Recipe for this grated pie(aka curly cookie) has long been in my cookbook— time-tested and it turns out excellent. Someone calls this pie "grated", someone - curly biscuits. In my opinion, both names are suitable. Considering that the cake is cut into rhombuses and a piece product is obtained, this is a cookie. On the other hand, it is baked like a pie - on a baking sheet. So let's not talk about the name for a long time, but go directly to the recipe.

  • Margarine or butter - 200 g (1 pack)
  • Sugar - 1 cup
  • Egg - 2 pcs.
  • Baking powder for dough - 1 teaspoon
  • Salt - 0.5 tsp without top
  • Flour - 3-3.5 cups
  • Jam for filling (currant, cherry, apricot and so on. ) - 6-7 tbsp. spoons

  1. Get margarine or butter in advance and let stand at room temperature to make it soft. Beat margarine with sugar (I use a food processor), then add eggs, salt and baking powder. I also add a pinch of vanilla.
  2. After that, gradually add flour. Once the dough is firm enough, continue kneading with your hands. It should turn out cool, but at the same time homogeneous and oily.
  3. When the dough is ready, divide it in half into 2 parts: send one to freezer for an hour, and while we wrap the other in cling film or a package and let stand.
  4. Next, we roll out the part of the dough that was warm along the entire length of the baking sheet, sprinkled with flour in an even thin layer. Spread jam over the entire surface of the dough on top. I use currant jam because I like it the most. Cherry, apricot and any other will be no worse. You can use both jams and jams.
  5. Now it's time to turn our cake into a shredded one and our cookies into a curly one. To do this, we take the frozen part of the dough and rub it on a coarse grater right on top of the jam layer.
  6. We heat the oven to 200 ° C and send our grated pie (or curly cookies) to bake for 30 minutes.
  7. When the cake is ready, you will know right away, because its curls will turn golden, and a wonderful aroma will soar in the kitchen. Here is our grated pie (or curly biscuit) and ready!
  8. It remains to cut it into diamonds - first with diagonal cuts 5-7 cm wide in one direction, and then these strips of the same width in the other direction. Before serving, the resulting pieces of grated pie (or curly cookies) must be cooled and sprinkled powdered sugar(optional).

It is traditionally prepared with currant jam, but the grated pie, as you know, will turn out equally well with any jam. For example, in our version, strawberry filler is used.

Ingredients: grated pie

Egg - 2 pcs.
- Wheat flour - 500 g
- Butter - 200 g
- Sugar - 250 g
-Vanillin - 0.5 tsp
- Baking powder - 1 tsp.
- Strawberry jam - 200 g

-Pour the melted butter into a deep bowl and mix with sugar, eggs and vanilla.
-Slowly add the flour to the liquid mixture while kneading the dough. When it is ready, divide it into two parts. Put the first part in the freezer for 1 hour, and roll the second to the desired size, put it in an oiled form and cover with a layer of jam about 1 cm thick.
-Remove the dough from the freezer and grate it on coarse grater. Sprinkle the jam generously with shavings and send the grated pie to bake in an oven preheated to 200 degrees for 25 minutes.

The finished one is usually cut into oblong diamonds and sprinkled with powdered sugar, which gives rise to disputes about what this dessert really is: a pie or a cookie?

Cookies "Curly" with yogurt

Dough prepared according to this recipe will be more juicy, but requires a little more flour and takes longer to bake.

Ingredients:

Creamy margarine - 300 gr.;
- granulated sugar or powder - 1 tbsp. (200 gr.);
- chicken eggs - 3 pcs.;
- fruit yogurt - 100 gr.;
- vanilla (sugar) - 20 gr.;
- soda - 1 tsp;
- flour - 2-3 tbsp. (500 gr.);
- jam - 300-400 gr.

Flour can go a little more, you can see this while kneading the dough, bringing it to desired consistency. It is advisable to take yogurt with the same fruits as the jam that you will use as a filling.

Preparation: grated pie or curly biscuits with yogurt

Grind margarine with sugar or powder until completely smooth.
-We introduce eggs, yogurt and soda with vanillin into the first mass. We make the state of the mixture homogeneous.
-Knead the dough. We add flour gradually, watching the consistency so that it becomes soft, but rather plastic.
- Divide the dough in half and place one of the parts in the freezer. This is done in order to facilitate the process of rubbing the dough.
-We roll out the second part into a cake, 1-1.5 cm thick. We lay out on the prepared baking sheet so that the edges go a little on the sides from all sides equally.
- Cover the surface with jam and rub the dough, which was taken out of the freezer, on top.
-Bake in an oven preheated to 150º for 20-30 minutes. You can find out if the pastries are ready with a wooden stick by piercing the cookies with it in several places. (If the dough does not stick to it, then the cookies are ready).

Cookies "Curly" can be the basis for the cake. And this is already holiday dish, which can be served without hesitation on the table to guests.

Ingredients

For the test you need

  • chicken eggs - 5 pcs.;
  • granulated sugar - 3 tbsp. (600 gr.);
  • sour cream - 1 tbsp. (200 gr.);
  • powder for dough - 2 tsp;
  • creamy margarine - 250 gr.;
  • wheat flour (high quality) - 3 tbsp. (600 gr.);
  • thick jam - 0.5 l.;
  • walnuts - 2 tbsp. (400 gr.).

For oil cream

  • soft butter - 350-400 gr.;
  • condensed milk - 1 b. (200 gr.);
  • cognac - 2 tbsp. l.

For custard you need

  • milk - 1 liter;
  • chicken eggs - 5 pcs.;
  • sugar - 1 tbsp. (200 gr.);
  • wheat flour - 3-4 tbsp. l.;
  • vanilla sugar - 1 sachet;
  • butter - 350-400 gr.

This recipe requires a little more ingredients which are not always available.

Cooking

We bake cakes

  1. We separate the eggs into yolks and whites. We leave the proteins in a separate bowl, and grind the yolks to whiteness and splendor with 1 tbsp. granulated sugar.
  2. Baking powder is added to sour cream to activate its action.
  3. Grind soft margarine with a glass of flour until a more or less homogeneous mass is obtained.
  4. We combine all the ingredients for the dough. Knead, adding the rest of the flour little by little. The dough should become quite plastic, but not hard. If flour is not enough, add a little more to achieve the desired result.
  5. Divide the dough into 6 equal parts. We put two of them in the refrigerator. 4 roll out the remaining parts into cakes, about 0.5 cm thick, and spread them on small baking sheets.
  6. We cover the surface of the cakes with jam, rub the dough on top, which we take out of the refrigerator. For each cake with jam, use half a chilled piece.
  7. We put in the oven, preheated to 150º and bake for about 15-20 minutes.
  8. In the meantime, beat 5 proteins in a tight foam, adding 2 tbsp. Sahara.
  9. We take out the half-baked cake from the oven and cover it with a protein mixture. Sprinkle dried on top walnuts. We put in the oven, reducing the fire. Continue baking until done (another 15-20 minutes). Take out and let cool.

Making cream

Butter cream is prepared quite simply - beat the butter, gradually adding condensed milk and cognac to it. You can add a little cocoa, vanillin or other essence.

To prepare custard, you need to be patient and spend a little time.

  1. We put the milk on the fire and bring it to a boil.
  2. While the milk is boiling, make the dressing for brewing. Whisk the eggs, sugar and flour in a separate bowl until all ingredients are combined and the mass has doubled in volume.
  3. Slowly pour into boiling milk egg mixture, stirring constantly so that it does not burn and does not run out of the pan. Bring to a boil to make something similar to jelly.
  4. Completely cool the milk component. Then add butter softened at room temperature to it and slowly beat until fluffy.

We smear the cake layers with cream, which is more to your taste.

Cookies "Curly" with sour cream

Ingredients

  • cream margarine - 250 gr.;
  • sugar -200 gr.;
  • eggs -2 pcs.;
  • sour cream - 100 gr.;
  • soda - 1 tsp;
  • flour - 200 gr.;
  • jam - 300 gr.

Cooking

  1. Grind margarine with sugar.
  2. Add eggs, sour cream and soda. Stir.
  3. Add flour.
  4. Divide the dough into two parts and place one of the parts in the freezer.
  5. Roll out the first part into a cake and place on a baking sheet.
  6. Cover the cake with jam, grate the second part of the dough from the freezer on top.
  7. Bake at 150º for 20-30 minutes.

For cooking custard use a larger pot than indicated in the cream recipe. When boiling, the volume of the liquid almost triples. Consider this fact to avoid the "runaway" of the cream base.

In Curly cookies, you can put nuts on top of the jam, whichever you like best.

But it is advisable to roast the nuts a little in a dry frying pan or in the oven before adding them to baking so that they acquire a caramel flavor.

Cookies "Curly" with the addition of jam will be a very good everyday dessert that does not require much time and products.
