How to cook philadelphia rolls at home

Rolls, like all Japanese cuisine in general, require precision in detail. They cannot be "blinded" from ordinary rice - you will need a special one, for sushi. It has a lot of gluten, which holds the roll together and helps it keep its shape.

What is required for cooking

Algae sheets - nori - do not buy with a large margin: the opened package is not stored well. To roll the rolls, you will need cling film and a small bamboo mat. The latter can be found in a regular hardware store as a coaster for dishes. It is also necessary to purchase vinegar for sushi - it makes the rice plastic and sticky.

To prepare the filling, you will need slightly salted salmon or trout fillet (it is better to take whole and cut it yourself), Philadelphia cheese, avocado (if desired, it can be supplemented or replaced with cucumber). Use wasabi, pickled ginger and soy sauce to taste. If you don't want to carry around with cooking, you can easily order sushi at home.

Cooking rice and preparing the filling

Rinse the rice well until the water runs clear.

Then put it in a saucepan and cook in a 1:1 ratio of cereals with water over low heat, covered, for 20 minutes after boiling. Whoever has a slow cooker can select the “rice-groats” mode and cook in this mode.


While the rice is cooking prepare the filling. Cut the fish, avocado and cucumber into long thin strips. Cut the core out of the cucumber, otherwise your rolls will “flow” and fall apart.

After the rice is cooked, add to it a mixture of rice vinegar - 50 ml, sugar - 2 tbsp. spoons, salt - 1 tbsp. spoon (the ratio is based on 2 faceted glasses of dry cereals). Heat the sauce in the microwave until the salt and sugar are completely dissolved.


We wrap the rolls

Lay a piece of cling film on top of the mat, then lay ½ sheet of nori on top, shiny side down. Spread the rice in a thin even layer so that the grain does not reach 2 cm to the end of the nori closest to you, but goes beyond the border of the opposite end of the sheet - this is necessary so that the seam of the twisted roll sticks together. Wet your hands with vinegar water to keep the rice from sticking to them.

Lay cling film on top and a second bamboo mat. Turn the workpiece over so that the rice remains on the film, and the nori is at the top. Spread the filling in the center, along the sheet.

Arrange the vegetables evenly on top of the cheese. Make sure that the filling layer is approximately the same throughout its thickness. Next is the most crucial stage, it scares people, so they often order rolls at home.

Lift the bottom edge of the mat (the one where the end of the nori remains free of rice), cover the filling with it, and roll it up.


Wait a few minutes and carefully unfold. Roll this rice "sausage" onto a layer of fish, previously laid out on another rug. Wrap the stuffed rice in a fillet so that the roll is tight.
