Salad with celery and eggs with spicy dressing

In this salad with celery, the dressing plays a solo role. However, the main "characters" to match her - soft and tender egg white and crispy refreshing celery.

INGREDIENTS:

  • celery - 1 stalk
  • eggs - 4
  • green onion- 5 feathers
  • yogurt without additives - 2 tbsp. spoons
  • mayonnaise - 1 tbsp. spoon
  • Dijon mustard - 0.5 tsp
  • curry - a little bit (to your taste)

COOKING:

Hard boil the eggs. Cool and clean. Divide into yolks and whites. Squirrels cut into small cubes. Put in a bowl.
Wash the celery stalks, pat dry and cut into small cubes. Put in egg whites.

Peeled and seeded apples should be finely chopped and sprinkled with lemon juice. If the lemon is not supposed to be in the salad, then cut the apples last, when all the other ingredients are already chopped. Cut melted and hard cheese into medium-sized pieces. Cheese should be felt in the salad, so do not cut it very finely. Choose the variety of hard cheese according to your taste (you can limit yourself to processed cheese).

If the celery stalks are coarsely veined, they need to be cut off. This is very easy to do. Cut the stem crosswise into 3-4 pieces. Now, from above, pick up a thin skin of celery with a knife and pull it down - coarse fibers separate easily. Exactly the same on the other side. Wash the peeled petioles, cut lengthwise into several pieces and cut into 3 cm long sticks.

Remove the skin from the celery and cut into pieces. Cut apples into cubes.

To prepare the dressing, combine all the proposed salad dressing ingredients and mix well.

Combine all prepared ingredients together, season with dressing and mix carefully, trying not to crush the vegetables.

You can decorate a salad with celery and cucumber with any greens and strips of bell pepper.

Recipe 2. Chicken salad with celery in cucumber

The culinary recipe of my salad is designed for those who like to eat delicious food and watch their figure. You can dress the salad with mayonnaise, but it will no longer be categorized low calorie food. Crab salad with shrimp and celery it cooks very quickly, so it always helps me out when unexpected guests arrive, and my children always eat this salad with pleasure. Shrimps are thrown into salted boiling water for a few minutes, then we throw them in a colander and peel them. Chilled crab sticks, 3 stalks of celery and cucumbers (can be peeled) cut into small cubes. Mix prepared salad ingredients and season light classic yoghurt without fillers. Don't forget to sprinkle the salad with salt and black ground pepper taste. Crab salad with shrimp and celery is ready, serve on the table, sprinkled with chopped parsley and dill. Bon appetit!

Recipe 4. Salad with egg, celery and cucumber

  • egg - 6 pcs.
  • celery (stalks) - 6 pcs.
  • cucumbers - 3 pcs.
  • dill (fresh) - 1 bunch
  • mayonnaise - 2 tbsp.
  • olive oil - 2 tbsp.
  • salt - 1 pinch.

Hard-boil the eggs beforehand (lower in cold water, bring to a boil and cook for 10 minutes from the moment of boiling). Then let them cool and cut into cubes. Wash the celery stalks and cucumbers well and cut into cubes. Finely chop a small bunch of dill.

The first and longest step is to boil the eggs. It will take as much as 10 minutes to cook, during which you will perfectly have time to cut everything else and even take a break somewhere.

So, wash the eggs, put them in a saucepan, completely fill them with water and set to boil until hard boiled.
After 10 minutes, drain the boiling water and pour already cold water. You need to hold for a couple of minutes, and then select and peel the eggs. Cut them into small cubes and throw them into a bowl - let them lie down there, cool down.


In the meantime, the eggs were cooked, it was quite possible to do everything else.
Wash and cut celery. We cut the same way as eggs - finely, but not crumbly, of course.
Also rinse, shake well and chop the green onions - I had 2 decent feathers. All this is added to the bowl with the chopped eggs.


Do you want to top it with pure mayonnaise? Of course you can. In this case, take half a teaspoon of mustard instead of a whole one, and you can also exclude lemon juice.
But I prefer a lighter option: mix mayonnaise with yogurt, and the second will be much more. Try it, it really is no worse, and in terms of usefulness it is a cut above the usual fat mayonnaise.
So, mix yogurt, mustard, mayonnaise and lemon juice in a bowl. Don't take our own spicy mustard, only French, gentle! Mixed? Add to salad.


It remains to salt and add pepper. It can be just black, and a mixture of peppers, and chili peppers - see for yourself. I added black pepper, and sprinkled hot on top when serving.

As I said at the very beginning, I always serve on toasted black or gray bread which I rub with garlic.
Salad turns out tasty, satisfying, tender. And at the same time with a pleasant crunch of celery, which refreshes everything well, without letting the salad become too heavy and boring.
