This honey cake was my favorite cake as a child. He is sweet and very gentle!

Ingredients

✓ 3 cups of flour

✓ 1-2 tbsp honey

✓ 50 gr butter

✓ 1 cup sugar

✓ 1 tsp soda

✓ 2 tablespoons of vodka (you can leave it out)

✓ 1/2 tsp salt

✓ 2 cups of cream

✓ 2-3 cups of sour cream

✓ 1 tbsp vanilla essence or cognac

✓ 1/2 cup sugar or to taste

✓ walnuts (optional)

(cream can be made without cream, from 1 liter of rustic sour cream)

Recipe

The dough is cooked in a water bath. Boil water in a saucepan, put a bowl on top in which you will make the dough. The water under the bowl should boil slowly all the time.

Put butter, sugar, lightly beaten eggs in a bowl and heat the whole mass, constantly stirring with a whisk.

Add honey, then salt and soda (quicklime) and keep stirring constantly in a water bath until sugar dissolves, about 5 minutes.

Pour in 2 cups of flour, mix, continuing to heat the dough for another 5 minutes (the dough should warm up well).

Remove the bowl from the water bath, add another cup of flour and knead the dough. Preheat oven to 190°C/375°F.

Divide the finished dough into 8 parts. Roll out each piece into a 20-23 cm/8-9 inch circle (while one is baking, roll out the other).

Lightly grease a baking sheet with oil (saturate a paper towel with vegetable oil and grease the baking sheet, or spray with oil from a spray can) or cover with parchment paper.

Bake the cakes for 6-7 minutes until browned. Cut the hot cakes according to the stencil and cool completely on the wire rack.

Dry the remaining scraps in the oven and use for sprinkling the cake.

For cream: whip cream to soft peaks, add sour cream in parts and beat until thickened (not for long, otherwise the cream will heat up and the mass will turn out to be liquid).

Cream and sour cream should be cold. You can also mix sour cream with cream and beat everything at once.

Lubricate the cakes and the edges of the cake with cream (you can add finely chopped toasted nuts between the cakes or add nuts to the crumbs and sprinkle the cake). Decorate as desired.

Put the cake in the refrigerator for impregnation for 8-12 hours.

My comments: I make exactly half of the cream, add 1 tbsp to it. honey for flavor. I like it best with acacia honey.

I keep the dough for cakes in the refrigerator for 12-24 hours to develop a honey aroma.

Cakes are obtained 8-9 pieces, I usually leave half of one for sprinkling. And I eat the other half because it's delicious!

The dough is prepared in a water bath: sugar, butter and lightly beaten eggs are heated in a bowl, while stirring with a whisk. After that, honey, salt and soda are added. We continue to heat in a water bath and stir until the sugar dissolves. Add two-thirds of the flour, stir for another 5 minutes, then remove the dough from the bath and add the remaining flour.

The finished dough is divided into several parts, rolled out and placed in an oven preheated to 200 degrees. Each cake is baked until browned (it takes me no more than 10 minutes).

For cream, sour cream is whipped with sugar. Cakes are smeared with cream. The cake can be left overnight in the refrigerator to soak. It is also delicious if you add grated lemon zest to the cream.

  • powdered sugar: 350 g;
  • gelatin: 20 g;
  • cream: 0.5 l;
  • almonds, white chocolate, toffee candies: 200 g each;
  • milk: ¼ cup.

Beat 450 g of butter, add 3 cans of boiled condensed milk in parts and mix thoroughly. Cakes are smeared with prepared cream and soaked for eight hours.

This dough is needed to make the pot. To prepare it, margarine must be mixed with sugar, add 4 yolks, flour and baking powder without a slide. Divide the dough into 14 pieces, each rolled out between baking sheets with a diameter of 17 cm. The edges should be cut in a circle.

The cakes are baked in a heated oven. They are white with slightly brown edges.

Now you need to make a cream for the pot. Melt 250 g of butter, add unboiled condensed milk, vanilla, a spoonful of honey and heat, but do not boil. Remove, add gelatin, cool in the refrigerator and beat.

After that, whip 0.4 liters of cream and add to the resulting mass. The cream is ready, sand cakes are smeared with it. This should be done carefully, as they are very fragile.

The already soaked honey cake is cut in the shape of a figure eight, thus creating a silhouette of the head and torso. The scraps are crushed in a blender and molded into ears, arms and legs. The stomach does not need to be made very round, as a pot will be attached to it.

Glaze

Add 40 g of butter to milk and bring to a boil. Then you need to introduce powdered sugar and toffee. Cook until they dissolve. The icing is cooled and covered with a bear, after which it is put in the refrigerator to solidify.

Mastic

The next product needed to cover the Winnie the Pooh cake is mastic. It is used for the bear. It is prepared as follows: boil 50 ml of water, add a pinch of salt, 25 g of oil. After boiling, add another fifty grams of flour and cocoa. Remove, mix, add powdered sugar. The muzzle, ears, arms and legs are covered with mastic. Marzipan is used for eye proteins and tongue.

Pot

The pot needs to be shaped. White chocolate is poured with warmed cream and boiled until a homogeneous mass is obtained. Cover the pot with it and put it in the refrigerator.

Then you need to grind the almonds, mix with powdered sugar and protein. The resulting marzipan is divided into two parts, rolled out, then transferred to the finished pot.
