Salad: cucumbers, tomatoes, bell peppers for the winter.

We prepare a delicious winter salad at home from tomatoes, cucumbers and bell peppers.

Tomato and cucumber salad is perhaps the most common summer salad option. And as soon as tasty and aromatic vegetables appear on the market, we all use this traditional combination, filling ourselves up with vitamins for the winter. But, unfortunately, in winter I again want fresh, aromatic tomatoes and crispy green cucumbers. Therefore, I suggest making homemade salad or salad in jars for the winter, which will contain cucumbers, tomatoes, and bell peppers. This is a traditional salad that can be prepared for the winter. The process itself will take very little time. You can prepare one half-liter jar of salad in literally 15 minutes.
If you want to increase the number of cans or their displacement, then you should also increase the number of ingredients. The salad can always be varied with spices and different herbs. For example, dill, basil and various spices are also suitable. Spicy lovers can add 1-2 rings of hot red pepper to a half-liter jar. Provencal herbs or a set of spices for Korean carrots are perfect for this salad (if, of course, you plan to make the salad spicy).

To prepare vegetable salad for the winter in jars you will need:

  • tomatoes – 2 pcs.,
  • cucumbers – 2 pcs.,
  • sweet pepper – 2 pcs.,
  • water – 0.5 liters,
  • sugar – 1 tbsp. spoon,
  • salt – 1 teaspoon,
  • bay leaf - 2 leaves,
  • cloves – 4 pcs.,
  • garlic – 1 clove,
  • parsley - 3 sprigs,
  • vinegar - 1 tbsp. spoon.

Recipe for a salad of cucumbers, tomatoes and bell peppers for the winter.

1. Sterilize jars and lids previously washed with soda in any way convenient for you. You can use steam from a boiling kettle, a slow cooker, a microwave or an oven. Attention! To prevent salad jars from swelling, vegetables must be washed very thoroughly before cooking. It is advisable to wash them with a clean brush. Wash the tomatoes, cut off the stems and cut the vegetable into slices. Place some on the bottom of the jar.

2. Wash the cucumbers too, cut off the tails and cut into rings.

3. Peel the sweet pepper from seeds, wash and cut into thin rings.

4. Place the cucumber rings again.

5. Rinse the parsley thoroughly in a bowl of water, changing the water 3-4 times. Then you can place the greens on a paper towel to drain. Chop and add parsley to a jar.

6. Place bay leaf and cloves in a jar; you can use any other spices you wish.

7. Place the remaining tomato slices.

8. And yellow bell pepper, cut into strips.

9. Add sugar and salt. Peel the garlic and cut in half. Add it to the top of the jar; in this case, garlic acts as a kind of preservative.

10. Pour boiling water and vinegar.

And so that the salad lasts until winter and does not swell, it is advisable to sterilize the jars with it. To do this, you need to take a large and deep pan (about the height of the cans), put a small cloth on its bottom. Before closing the jar of salad, place it in a saucepan on a cloth and cover the top with clean, sterilized lids without damage. Pour water into the pan at approximately the same temperature as the contents of the jar so that the glass does not burst due to temperature changes. The water level in the pan should be about half the jar, maybe a little higher, but so that when boiling, the water does not get into the salad. Then you need to put the pan on medium heat and bring the water to a boil. To sterilize vegetable salad in a jar with a capacity of 0.5 liters it will take 10 minutes, for a jar with a capacity of 1 liter - 15 minutes, 1.5 liters. - 20 minutes, 2 l. - 25 minutes, 3 l. - 35 minutes.

Then screw the lid on tightly or roll up the jar. Turn the jar upside down and wrap it in a towel or warm blanket. Leave in a warm, draft-free place until it cools, then put in a dark place.
