  • Cottage cheese - 500 grams;
  • Vegetable oil - 1 tablespoon;
  • Sugar - 4 tablespoons;
  • Soda - 0.5 teaspoon.

Cooking:

  1. First, knead the dough. We take out the kefir from the refrigerator and let it warm up to room temperature. Beat it with soda and egg. Then we begin to mix the flour into the liquid mass. Knead a non-sticky, elastic dough. We pack it in cling film and send it to rest in the refrigerator.
  2. In the meantime, beat the egg with sugar until a white foam appears. Then vigorously stir the egg mixture into the curd. You can add a little more sugar to taste.
  3. We roll out the dough on the table into a layer with a thickness of about 0.5 centimeters. Cut out circles with a cup or glass. Put a tablespoon of the filling on each circle and carefully pinch the edges.
  4. If you are cooking in a double boiler, you need to lightly grease the bowl with vegetable oil.
  5. We fold the dumplings so that they do not touch each other. We turn on the cooking program for 12 minutes.

Eggless dumplings with steamed cherries

Cherry dumplings are great for a children's menu or fasting. After all, the composition of the test does not contain eggs.

So, let's start steaming dumplings:

  • 200 ml of very hot water;
  • Flour - about 2.5 cups;
  • Salt - half a teaspoon;
  • a tablespoon of sugar;
  • 150 grams of pitted cherries.

Cooking:

  1. Sift flour on the table. We begin to pour hot water little by little into the center and knead the dough. It should be elastic, and at the same time not too hard. As soon as the dough is ready, send it to the refrigerator to rest under the film.
  2. Sprinkle pitted cherries with sugar and put in a sieve to drain the juice. We don't spill it! In the future, we will dilute the juice with water and boil it down a little. Get a sweet sauce for serving dumplings.
  3. Roll out the dough into a layer. The optimal thickness is 0.5 centimeters. Cut out circles using a cup. We put a tablespoon of the filling in the center of each and carefully fix the edges. Steamed dumplings with mushrooms are a great hearty dish. We will cook it in a slow cooker on steam mode.

  • Water - 1 glass;
  • Flour - 3 cups (depending on the quality, you may need more or less);
  • Salt - half a teaspoon;
  • Mushrooms - 200 grams;
  • Onion - 1 large onion.

Cooking:

  1. We start with a test. We heat the water almost to a boil. Pour salt into it, add oil and mix thoroughly. We begin to add flour to half a glass and knead the dough. It should be elastic and not too hard. Let the dough rest in the cold.
  2. Finely chop the onion. Mushrooms are also cut into small cubes. Fry in vegetable oil until golden brown.
  3. Roll out the dough. Cut out circles with a glass or mug. Put the filling in the middle of each juicy. Its amount must be varied depending on your taste. Steam dumplings on kefir with potatoes and cracklings

Such dumplings are a rather high-calorie dish, but very tasty. The perfect lunch for cold winter days. For cooking, we need the following products:

  • 250 ml of kefir;
  • 500 grams of flour;
  • Half a teaspoon of soda;
  • Half a teaspoon of salt;
  • Egg - 1 piece;
  • Potato - 4 large tubers;
  • Butter - a tablespoon;
  • 130 grams of fat with streaks of meat.

Cooking:

  1. Let's do a test first. Kefir is slightly heated and pour soda and salt into it. Whisk lightly. Add the egg and mix vigorously again. We start adding flour. Knead the elastic dough and put it in the refrigerator.
  2. Peel potatoes and boil. Drain the water, leaving a little broth. Make a puree using a masher. We heat the pan and spread the lard, cut into thin strips. Fry it until you get cracklings. Add them to puree. We also add butter to the crushed potatoes and add salt if necessary.
  3. Roll out the dough and cut out circles of the desired size. We spread the filling and carefully pinch the edges. Lubricate the steamer bowl with a thin layer of vegetable oil. We spread the dumplings and cook them for about 10 minutes. Serve the finished dish with melted butter and sour cream.

Vareniki with cherries

Ingredients:

  • 600 g flour.
  • 200 ml of kefir (can be replaced with sour milk or yogurt).
  • 1 egg.
  • 600 g cherries.
  • 150 g sugar.
  • 0.5 tsp soda.
  • 0.5 tsp salt.

Cooking:

  1. Preparing cherries. Wash the berries. Bones can be removed or left. Put the berries in a colander and let the juice drain while the dough is being prepared. If there is a lot of juice left on the cherries, you can blot them on a paper towel.
  2. Test preparation. Mix kefir, egg, salt, soda and 2 tablespoons of sugar.
  3. Mixing dough. Add flour and knead a soft, non-sticky dough. If it's still sticky after adding all the flour, add a little more.
  4. Formation of blanks. Roll out the dough on a floured board to a thickness of 2-3 mm. Cut out circles with a glass or cup.
  5. Formation of dumplings. Pour a little sugar on each circle, put berries on top. Pinch the edges. Make sure that the edges are pinched really securely, otherwise the filling may fall out.
  6. Steam cooking. Pour water into the bowl, put the dumplings on the grate. Set the steam cooking mode. Cook for 20 minutes covered.

Vareniki is a tasty and satisfying dish that is loved by people of all ages. But there is not always time to cook them according to all the rules. Therefore, someone came up with a recipe for how to make lazy cottage cheese dumplings. As a result, you will spend much less time and be able to enjoy this dish.

Ingredients:

  • Cottage cheese 5-9% - 0.5 kg.
  • Eggs - 2 pcs.
  • A glass of flour.
  • 3 tbsp butter.
  • 2-3 tbsp Sahara.
  • Salt to taste.

Recipe:

  1. It is advisable to chop the cottage cheese so that it becomes more tender. To do this, you can pass it through a sieve, a meat grinder or scroll in a blender. If you are in a hurry, you can skip this step, but lazy dumplings will turn out to be not so tender.
  2. Break eggs into a bowl with cottage cheese, add sugar and salt, pour in melted butter and mix thoroughly until smooth.
  3. Then gradually add flour and mix. Add flour in small portions and evaluate the consistency - the dough should not be too steep.
  4. Flour a work surface, put the curd dough on it and roll up the sausage. Determine the width yourself, but do not make it too thick. If there is a lot of dough, you can divide it into several parts to make it easier to roll.
  5. Press the sausage a little with your hand to flatten the sausage. But not to the state of a cake, about 2 cm.
  6. Now, at a slight angle, obliquely cut the flat sausage into diamonds. So those lazy dumplings turned out. It remains to weld them correctly.
  7. Boil water in a saucepan, add a little salt to taste, and dip the dumplings into boiling water one at a time. Stir at the end so they don't stick to the bottom of the pot. Wait for the lazy dumplings to float to the top and then cook for another 2-3 minutes. Ready!

Take them out with a slotted spoon, put them on plates and add something to your taste: butter, sour cream, and someone pours jam and makes dessert out of them. It all depends on your desires and preferences.

  2. Boil water in a saucepan, tie gauze on top so that the lid closes.
  3. Form dumplings with any filling, spread on cheesecloth, and keep steamed dumplings under the lid for 5-7 minutes. Leave space between dumplings - they will increase decently.

In a similar manner, with some exceptions, it is steamed. In this case, eggs are not added to the base and sugar is excluded from the composition. Soda in this case is extinguished over vinegar. Cottage cheese should be chosen with a fat content of at least 5%. If the product is granular, it is pierced with a blender or ground through a fine sieve until a homogeneous structure.

  • flour - 2 cups;

Raisins and vanilla are optional ingredients and are added as desired, and the amount of flour may differ from the declared one depending on the moisture content of the cottage cheese and the size of the egg.

Ingredients:

  • egg - 1 pc.;
  • flour - 200 g;
  • cottage cheese - 350 g;
  • sugar - 150 g;
  • salt - 0.5 tsp;
  • semolina - 2 tbsp. spoons;
  • quenched soda - 0.5 tsp;
  • vanillin - 1 pinch;
  • raisins - 1 handful;
  • oil.

Cooking

  1. Cottage cheese rubbed with sugar, vanilla and salt.
  2. Add washed raisins, semolina.

Steamed dumplings with berry filling always turn out tasty and juicy. This section presents a version with pitted cherries, instead of which you can take strawberries, raspberries, currants, blueberries, and other berries. When using frozen berries, they are first thawed and allowed to drain excess juice.

Ingredients:

  • kefir - 200 ml;
  • flour - 3 cups;
  • salt - 1 pinch;
  • sugar - to taste;
  • soda - 1 teaspoon;
  • cherry - 300 g.

Cooking

  1. Flour is mixed with salt, sugar and soda.

  • flour - 0.5 kg;

  • soda - 2/3 tsp;
  • vinegar - 1 teaspoon;
  • potatoes - 0.5 kg;
  • lard - 200 g;
  • onion - 3 pcs.

Cooking

  1. Sift flour, mix with salt, quenched soda.
  2. Add milk, knead the dough, leave it to proof for 30 minutes.
  3. Peeled potatoes are boiled, the broth is drained, the vegetable mass is crushed with a pusher.

In the season of fresh berries, you can cook delicious dumplings with strawberries in a steamed slow cooker. The dough here is kneaded on yogurt, instead of which you can take kefir of any fat content. When ready, the products are traditionally poured with melted butter or flavored with strawberry or other berry sauce.

How to steam dumplings

Cooking dumplings in a double boiler is a real pleasure. A multicooker with a steam cooking function is perfectly adapted. But even in a saucepan, having a special insert, cooking a dish will not be a problem. But if this is not available, do not get lost, replace it with gauze. In the recipe, I'll show you how to make it.

Stuffings for steam dumplings

Toppings can also be played with. In the berry season, it is prepared with strawberries, sweet cherries and cherries and other fresh berries. In winter, use frozen. They put cottage cheese, potatoes, onions, mushrooms, sauerkraut and fresh fried cabbage.

Recipe for steamed dumplings on kefir

You will need:

  • Kefir - 200 ml.
  • Egg yolk.
  • Sugar is a large spoon.
  • Salt - ½ teaspoon.
  • Soda - 1/3 of a small spoon.
  • Flour - 350-400 gr.
  • Any filling. I have a summer cherry. For her, I took 250 gr. pitted berries, a tablespoon of potato starch and sugar.

Step by step preparation:

Combine the yolk and kefir in a bowl, salt, beat with a whisk.

Pour the sifted flour into a bowl, send the yolk mixture to it, stir. Continue to work with a spoon, kneading the mass.

Transfer the test mass to the table. Knead again, but with your hands. The mass should turn out soft, do not hammer it with flour, then the dough will become lush. Ideally, the dough should come off easily, but not sticky.

In the test, it will not smell or taste of soda, since it will be extinguished in an acidic environment.

Cover the finished kefir dough with a towel or film and leave to “rest” for 20 minutes.

Divide the dough into pieces, roll each into a sausage and cut into pieces.

Roll out into small oval cakes, lay out the filling.

In my case, paying tribute to the summer, I put a little sugar, cherry berries on top, sprinkled starch.

Blind the dumpling, tightly fastening the edges so that it falls apart during cooking.

For steaming, take a pot of five liters, no less. Tie with gauze, as in the photo. Tie tightly so that under the weight of the dumpling the gauze does not sag much. Gauze tails can burn, so hide them under an elastic band.

Pour water 10 centimeters below the level of stretched gauze. When it boils, lay out the blanks and cover with a deep plate or lid. The diameter of the lid should be the same size as the pot, as the steam must be kept inside.

Make a distance between the blanks, touching, they can stick. Keep in mind that during cooking they will become lush and increase in size.

Cooking in a double boiler is not difficult, lay out the blanks and cook until tender. There is no need to flip.

How much to steam:

5 minutes is enough, because the filling is already ready, and the dough is cooked extremely quickly.

Finished product output: 60-65 pieces.

  1. Take care of the dough for steamed potato dumplings. Pour 0.5 l of kefir of any fat content into a bowl.









  2. Pour in 4 tsp. vegetable deodorized oil, mix everything.

  3. Add 5 cups of flour in parts, sifting it through a sieve, and knead the dough. Set aside for half an hour.

  4. Boil 10 medium potatoes in a saucepan in salted water until tender. Drain, unwind. Add 50 g of creamy, slightly warmed butter, mix.


  5. Roll a quarter of the dough into a tourniquet and cut into small equal pieces.

  6. Roll out the pieces with a rolling pin or flatten with your fingers into circles with a diameter of about 8-10 cm.





  7. Put the formed dumplings on a tray sprinkled with flour.

  8. Boil the water in a double boiler, arrange the dumplings on a wire rack separately and cook for about 6 minutes.



RECIPES OF AIR VARENICHKI FOR A STEAM





Steamed dumplings are more fluffy and tender. Usually, the filling for steamed dumplings is berry: cherry, currant, strawberry. But you can also cook dumplings with cottage cheese, potatoes, and meat. It is especially convenient to steam dumplings with berries, because they do not boil soft and turn out whole and juicy. The main thing that is included in the recipe for steamed dumplings is, of course, the dough. The dough for boiled dumplings is very similar to dumplings. For steamed dumplings, the dough is completely different.

Products:
Flour - 500-600 g,
what flour to choose? we will prompt
one egg,
300 ml of kefir,
a teaspoon of soda, slaked with vinegar,
half a teaspoon of salt.
Any filling (berries, potatoes, cabbage).
Cooking:
Sift flour into a large bowl, add slaked soda and an egg, pour in kefir and knead the dough. We spread it on a floured table and knead the dough with our hands until it stops sticking to our hands. The dough doesn't have to be tough. It should be soft and fluffy. Let the prepared dough rest for half an hour.
While the dough is resting, we will prepare the filling. The berries need to be sorted out, cleaned of twigs or stalks, depending on which berries you took, and dried.
We have prepared everything, now you can start sculpting dumplings. As you can see, the recipe for steamed dumplings at home is very simple.
We roll out the dough into a layer about 0.5 cm thick. You do not need to make the dough very thin. Our dough is tender, it can just tear. Cut out circles from the dough with a glass or cup. Usually, steamed dumplings are made larger than those that are boiled. In the middle of the circle we put the berries, pour a spoonful of sugar and close up the dumpling.
Next - the most important thing, the process of steaming. Take the wide pan itself, put a sieve or colander on it. The colander should be with frequent holes, there are those that look like a sieve. We put dumplings in a colander at a distance from each other and cover the colander (sieve) with a lid. Vareniki should not touch the water. Prepare for 7-8 minutes.
The most advanced way is to put the dumplings in a double boiler for 7-8 minutes. If you don’t have a steamer, a sieve, or a colander, then cover the pan with gauze and put the dumplings on the gauze, and cover with a bowl or lid on top.

Steamed cottage cheese dumplings

Today I cooked dumplings… “Ha, dumplings!” – you might think, who can be surprised with them… But dumplings are not simple ones. They are made from cottage cheese dough, steamed ... To be honest, I am a big fan of cottage cheese, but I have never put it in the dough for dumplings. But in vain! For such products are lush, soft and very tender. In general, a dumpling idyll!

Steamed dumplings from curd dough with berries

We will need:
Curd - 200 g
Eggs - 2 pieces
Sugar - 80-100 g (original 125 g)
Flour ~ 300 g
Soda - 1/2 teaspoon
Berries or fruits according to taste or season
Sugar for stuffing
Butter for lubrication

Cooking:
Grind cottage cheese or rub through a sieve, mix with sugar and eggs until smooth.
Add sifted flour with soda (do not extinguish soda).
Knead elastic dough.
Roll out the dough on a floured surface to a thickness of ~0.5 cm.
Cut out circles of the desired size from the dough, for example with a glass.
Pour a little sugar into the center of each circle, put berries on top and form dumplings.
Put dumplings in a double boiler, the bottom can be greased with vegetable oil.
Boil 6 minutes after boiling water.

P.S. The dumplings are tender, airy and very tasty. I liked the steamed version much more than the classic one in water. Regarding the original recipe, I halved the amount of food and reduced the amount of sugar. From this amount of products, 20-24 dumplings are obtained, depending on the size. How many berries or fruits you use depends on your desire, berries will take about 1 cup. Frozen berries should not be thawed first. I don’t know how to sculpt beautifully, so I got simple ones. I advise lovers of dumplings to try. If you make these dumplings with potatoes, then do not use sugar at all, but add half a teaspoon of salt. Help yourself

Steamed dumplings with berries


We will need the following ingredients:

For test:
. 1 glass of kefir, curdled milk or whey,
. 1 egg
. 3 cups flour
. 2 tbsp. tablespoons of vegetable oil
. 1 teaspoon of soda without a slide,
. a pinch of salt;

For filling:
. 400 g of berries of your choice (it can be strawberries, currants, cherries, raspberries and even mulberries),
. 2-3 tbsp. tablespoons of sugar (depending on the sweetness of the berries),
. 1 teaspoon of starch.

Cooking method:
Mix kefir, egg, salt. Add sifted flour with soda to them. Knead the dough.

During kneading, add vegetable oil. Knead the dough until it stops sticking to your hands.

Cover the dough with a towel and let rest for 20 minutes.

Mix sugar with starch. Starch is needed so that the juice does not flow out of the dumplings during the cooking process.

Form small balls from the dough, roll out cakes from them. Put a few berries in the cake, sprinkle with a little starch-sugar mixture and carefully pinch the dumpling.

In the process of cooking, the dumplings will almost double in size, so you need to put the dumplings in a container at a large distance from each other so that they do not stick together.

Steaming dumplings requires the presence of a double boiler, pressure cooker or other special device. For example, you can successfully use a colander inserted into a pan or, in extreme cases, cover the pan with gauze. Top the pot with an upside-down bowl to create a steamer effect.

Steam the dumplings for exactly 5 minutes.

Mix ready dumplings with butter and serve hot with sour cream.

1 egg
1 glass of kefir (250 ml)
0.5 teaspoon salt
1 tablespoon sugar
1 teaspoon soda

Mix the egg with sugar and salt, then with kefir and then with flour.

And you can make the dough by pouring a hill of flour, make a recess and the rest of the products there, but if the dough is with soda, then I like to do it the first way.
Then there are also two ways:
1. Roll out the dough and cut out circles with a glass and then sculpt dumplings.
2. Make a sausage out of the dough, cut off pieces and sculpt dumplings.
Put a handful of berries on a circle of dough and sprinkle with sugar.


Then carefully fold and pinch the edges.


Steam a few pieces under the lid for about 7 minutes.

Vareniki with poppy seeds

Ingredients of the dish - dumplings with poppy seeds:

  • Flour - 2 tbsp.
  • Water - 1 tbsp.
  • Poppy - 250 g
  • Salt - ½ tsp
  • Sugar - ½ tbsp.
  • Vegetable oil - 2-3 tbsp. l.
  • Honey (candied) - 2 tbsp. l.
  • Jam - 3 tbsp. l.

How to cook dumplings with poppy seeds:

Rinse the poppy well and pour boiling water over it. Then, almost immediately, drain the water, and put the poppy seeds on a napkin to dry. Crush poppy seeds in a mortar, then add honey and 1 teaspoon of sugar to it. Continue to grind until the mass becomes homogeneous.

Knead the dough from flour, warm water, salt and butter. Let the dough rest for about an hour. When the dough is ready, fill the pieces of dough with poppy seed filling. Boil dumplings in boiling water and serve hot to the table - with syrup, compote, uzvar or juice.
