How to cook a clear broth on chicken bones

Let's start. So, I have one set of bones left after cutting the chicken breast fillet from it. As you can see, there is quite a bit of meat in there. In the pan, I also put half a large carrot, half an onion, three black peppercorns, 1 bay leaf and 1 cloves (you can leave it out if you don’t like it). Salted, poured everything with a liter of water. And put it on the stove.


Brought to a boil. I removed all the foam that had formed, turned the heat up to a third. And put to cook without covering the lid. After 40 minutes, the water evaporated by half, and I got a golden, rich and very fragrant broth. But there is only half a liter left. (Now you understand why the ingredients are listed on 2 plates. Evaporation is what makes the broth so delicious.)


I strained the broth to show how wonderful it came out.


I threw out all the vegetables. She scraped off the rest of the meat from the chicken breast. Here's how many they got. It felt good in the soup.


How to cook dumpling soup

I did not find the recipe for chicken soup with dumplings in books or on websites. My wonderful colleagues Olga, Natalia and Margot shared their experience with me. Thanks to them, I cooked an absolutely wonderful soup. I even regretted that it came out so little, because my husband was not against the addition.

So, pour the broth into the pan. We take potatoes. We clean it and cut it into small cubes. (Approximately 0.5 - 0.7 mm side.)


Bring the soup to a boil and cook until the potatoes are tender. It cooked for me in 7 minutes.

In the meantime, we're making the roast. We cut the onion finely, put it in a frying pan, poured with a small amount of vegetable oil (2-3 spoons to soak into the onion). Fry for 5 minutes over medium heat, stirring. Then add the grated carrots, mix, fry for another 3 minutes. If your carrots are dry, like mine, then at the end pour 3-4 tablespoons of water and let it evaporate - some will be absorbed into the carrots. Put the finished frying into a pot with soup.


Dumpling dough

We pass to the main thing. Making dough for dumplings. Break an egg into a small bowl.


Add water, stir with a fork and then pour in the flour. Mix vigorously until the dough is smooth and without lumps. As my colleagues explained to me, the dough should have such a consistency that you can’t bake pancakes from it, but you can’t stick pies either. The most successful comparison is that the dough looks like a liquid cupcake. That is, if you scoop it up, it holds its shape for 10-15 seconds, and only then begins to blur.


Spread the dumplings in the soup as follows. First, the soup should not boil intensely. Just a very slight gurgle. We take a teaspoon. Dip it in the soup. Next, scoop up the dough. Ideally, no more than half a spoon. Put into soup. Again we dip the spoon into the soup, scoop up a new portion of the dough. And so on, until all the dough is over.


Spread the dumplings on opposite sides of the pan so that they have time to grab. Then they won't stick. Once all the dumplings float to the top, the soup is ready.


It remains only to try it and add salt, if necessary. And it will be great if you have a couple of sprigs of fresh herbs. I rummaged through the entire refrigerator and found some parsley. You need to chop the greens smaller.


That's all. You can try the soup. And in the end I want to add that if you want the soup to be enough for four people, multiply all the products by two. I gave the recipe for a tête-à-tête dinner. I don’t cook anything for the future, because no matter how much soup you make, everything will still be eaten right away.
