Pizza is a traditional Italian dish that is made according to certain rules. Pizza dough, as a rule, is made with yeast, rolled out thinly. The sauce is made from tomatoes, not ketchup. But there are many recipes where everything is prepared not according to the classical canons. And such recipes also have the right to life. The main thing is that it tastes good!

I will write 6 pizza recipes. These will be both classic yeast baking recipes and quick yeast-free options. Read the content and choose the recipe to your taste. You can see the recipe for pizza from soft curd dough.

Real pizza Margherita is made on a thin yeast dough. This pizza was invented for Queen Margherita in the 19th century. This recipe remains one of my favorites to this day. Margarita is made in three colors: white (mozzarella), green (basil) and red (tomato juice). It turns out pizza in the colors of the Italian flag.

Ingredients:

for the dough (for 4 thin pizzas):

  • soft wheat flour - 500 gr.
  • water - 300 ml
  • dry yeast - 7 gr.
  • salt - 10 gr.

For filling:

  • Mozzarella cheese - 120 gr.
  • parmesan cheese
  • peeled tomatoes in their own juice - 80 gr.
  • fresh basil - 8 leaves
  • garlic - 2 cloves
  • olive oil

How to make classic Italian pizza:

1. Water for yeast dough must be warm, about 30-35 degrees. At higher temperatures, the yeast will die and the dough will not turn out. Yeast will not start in cold water.

Place dry yeast in warm water and stir with a spoon until dissolved. Leave the yeast in the water for 10-15 minutes.

You can also use pressed yeast if you like. Then they need to be taken three times more than dry - 21 gr. Important: live yeast must be fresh, they have a short shelf life.

2. In a large bowl, sift all the flour at once and add a teaspoon of salt. Mix flour with salt.

Be sure to sift the flour. So get rid of unnecessary grains and additionally saturate the flour with oxygen.

3. Pour the infused yeast into the flour and stir with a spoon until you can do it. Then you need to switch to kneading with your hands.

4.Sprinkle the work surface with flour and lay out the dough. The dough is kneaded as follows: hold the bottom edge of the dough with your left hand, and pull it up with your right hand and wrap it, pull it off and wrap it again. Then turn the dough over and continue kneading.

The dough must be kneaded for at least 15 minutes. During this time, the gluten of the flour will soak, the dough will become homogeneous and elastic. This is the most time-consuming process in the preparation of pizza - knead the dough.

5. Cut the already thoroughly kneaded dough into 4 equal pieces. Now you need to work with each piece. Take one part of the dough and form a bun, turning the edges down. Next, put this bun on the plank and twist with two palms so that the dough becomes perfectly round and plastic.

If you press your finger on the dough, it will restore its shape.

6. Sprinkle some form or tray lightly with semolina and put the formed 4 koloboks. Cover with a damp towel and leave for 2 hours in a warm, draft-free place.

In order for the yeast to work well, there must be good humidity (for this you need a damp towel) and heat up to 40 degrees.

7. Prepare pizza sauce. Pour vegetable oil into a frying pan and heat it up. Peel and crush two garlic cloves with a knife. Put the crushed garlic in the pan and let it fry.

Garlic will make the oil fragrant.

8. Put the tomatoes in their own juice into a blender and turn them into puree.

9. When the garlic is fried, remove it from the pan. Pour grated tomatoes into flavored garlic oil and salt 1 tsp. salt. Stir. Simmer the sauce over medium heat for 15 minutes until it thickens.

10. After two hours, the dough should double in size. Sprinkle the table with flour and take one ball. With your hands, begin to stretch it into a thin circle. The dough is very elastic, it stretches easily. It is easier to shape the pizza with your hands than with a rolling pin.

11. With your fingers, make small sides, about 1 cm, walking in a circle.

12. Sprinkle a baking sheet with semolina and place the prepared pizza blank on it. The dough can be rolled onto a rolling pin to make it easier to transfer.

13. Grease the dough with sauce, retreating from the edge of 1 cm.

14. Tear the mozzarella with your hands and put the pieces on the pizza. Tear the basil leaves and place between the cheese. Thus, the necessary three colors are obtained.

15. Preheat the oven to 240 degrees and bake the pizza for 8 minutes. Thin dough bakes quickly.

16. Transfer the finished pizza to a dish (use a spatula) and immediately grate a little parmesan on top on a fine grater. And also sprinkle with olive oil, just a few drops.

17. Cut the pizza into portions and serve hot. Pizza is eaten with hands, no forks are allowed. A piece is taken in hand and folded in half, like a book. This is a very tasty dish, fragrant, royal. Try to cook this version of pizza according to this recipe and write in the comments what you got.

Neapolitan pizza with anchovies.

This pizza is similar to Margherita, the dough is made in the same way. The filling is slightly different, it includes anchovies.

Ingredients:

  • pizza dough (according to the recipe above for Margherita pizza)
  • Mozzarella cheese - 120 gr.
  • peeled tomatoes in their own juice - 100 gr.
  • anchovies
  • oregano - 2 tbsp.
  • garlic - 2 cloves
  • pepper
  • olive oil

Cooking:

1.Make the dough as described in the previous recipe above. Get 4 koloboks that need to be stirred for 2 hours until they double in size.

2. Put the anchovies on a paper towel to get rid of excess fat.

3. Prepare the Neapolitan sauce. Heat olive oil in a pan. Peel a couple of garlic cloves and crush with a knife. Put in the pan and fry the garlic well. When it's deep brown, take it out and throw it away. All that is needed from him is the smell, which has already nourished the oil.

4. Pour the peeled tomatoes in their own juice into the pan, add oregano, salt and pepper to taste. Mash the tomatoes with a fork until pureed. Simmer the sauce over medium heat for about 15 minutes to allow excess water to evaporate.

5. When the dough has risen, take one bun and place it on a floured work surface. Flatten it with your hands and stretch it into a thin circle. At the ends, leave a thicker layer of dough for the sides. With your fingers, walk in a circle, forming sides, 1 cm wide.

6. Sprinkle the baking sheet with semolina and put the dough on it, level it. Apply cooled sauce. Spread the sauce from the middle of the pizza in a circular motion.

Sauce should be at room temperature. Yeast dough "does not like" when it is smeared hot.

7. Put pieces of Mozzarella on the sauce, which you just tear with your hands. Place the anchovies between the cheese.

8. Put the pizza to bake in a preheated oven to 240 degrees for 8-10 minutes.

Pepperoni pizza with spicy sausages - step by step recipe.

Pepperoni pizza is loved by many, because the main ingredient of its filling is spicy Pepperoni sausages. In this recipe, I will write how to cook pizza that will be no worse than in a pizzeria: thin, crispy, fragrant and very appetizing.

Ingredients:

for the test:

  • flour - 250 gr.
  • fresh yeast - 7-10 gr.
  • warm water - 100 ml
  • sugar - 1 tsp
  • salt - 0.5 tsp
  • olive oil - 20 ml

For filling:

  • Mozzarella cheese - 300 gr.
  • Pepperoni sausage (or spicy Salami) - 250 gr.
  • the pulp of grated tomatoes - 150 gr.
  • fresh basil - 30 gr.
  • pepper - to taste

Pepperoni Pizza Recipe:

1. Take warm water (about 30 degrees), pour it into a bowl. Add a teaspoon of sugar and stir to dissolve the sugar. Crumble the pressed yeast into this water. Add a tablespoon of flour and stir with a whisk to disperse the yeast.

Fresh yeast can be replaced with dry yeast. Dry take 3 gr. You should not put a lot of yeast on one pizza, it's not a pie.

2. Cover the dough with a towel and leave for 5 minutes. After five minutes, put salt into the dough and pour in olive oil, mix.

3. It remains to introduce flour into the dough. Be sure to sift the flour through a sieve. Enter first half of the flour and stir with a spoon. When the dough is already thick, start kneading with your hands. Enter all the remaining flour. Knead the pizza dough for at least 15 minutes, until it becomes soft, not sticky to your hands.

4. Gather the dough into a ball and place in a bowl under a towel to rest for 1.5 hours.

5. Prepare the filling. Cut the sausage into thin slices. Grate mozzarella on a coarse grater.

6.Tomatoes need to be mashed. If you make your own from fresh tomatoes, then remove the skin. To do this, make a cross-shaped incision on the tomato and pour boiling water over the entire tomato for 1-2 minutes. After this procedure, the skin can be easily removed. Wash, dry and chop the basil leaves as finely as possible. Add herbs to tomato sauce. Salt, pepper to taste and stir.

7. When the dough has risen, take it out and put it on a table sprinkled with flour. Form a round cake with your hands. You can shape the pizza with your hands, stretching the dough, or you can roll it out with a rolling pin. Roll out into a thin circle, larger in diameter than the shape.

8. Lubricate the mold or baking sheet with vegetable oil and lay out the pizza blank. Bend the edges, forming the sides.

9. Brush the pizza with the sauce, spreading it evenly over the entire surface.

10. Sprinkle the entire pizza with cheese so that the cheese covers the sauce.

11. Put the sausage slices on the cheese.

12. Preheat the oven to 130-140 degrees and bake the pizza for 7-10 minutes. Focus on your oven.

Quick yeast-free pizza with milk.

If you don't want to make a yeast-based classic pizza dough, you can make a quicker version. This milk pizza recipe is quick, easy and delicious.

Ingredients:

for the test:

  • flour - 2 cups
  • warm milk - 0.5 tbsp.
  • eggs - 2 pcs.
  • vegetable oil - 1 tbsp.
  • salt - 1 tsp

For filling:

  • tomato sauce
  • tomatoes - 2 pcs.
  • chicken - 100 gr.
  • hard cheese - 150 gr.

If desired, you can put mushrooms (fresh or pickled), pickles or pineapples in the chicken filling.

Cooking:

1.Heat the milk so that it is warm. Beat eggs into a bowl, pour in vegetable oil and warm milk, salt. In a warm environment, the flour will disperse faster and easier. Whisk eggs with milk with a fork until smooth.

2. Sift the flour on the table in a slide. Make a well in the middle of the slide and carefully pour in the liquid mixture. If there is no experience in kneading the dough in this way, then just knead in a bowl. Sift the flour into the liquid mass and knead. Stir first with a spoon, then with your hands.

3.Knead the dough for at least 10 minutes to make it elastic.

4. Wrap the dough in a damp towel and leave to rest for 15 minutes.

5. Prepare the filling. Tomato sauce can be taken ready-made if there is no time to prepare homemade sauce. At home, you can make delicious sauce from tomato paste. To do this, pour vegetable oil into the pan, chop a couple of cloves of garlic and fry a little. Next, fry the tomato paste (2-3 tablespoons) with this garlic for about 2 minutes. Add dried herbs and sauté for 1 minute more. Pour in water so that the sauce has a ketchup-like consistency. Salt and add sugar to taste. Simmer for 5-7 minutes over low heat.

Filling chicken can be fried, stewed or baked in the oven in foil. Choose the cooking method according to your taste. You can also take fresh champignons for the filling, they need to be cut into thin slices. Chicken also pairs well with pineapple. Make such a filling and there will be Hawaiian pizza.

6. Put the rested dough on a floured table and roll it into a thin layer. Grease a baking sheet with vegetable oil or sprinkle with flour. Place the pizza base on a baking sheet. Fold in the edges to form higher sides.

7. Generously grease the dough with the cooled sauce.

8. Grate the cheese on a fine grater. Sprinkle the pizza with 2/3 of the cheese.

9. Put chicken or sausage on the cheese. Or all together. The chicken can be cut into pieces, or you can tear it into fibers with your hands.

10. Put thin circles of tomatoes on the meat. And sprinkle with the remaining cheese.

11. Bake the pizza in the oven at 200 degrees for 15-20 minutes.

12. Cut the pizza into pieces and enjoy!

Unleavened pizza with whole wheat flour.

If you want to increase the usefulness of the dough, put whole grain flour in baking. This recipe is with this flour and without the use of yeast.

Ingredients:

for the dough (for 2 pizzas):

  • whole grain flour - 2 tbsp. 250 ml
  • water - 1 tbsp. (250 ml)
  • dry garlic, turmeric, dried basil, paprika - 1 tsp each
  • salt - 0.5 tsp
  • olive oil - 1 tbsp

For filling:

  • bell pepper
  • Champignon
  • tomatoes
  • arugula
  • cheese
  • smoked chicken breast
  • sour cream
  • ketchup

Cooking method:

1. Pour water at room temperature into a bowl.

2. Sift flour into water and add spices.

3.Pour in olive oil, which will make the dough elastic.

4.Knead the dough. First mix with a spoon, and then start kneading with your hands. Knead until smooth. Shape the dough into a ball, place in a bowl and cover with cling film to keep the dough from drying out while you make the filling.

5. Cut the vegetables that you will put in the filling. Mushrooms cut into thin slices. Tomatoes - thin circles, peppers - rings. Add onion as you wish. He will not have time to fully cook, so he will crunch. If you do not like this, it is better to refuse onions in the filling. Cut the chicken breast into thin slices, cheese in the same way.

6. Take parchment and grease it with olive oil. Tear off half of the dough and use your hands to flatten it into a ball. Roll out the circle with a rolling pin. Lubricate the base with ketchup, then with sour cream.

7. Lay the circles of tomatoes on the base in one layer. Put the pepper rings on the tomatoes. Next, mushrooms. The next ingredient is cheese.

8. Optionally, place the onion half rings on the cheese. Next lay out the pieces of meat. Transfer the parchment to a baking sheet and bake the pizza at 180 degrees for 25-30 minutes.

9. Put arugula leaves on the finished pizza. You can also lightly drizzle with balsamic vinegar for a nice tartness. So the pizza is ready on a thin dough with whole grain flour. Tasty and healthy!

Fast homemade pizza on kefir.

Kefir pizza dough will turn out soft, moderately crispy, especially around the edges. It won't be tough or rubbery like the classic water and yeast dough sometimes happens, especially if it hasn't stood for long.

I often make pizza dough on kefir. It's fast, and the kids like it more than the store-bought version. You can also add cottage cheese to the dough if desired (I add) to make the dough even healthier. White flour can be substituted for whole wheat flour if desired.

The filling can be any. There are no more restrictions!

Ingredients:

for the test:

  • flour - 400 gr.
  • kefir 2.5% - 1 tbsp. (250 ml)
  • egg - 1 pc.
  • soda - 1 tsp without a slide
  • sugar - 1 tsp
  • salt - 1/2 tsp
  • vegetable oil - 50 ml

For filling:

  • boiled chicken breast - 200 gr.
  • hard cheese - 130 gr.
  • canned corn - 200 gr.
  • tomato sauce - 5 tbsp.

How to make yeast-free pizza:

1. Beat the egg into a bowl and stir it with a whisk.

2. Pour in kefir, add salt, sugar, soda. Mix with a whisk until smooth. Soda will begin to be extinguished with kefir, bubbles will appear.

3.Pour in vegetable oil. The butter in the dough needs to be elastic. Without oil, the dough will not be able to stretch normally, it will tear.

4. It remains to introduce flour. Sift it in parts and stir the dough with a spoon. When the dough is thick, knead with your hands until it stops sticking to your hands. The amount of flour may differ from that stated in the ingredients, see your test. It should be soft and not sticky.

5. Cover the dough with cling film and let it rest for 20-30 minutes. In the meantime, prepare everything for the filling. Boil or bake chicken fillet. You can take a ready-made tomato or ketchup sauce or make it from the pulp of fresh tomatoes (I wrote how to make the sauce in the first recipe). Cut the finished meat into arbitrary pieces. I just tear the chicken with my hands into fibers right on the pizza (the kids love to help with this).

6. Grate the cheese on a coarse grater.

7. Sprinkle the baking sheet with flour. Roll the rested dough into a thin layer and transfer to a baking sheet, winding it on a rolling pin. Or you can put the dough on a baking sheet and stretch it over the entire surface with your hands. It is not difficult, even a 6-year-old child will cope with such work.

8. Brush the pizza base with the sauce.

10. Bake at 200 degrees for 20-25 minutes. Be careful not to overcook the pizza. In this case, it will be hard, like a cracker.
