Soup with dumplings with chicken

Greetings, dear friends! Different ones occupy a separate place in my menu, and as a rule I prepare first courses for my little daughter. One of our favorite soups is, but today I decided to cook something new, and for lunch we had soup with chicken dumplings - the dish is quite simple, budget, but, nevertheless, very tasty and satisfying.

Dumplings are pieces of dough boiled in water, broth or milk. There are many recipes for dumplings. As a rule, they are made from wheat or buckwheat flour, sometimes with the addition of semolina, potatoes, cottage cheese. Today I will tell you my recipe, because cooking soup with dumplings has its own characteristics. Soup with dumplings turns out to be very fragrant and tasty, be sure to try this recipe in your kitchen.

Ingredients:

  • 500 gr. bone-in chicken, or drumstick for broth
  • 2 liters of water
  • 5-6 potatoes
  • 1 onion
  • 1 carrot
  • 50 ml sunflower oil
  • salt to taste
  • 0.5 tsp paprika
  • 0.5 tsp ground black pepper
  • 0.5 tsp provencal herbs
  • a few sprigs of parsley

For dumplings:

  • 1 egg
  • 1 st. l. water
  • a pinch of salt
  • 5-6 art. l. wheat flour

How to cook dumpling soup:

Wash the bone-in chicken and cover with cold water. Put on fire and cook for 30 minutes. Before boiling, remove the foam with a slotted spoon so that the broth is transparent. Also, a drumstick, back or leg is suitable for making broth.

At this time, prepare the vegetables. Wash potatoes, peel and cut into cubes.

Peel the carrots and cut into strips, onions into cubes.

Stirring occasionally, fry the carrots and onions in sunflower oil until soft.

Remove the chicken from the prepared broth, add chopped potatoes to the pan.

Let's boil it for about 7 minutes.

How to make dumplings for soup:

Crack an egg into a deep bowl. Pour a tablespoon of cold water into it.

Add a pinch of salt and beat the mixture with a fork until smooth. Gradually add the sifted wheat flour.

Knead soft and elastic dough for dumplings into soup. For convenience, we divide it into 4 parts. Roll each piece into a sausage and cut into small pieces of the same size. Don't make the dumplings too big, they will expand as they cook.

When the potatoes are almost cooked, add the browned vegetables to the soup.

Next, let's add dumplings.

Let's mix our delicious soup with dumplings so that they do not stick together. We will cook the soup for another 7-10 minutes until the dumplings are ready.

At the end, add salt, spices and finely chopped parsley.

Let the soup boil and turn off the heat.

Pour the chicken soup with dumplings into portioned plates or broth bowls and serve the dish hot.
