in a mixer, add milk, yolk, salt. When all the ingredients are well mixed, pour the soda on the tip of the knife and wheat flour. We put the finished dough in the refrigerator and turn on the oven to warm up to 180 degrees Celsius.


We print out a sketch on thick paper. Cut out paper rams.


Sprinkle the board with flour, roll out shortbread dough thin (5 millimeters). We apply paper lambs, cut out cookies with a knife.


Carefully transfer the lambs to a dry baking sheet. We bake cookies for 8 minutes. As soon as they become golden color, take out of the oven and cool.


Prepare white glaze: sift the powdered sugar through a fine sieve, mix with protein in a porcelain bowl. Pour the powder in parts. We shift part of the glaze into a cornet with a nozzle. We paint over all the cookies as shown in the photo. Dry for 30 minutes at room temperature.


Prepare gray glaze: separate 2 tablespoons of white glaze, add black food coloring to it, rub well with a spoon.


We fill the cornet with gray glaze. We draw a head with ears and hooves for all the lambs. Each subsequent layer of glaze, regardless of color, can only be applied after the previous layer has completely dried.


With white icing, using a thin nozzle for cream, we apply large drops - these are wool and lambs' eyes.

For cookies you will need the following products:

  • eggs - 1 piece
  • butter - 100 g
  • sugar or powdered sugar - 4 tbsp.
  • salt - a pinch
  • premium wheat flour - 200 g (about 1.5 tablespoons) *
  • soda - 0.5 tsp
  • starch - 1 tsp
  • cocoa - 1 tbsp
  • * 1 cup = 200 ml liquid = 125 g flour

Dough kneading and shaping:

Combine the flour with soda and starch, mix thoroughly.

Sift the resulting mixture through a sieve. I added powdered sugar (you can make it yourself from sugar, as in the recipe) and salt.

Thoroughly mix all the dry ingredients again. I broke an egg to them and laid out softened (!) Butter.

I cut off 1/4 of the dough.

I combined it with cocoa and kneaded the chocolate dough.

The light dough was divided into 4 parts - according to the number of lambs.

Divide each part by 10 equal parts. I rolled them into neat balls.

I immediately laid them out on a baking sheet, greased with sunflower oil. I arranged the balls, as in the photo: in the first row - 3, in the second - 4, in the third again 3. I placed them at some distance from each other - not back to back, as they will increase slightly in volume, but not very far, otherwise the body of a lamb "does not stick together."

The chocolate dough was again divided by the number of lambs into 4 parts.

Each part, in turn, was cut into 3 parts - in half, and then one half into two more equal parts.

Two equal parts are the future lamb legs. I formed them like this - I rolled them into a ball, slightly stretched them into an oval and made an incision from the center down.
From the remaining part (the one that was large) I plucked off a piece for the ear, shaping it according to the same principle as the hooves, only making a notch along the entire length, without cutting through to the end in depth.
And from the remaining dough she blinded an oval - a head. I made an incision on the left closer to the bottom, thus shaping the mouth.

I attached the missing elements to the balls of light dough - the head from the left edge, in height between the 1st and 2nd row of balls. She attached the ear to the head, putting a little on the body. She put the hooves from below between the balls of the bottom row.

So I designed all 4 lamb.

I sent them to a preheated oven and baked at 180-200 degrees for 15-20 minutes, no more, until a slight blush!

That's all - holiday lambs ready! ;)

So, let's start preparing New Year's cookies. Keep the butter in a warm place until softened. You can use good quality margarine. In a suitable bowl, combine softened butter and powdered sugar. Grind to a homogeneous consistency.




We break the chicken egg. Mix well until smooth.




Sift wheat flour and combine with baking powder. Small portions add to the prepared mass. Knead soft dough.




We separate the fourth part from the dough and combine it with cocoa powder. Mix the cocoa well into the dough. It is convenient to do this on the working board. Two types of dough are ready, it remains to form cookies.






We cover the baking tray parchment paper. From white dough pinch off small pieces and form small balls. We put it on a baking sheet, we form the body of a lamb. From brown dough we form the head, tail, legs, ear. Using a bamboo stick, make an indentation, this will be the eye. Cut the mouth and ear a little with kitchen scissors. The dough of this cookie is excellent - tender and pleasant to the touch. The fact is that during baking, the dough increases quite a bit, so your figures will remain almost the same.

So, combine sugar with sour cream and beat thoroughly with a mixer. Sugar will dissolve in sour cream, and you will get a homogeneous mixture.

Now combine a tablespoon of honey with a piece butter and melt a little. This can be done using microwave oven. Set the minimum power mode, and within a couple of minutes the honey-oil mixture will melt to the desired state.

Combine the two resulting mixtures: sour cream and sugar and honey and butter.


Add half a teaspoon of soda to this (note that you do not need to extinguish it) and beat the ingredients well.
It's time to add flour. Measure out right amount, sift it through a sieve and add to the dough in portions.


At first, you can “knead” the dough with a whisk, but later you will have to do it with your hands. The dough will be soft and elastic, it should not stick to your hands.


Pinch off small pieces from the dough and form the details of the figure from them: torso, head, paws. The shape of the sheep may be different.


Grease a baking sheet with sunflower oil and place the sheep figures on it. Preheat the oven to 200 degrees and bake the lamb for 10 minutes. Fast, right? I advise you not to leave the oven and watch how the dough is baked. The fact is that it does not need to be “overexposed”, otherwise you risk treating guests not with cookies, but with crackers. As soon as you notice that the lambs have started to brown, take them out of the oven.
Let the baked sheep (lambs) cool down, and in the meantime, prepare the cream. Please note that the cream needs the most heavy cream- not less than 35% fat content. Whip the cream on medium speed for a few minutes. They should increase 4-5 times and turn into a gentle but strong cream.
At cellophane bag cut off one corner. The hole should be very small - 2-3 mm. Put cream in it.


Now let your imagination run wild and decorate the sheep. If you squeeze the cream out of the bag with force, then you will get a light, curly “fur”. If you slowly and smoothly squeeze out the cream, then you will get "lumps".
