We need this so that the potatoes do not boil when stewing. After frying, the potatoes should remain raw on the inside, but browned on the outside. Take the potatoes out of the pan and transfer them to a plate.


Put the pork ribs in the same pan, salt, pepper and fry also on very high heat.


The meat must be fried until caramelized or golden brown. Since pork ribs have their own fat, then you have it and stand out in the pan. We take out the fried pork ribs from the pan. We don't turn off the fire.


Cut the onion into small cubes, rub the carrots on a coarse grater. In the pan in which we fried the ribs, add the remaining olive oil and fry the carrots and onions until the onions are golden.

We shift the fried pork ribs into a large cauldron or deep pan with a double bottom, and send the previously fried potatoes there.

Add the fried onions and carrots to the cauldron with all the released fat and the remaining oil from the pan.

Separately, in an electric kettle, boil half a liter of water and fill our ingredients with this boiling water so that it completely covers the contents of the cauldron.


We measure the required amount of spices: salt, ground black pepper and bay leaf.

Add spices with bay leaf to the cauldron and mix well, taste the resulting broth for salt and, if necessary, add salt. We cover the cauldron with a lid, let the broth boil, reduce the heat to medium and cook potatoes with pork ribs for about an hour until the ribs are fully cooked (when the meat can easily be separated from the bone). All this hour of waiting, you will be busy with the fact that you will have to drive away household members from the cauldron who will come running to the aroma and will try to take a sample.

The finished dish should be thick, rich, some of the potatoes will boil a little, but will still be in the form of pieces, the meat will be fragrant and tender, and the gravy will be thick and tasty.
Arrange the potatoes with the ribs on serving plates, sprinkle with fresh parsley and serve with hot freshly baked bread. Praises of relatives are provided to you. "Pork ribs potatoes according to my mother's recipe" is easy to prepare and very satisfying and tasty everyday, and for me it is also a traditional dish from my childhood!
