Salads based on Korean appetizers attract us with their bright appearance, excellent taste and pleasant spicy aroma. Such dishes (with Korean seasoning based on coriander) are made from almost all vegetables. They are good from beets, carrots, eggplants, zucchini and even cucumbers. Made with just a few ingredients (with the addition of a generous spoonful of vigorous garlic), the appetizer is colorful and savory.

Korean-style green (or asparagus) beans are no exception on this long list. Sweet pods, saturated with the aroma of spices, acid and garlic, are very tasty. Asparagus beans can be prepared for the future, for the winter. In such a brine, it will turn out hearty, tender and juicy. Carrots give the dish the necessary sweetness, and garlic - a slight sharpness.

To prepare Korean-style asparagus beans for the winter, it is recommended to use natural fruit vinegar. It can be a wine or apple product. If you do not have natural acid available, replace it with table vinegar (after recalculating its rate).

Ingredients for cooking asparagus beans in Korean for the winter:

  • asparagus (green) beans - 500 g
  • carrots - 1 pc.
  • vegetable oil - 50 ml
  • garlic - 3-4 cloves
  • table or apple cider vinegar 6% - 3 tbsp.
  • a mixture of spices "in Korean" - 1 tbsp.
  • water - 300 ml
  • sugar - 1.5 tbsp.
  • salt - 1.5 tsp

Asparagus beans in Korean - a recipe for the winter:

We clean the pods, cut them into small segments, put them in a bowl. Pour the beans with boiling water, cook for 2-5 minutes.


Dip the asparagus in cold water (to preserve the color), then drain the water and put the asparagus in a bowl.


Cut the carrots into thin strips (or three on a grater for Korean carrots) and add it to the beans, also put chopped garlic.


We mix all the components.


We spread the resulting mixture into a dry and clean container. We carefully tamp the mass.


Add sugar, salt and spices to the water. Bring the mixture to a boil and pour the beans in jars. Add the recommended amount of vinegar.


We cover the jar with a lid and sterilize the workpiece in a saucepan with water for 20-25 minutes (after boiling).


Asparagus beans in Korean for the winter is ready!


Turn the sealed jar upside down and cover with a blanket until completely cooled. We store the workpiece in the proper place for this - a cellar or pantry.
