Eggplant appetizer with tomatoes and garlic

The most difficult thing in the cooking process is to fry the little blue rings, and everything else is completely elementary. So I boldly prepare such an eggplant appetizer for the festive table: I am sure of its taste and appetizing appearance, and I know that I will not spend much time on it.

And, of course, I am happy to pamper my family with this snack on ordinary days: why not, since it is simple, fast and does not require any rare and expensive products. Ingredients:

  • 2 medium sized eggplants;
  • 2-3 tbsp mayonnaise;
  • 2-3 cloves of garlic;
  • greens (dill, parsley);
  • 3-4 medium sized tomatoes;
  • 50 g lightly salted cheese;
  • vegetable oil for frying.

How to cook an eggplant appetizer with tomatoes and garlic:

For this recipe, it is better to choose even eggplants, preferably not too pot-bellied. Wash the blue ones and cut into rings about 0.5 cm thick.

Fry eggplant in a pan. In order to use less vegetable oil at the same time, I advise you to do this: grease not the pan with oil, but directly the little blue rings. To do this, you can use a silicone brush - it will allow you to quickly and evenly apply a small amount of oil to the eggplant. Put the eggplant fried on both sides on a plate or board and cool.

In the meantime, let's get on with the sauce. We combine mayonnaise, garlic, passed through a press and finely chopped greens. We mix.

Let's not forget about the rest of the ingredients for our cold eggplant appetizer. We also cut the tomatoes into rings, about the same thickness as the eggplant rings (or slightly less). Choose tomatoes that are comparable in size to eggplants - if the diameter of the tomato and eggplant is about the same, then the appetizer will look very beautiful.

Three cheese on a grater - medium or small.

Put a small amount of mayonnaise, garlic and herbs sauce on the cooled eggplant rings.

Put a tomato ring on top and again a small amount of sauce.

And sprinkle, without stint, with grated cheese.
