Provencal salad with beef, recipe

Today we will prepare a very simple, light and at the same time delicious Provencal salad. The list of products is quite simple, everything is prepared very quickly, the salad has a bright summer and quite festive look.

It will be especially appropriate to prepare such a salad if you have a piece of boiled beef left from yesterday's broth. In this case, the cooking time of the dish will be reduced to literally 10 - 15 minutes. However, you can spend time on cooking meat - in any case, the result will please you.

The composition of the ingredients is quite simple, but if you wish, you can diversify it by adding certain components (carrots, apples, olives, peas, pickled mushrooms, etc.).


In this case, we are preparing a salad of beef, bell pepper, pickled and fresh cucumber. The dish turns out to be quite nutritious, rich in vitamins and at the same time light (since we use lean beef). Cucumbers and peppers give the salad summer freshness, pickled cucumbers with onions - piquancy and spiciness. You can use any spices to your taste, in this case, basil, thyme and oregano were used. You can take another mixture, for example, Provence herbs (just fit the name of the salad).

To prepare a salad, take the calculation for 4-5 servings:

  • boiled beef - 300 g
  • bell pepper - 2 pcs.
  • pickled cucumbers - 3 pcs.
  • fresh cucumbers - 2 pcs.
  • salad onion - 1 pc.
  • table vinegar 9% - 0.5 tbsp. /li>
  • vegetable oil - 4–5 tbsp.
  • sugar
  • spices

Provencal salad preparation


Cut the chilled boiled beef into small pieces or strips.


We clean lettuce. It is better to take purple, it turns out more beautiful. We chop it in half rings. Add vinegar, sprinkle the onion with sugar and leave to marinate for a few minutes.


Cut off the ends of pickled cucumbers on both sides. Cut into sticks or strips.


Wash lettuce and cut in half. Remove the core with seeds and stalk. Then we chop the pulp of the fruit with straws. 2 red peppers are used here, but you can also take multi-colored ones - red, yellow, green.


My fresh cucumbers, cut them into strips.


Mix the meat in a salad bowl with pickled onions. We put there the chopped cucumbers with pepper. Sprinkle with pepper and drizzle with oil. You can use any vegetable oil, but olive oil is better.


If such a salad is put in the refrigerator for a couple of hours, then it will turn out even tastier. But you can apply right away. That's it, Provencal salad is ready!
