As for the method of preparation, choose what is more appetizing: wind or fried in a pan. It is difficult to prioritize and give the first place to something specific. I will show you a detailed step-by-step recipe for plum pies in the oven, and then I will tell you how to fry them on the stove.

    Let's activate the yeast first. Slightly warm 70-100 ml of milk, pour dry yeast granules (or crumble fresh / pressed, 21 g - fresh is required three times more than dry), 1 tbsp. l. sugar and wheat flour. Stir, removing lumps, cover with a film / bag and keep in a warm place for 10-15 minutes until a wide foam layer forms on the surface. Do not rush and do not knead immediately, wait for a violent reaction, the appearance of the so-called "hat". Yeast should be awakened, then the dough will rise, and pies with plums or other fillings will surprise you with softness and airiness.

    We sift about 300 g of flour, we will add the rest gradually, in small parts and later. Mix with a pinch of fine salt, if you want, enhance the flavor of the crumb with vanilla sugar, but cinnamon sets the main note. Add 40-50 g of regular sugar, beat in one egg, pour in melted and chilled butter. The hot butter just removed from the heat will curdle both the egg white and the flour, which will make the dough not homogeneous, but coarsely interspersed. Knead, grind into flakes.

    Pour out the rest of the milk, the boiled yeast dough and proceed to a rather long kneading. We dump the still sticky flour mass on the countertop and gradually increase the dosage of wheat flour, add it and roll it into a lump, press and stretch. As soon as plasticity appears, we mash without dusting with flour - the less flour is added and the dough is “worked out” better, the crumb is tastier and more magnificent. Try not to bring the dough to hardness and stiffness.

    We roll up the bun, put it in a bag, but do not tighten it tightly, but leave free space. We remove the semi-finished product on the shelf of the refrigerator and leave it to "doze" all night. It is convenient to knead the yeast dough in the evening, pack, hold the growth in the cold, take it out under the sun or heat the next day, stand for an hour and a half until the volume increases and proceed to molding the products.

    And here is the same bun in a new size, after a night of “sleep” in the refrigerator and two hours of proofing in a warm place under cling film. Soft, swollen, filled with air and tripled its own volume. You can make pies with plums!

    We divide the dough into the desired number of parts of the same weight / size. Dry my Hungarian or another variety of plums, cut into cubes or slices, sprinkle with sugar (about 50 g) and ground cinnamon, which goes well with all stone fruits. In addition to cinnamon, lemon zest, vanilla sugar, cloves are good.

    When molding, I do without a rolling pin. With this test, you can easily sculpt anything. Large and portioned products, braids, "braids", "lattices". We stretch and press round cakes 0.5 cm thick, spread the sweet filling in the center. If the plums are very juicy, sprinkle some starch.

    We firmly squeeze the opposite edges of the base, connect the joints, give the pies-blanks a round or oval shape. Transfer with a distance to a baking sheet with parchment or a thin layer of flour. We throw a towel or film and leave for 20-30 minutes in warmth. Before sending it to the oven, we cover it with egg yolk shaken with a spoonful of water or milk - for the sake of a crust that sparkles with brilliance. Lubricate with vegetable or melted butter, then the shell will come out matte, velvety, also picturesque and tasty.

    We bake in a pre-heated oven at a temperature of 180 degrees for 40-45 minutes. Glossy pies with plums before serving, cool under a woven towel on a baking sheet.

For breakfast, we serve homemade pies with plums next to a cup of coffee or tea, and in the afternoon we enjoy a snack with compotes, fruit drinks, milk or sour-milk drinks.

The pies are prepared on the above-described sponge yeast dough. If you like kefir fried pies more, feel free to use it, changing the filling to plum.

  1. After forming the pies, heat a large frying pan and then vegetable oil. We use refined for frying.
  2. Lay the patties seam side down and fry until golden brown over medium heat. Then turn over and fry on the other side until golden brown.
  3. Put the finished pies on paper towels to get rid of excess oil, and cool. Bon appetit.
