And let the meat-eaters not imagine a meager meal of a hill of cabbage and a few pieces of boiled carrots. Vegetarian dishes for the New Year, prepared without the use of animal products, can be even tastier and more varied, the main thing is to show imagination.

We will immediately agree that we are talking about vegetarianism, in which not all products of animal origin are banned, but only flesh. That is, we can use milk, eggs, sour cream, etc.

Snacks




The vegetarian New Year's table will begin, as always, with appetizers. Nobody canceled small sandwiches for one bite. As a basis, you can take already proven recipes: avocado mousse with lime juice and hot pepper, beetroot puree with garlic and natural yogurt, a variety of vegetable caviar (zucchini, eggplant and any other to taste).




In the same way, vegetarians will not refuse stuffed eggs, in which its many traditional types are suitable as fillings: mushrooms fried with onions, grated raw carrots with garlic and melted cheese, and so on.




Also, do not ignore a variety of traditional vegetarian recipes for the New Year of Russian cuisine: sauerkraut, a variety of vegetables, pickled apples, and so on. They not only diversify the table, but also make all guests remember their roots.




Even the traditional herring under a coat may, after a little modernization, take its place on the vegetarian table. For it you will need potatoes, carrots, beets, processed (or Adyghe) cheese, seaweed, walnuts and mayonnaise. The salad is laid out as usual in layers, while each is smeared with mayonnaise. But, given the lack of herring, the sequence looks like this: potatoes, seaweed, cheese, carrots, beets, mixed with crushed nuts. Layers can be repeated, then the salad will become even more interesting.

Main course




As a main dish on a vegetarian New Year's table, you can cook vegetable skewers in batter . For them, you need to prepare batter in advance according to your favorite recipe (for example, water, kefir, flour, salt and spices) and cut vegetables into small portioned pieces: zucchini, eggplant, bell peppers, tomatoes and Adyghe cheese. Everything except cheese and tomatoes must be mixed, sprinkled with spices and salt and left for half an hour so that they are soaked. You need to string all the ingredients on bamboo sticks, dip in batter on all sides and fry in olive or sunflower oil (there should be quite a lot of it, a layer of 2-3 centimeters). Fry the skewers on both sides under a closed lid, 6-8 minutes. When it's cooked, place it on a layer of paper towels or napkins to soak up the excess oil.

Dessert

In principle, most desserts already correspond to the principles of vegetarian cooking (it is very difficult to imagine a meat pie). The only exception is edible gelatin, which is made from animal cartilage, which means it is banned. But if you still want to treat yourself and your guests to such a dish, then you can use agar-agar, for the production of which special algae are used.




But as an example of a wonderful New Year's dessert that will appeal to both vegetarians and meat-eaters, we can cite baked apples. To prepare them, you need to select several beautiful red apples of the same size, cut out the middle of them and fill the vacant space with a mixture of butter, sugar and cinnamon. Then each apple must be wrapped in foil or a special film and steamed or in the oven until soft. Dessert can be garnished with cinnamon stick and caramel.

This is a fairly simple menu that does not contain anything forbidden for a vegetarian, but it will be quite to the taste of everyone else. Perhaps, after such a dinner, they will even think about changing their culinary orientation.

It is difficult to imagine our traditions of the New Year holidays without a feast, which is often unhealthy and not environmentally friendly. Most people cannot imagine the New Year's table without meat and fish dishes. But don't vegetarians celebrate the New Year, or do they do it with a modest "ordinary" menu? Of course not! Many recipes are taken from the diet of lacto- and ovo-vegetarians, but some are also suitable for vegans.

1. Vegetarian "meat"

This is a dish made from seitan, a plant-based meat substitute that tastes very similar to the "original". Seitan is made from flour. The dough is thoroughly washed to remove the starch from it, and the remaining gluten is boiled in broth. The result is a mass with a high protein content and taste similar to meat.

  • Ingredients: 3.5 cups flour, 1.5 cups water. This is what the dough is made from. And for the broth you need 1 liter of water and spices to taste.

The resulting "meat" can be used in any recipes as a substitute for natural meat. In particular, you can cook fried meat. To do this, sliced ​​seitan is fried in a pan in butter with the addition of spices: turmeric, coriander, bay leaf, pepper and soy sauce. First, spices are added to the oil. Behind them is soy sauce and only then “meat”. Fry it for 5-7 minutes on all sides.

2. Fish

A vegetarian fish substitute is made from cheese, for example, Adyghe.

  • Ingredients: 150 grams of cheese (Adyghe, paneer or tofu), 100 ml of water, 3 tablespoons of flour, half a teaspoon of each type of spice: salt, black pepper and turmeric, vegetable oil and a few sheets of nori seaweed.

Cut the cheese into rectangular pieces. From water, flour and spices, prepare a sklyar. Soften the nori in water and wrap the cheese around them, and then dip the resulting “rolls” in the batter. Next, fry the "fish" on both sides.

3. Aspic

Without this dish, the New Year's table is hard to imagine. There is it on the table of vegetarians. Of course, without tongue and other animal products. They are replaced by cheese. And again, nori seaweed is very out of place.

  • Ingredients: 1 large carrot, 1 potato, 500 ml of water, 1 teaspoon of melted butter ghee (can be replaced with melted butter), 2-3 tablespoons of sour cream, 2 teaspoons of agar-agar, 50 grams of Adyghe cheese and a set of spices that may vary depending on your tastes. For example, such a set: allspice, red pepper, coriander, cloves, bay leaf and such exotic spices as suneli hops and asafoetida, which will be very difficult to find with us. But it is quite possible to do without them, because spices are added to taste, it is not always necessary to strictly follow the recipe.

Boil vegetables in water, adding spices, a little later - nori sheet and ghee. Soak agar-agar in a little water. Remove vegetables from the prepared broth, strain the broth. Pour the swollen agar-agar into the broth and bring to a boil, stirring occasionally. Cool down. Stir the third part of the broth with chilled sour cream until smooth. Cut the vegetables and arrange them on top of the frozen sour cream mass. After that, carefully pour the remaining broth on top and wait until the dish hardens.

4 Cheese Lasagna

  • Ingredients: a pack of lasagna sheets, 50 grams of mozzarella, 300 grams of almette cheese, 300 grams of parmesan (or any hard cheese), 250 grams of cream cheese, cream (20% fat), nutmeg and salt.

Lasagna sheets should be cooked for 3 minutes. Then grease a baking dish with butter and spread the sliced ​​\u200b\u200bsoft cheese on it. Next, layer your ingredients in this order: lasagna sheets, cream cheese, lasagna sheets, cream cheese and half mozzarella, lasagna sheets, cream cheese, lasagna sheets, mozzarella rest, and more lasagna sheets. Top it all with cream and sprinkle with nutmeg and parmesan.

5. Vegetarian "herring" under a fur coat

This dish is just a classic for our holiday tables. What is included in its vegetarian version?

  • Ingredients: 800 grams of potatoes, beets and carrots, 350 grams of seaweed, 300 grams of Adyghe or processed cheese, 5 walnuts, 250 ml of sour cream and 400 ml of mayonnaise, salt and spices (coriander, nutmeg, cinnamon, black pepper and asafoetida).

Boil vegetables in uniforms. Then peel and grate. Also grate cheese. And what will replace the herring, you ask? Seaweed, which needs to be finely chopped. We add two tablespoons of sour cream to carrots and beets, and 3-4 tablespoons to potatoes. Then add spices to taste. And pour crushed walnuts into the beets.

After that, lay out the layers “under a fur coat” in the following order: potatoes, seaweed, cheese, carrots, beets. Lubricate each layer with mayonnaise and repeat the entire set of layers one more time. The dish is ready!

6. Olivier salad

It is almost impossible to imagine the New Year's layer without Olivier. Actually, the vegetarian version of this salad is distinguished only by the absence of sausage.

  • Ingredients: 1 kilogram of potatoes, half a kilogram of carrots, a can of canned peas, 100-150 grams of cheese, a few cucumbers, a glass of mayonnaise and a glass of sour cream, turmeric, asafoetida, black pepper and salt, olives and seaweed.

Boil the vegetables "in uniform", peel and cut into cubes. Chop the rest of the ingredients. Mix everything and add mayonnaise and spices.

7. Baked potatoes

It is hardly worth talking about the place of potatoes on the New Year's table of Belarusians. But it is not necessary to limit yourself to stewed or boiled potatoes. Much tastier and healthier will be its baked version.

  • Ingredients: kilogram of potatoes, 400 ml of sour cream, 400 grams of cheese, 50 ml of vegetable oil, salt and spices (turmeric, black pepper and coriander).

Cut the peeled potatoes into slices, mix sour cream with 1 teaspoon of turmeric. Put a third of the potatoes on a greased baking sheet and sprinkle it with spices. Put a layer of cheese on top (also a third of the total) and pour over sour cream and butter. Make two more layers of the same potatoes, cheese and sour cream.

Bake in the oven for 15 minutes under a lid at a temperature of 250 degrees, then another 40 minutes at 200 degrees. Remove the lid 10 minutes before it's ready. This will give a golden brown crust on top of the dish.

8. Shah-pilaf

This dish will stand out on your table, and it's safe to say that guests will be delighted with it. Shah pilaf is a traditional Azerbaijani dish that is served on the table only on major holidays.

  • Ingredients: half a kilogram of basmati rice, 150 grams of raisins, dried apricots and cherry plums (or other sour dried fruit), 250 grams of walnuts, 3 carrots, a pack of butter and a package of thin pita bread.

The most important nuance in the preparation of this dish concerns the type of rice. The main thing is that it be long-grained (basmati is the best variety) and properly cooked. To begin with, rice is soaked for half an hour in cold water. Next, rinse thoroughly. Cook rice in water with a ratio of 1 to 3 for 3-5 minutes. Salt to taste during cooking. As a result, the rice should acquire a uniform color, but remain a little undercooked. It is laid out in a small colander and doused with boiling water.

Fry chopped dried fruits in a pan using a third of the oil. After a few minutes of frying, add 2 tablespoons of sugar and a little salt to dried fruits. Thanks to this, the fruit will be covered with a layer of sugar, reminiscent of caramel.

Saute diced carrots in vegetable oil. Broken walnuts also fry in a pan. Cut pita bread into 5 cm strips and melt the rest of the butter.

It is necessary to cook pilaf in a deep bowl. It is smeared with oil from the inside and covered with strips of pita bread in 2 layers so that they cover the entire surface of the dish “overlapping” and so that their ends hang down from the dish. Next, rice is laid in a layer of 1 centimeter, followed by dried fruits and a layer of ghee. Then again rice, carrots, nuts and butter. Everything ends with the last layer of rice and is wrapped with “tails” of pita bread, which are once again smeared with oil from above.

Shah pilaf is cooked in the oven at a temperature of 200 degrees for 20-30 minutes. Lavash should be golden brown.

9. Cake "Bird's milk"

We all know this cake from childhood, but few people cook it at home. And in vain, because the recipe is quite simple.

  • Ingredients: half a liter of heavy cream (33%), 400 grams of 25% sour cream, half a liter of milk, 450 grams of sugar, 4.5 teaspoons of agar-agar.

To prepare the glaze separately, you need to take 100 ml of water, 2 tablespoons of sugar, half a teaspoon of agar-agar, 3 teaspoons of cocoa.

Cream, sour cream, 400 grams of sugar and vanillin must be mixed and mixed with a mixer for 10 minutes until a thick homogeneous state. The container with the resulting mass must be placed in a plate or pan with hot water so that the mixture warms up well.

Next, grease the glass form with vegetable oil. Agar-agar must be mixed with milk and the rest of the sugar (50 grams or 3 tablespoons). Bring the mixture to a boil over low heat, stirring constantly. Agar-agar should dissolve, after which you need to turn it off and let the mass stand for 3 minutes. Then beat with a mixer a mixture of sour cream and cream and in the process of this we introduce a mixture of milk and agar-agar. We spread everything in a glass form, level it and put it in the refrigerator.

Mix glaze ingredients and bring to a boil. Then, having cooled to 50 degrees, pour them on top of the main mass of the cake and wait until the icing hardens. After an hour, the cake will be ready for cutting and eating.

10. Baklava

There are a huge number of variations of this dish, and each of them is good in its own way. Here is one of the recipes for making baklava at home.

  • Ingredients: a glass of milk, 50 ml of sour cream, 60 grams of butter, a quarter of a spoon of soda and four glasses of flour, some roasted walnuts and half a liter of refined oil. For syrup, you need a pound of sugar and 200 ml of water.

Pour melted butter into milk, add sour cream and soda and knead the dough, adding flour gradually so that it becomes thicker. Leave covered dough for 10 minutes. Divide it into small pieces or balls, which then roll out in turn as thinly as possible on the table, allowing the resulting sheets to dry on each side for 5-10 minutes. Put the sheets one on one, twist into a roll and cut at an angle of 45 degrees. The edges of the dough should not stick together.

Pour vegetable oil into a deep frying pan and fry the rolls in it until golden brown. Place them on a plate lined with paper towels and let cool.

Mix sugar with water and bring to a boil (after that, you can add honey to taste). Dip the cooled baklava in hot syrup for 1 minute. Arrange on plates and sprinkle with crushed nuts.

Making vegan dough

Thoroughly mix warm water, oil, flavoring and lemon juice with syrup or melted honey with a mixer. Continuing to beat, gradually add cocoa, sifted flour, then nuts.

Vegetarian dough

In a water bath or in a microwave at low power, melt the butter and chocolate, pour in the flavoring. Gradually add sugar or honey to the mixture, stirring. Then add flour and starch, sifting through a sieve. Beat the dough with a mixer or whisk until the lumps dissolve.
