How to decorate a Frozen cake with cream

Accuracy is needed here, since with the right proportions The cream will work just right. For the first serving, I have 4 proteins weighing 145 grams and, accordingly, 290 grams of sugar. Add about 1/2 teaspoon of liquid citric acid and beat lightly with a mixer.



Place a bowl of egg whites in boiling water. At first, the temperature can be made higher (I have 6 out of 9), then the temperature should be lowered (I add 4 out of 9). Beat the egg white continuously, first at medium speed, then increase the speed.


Boil and whisk at the same time for 15 minutes. The cream will increase in volume, become airy and lush.


Then remove the cream from the water bath and continue to beat for another 3-5 minutes. The cream will become thicker.


Then we color the cream. I used the dye from Wilton.


We take a cream bag and a tall glass, put the narrow part of the bag into a glass, and turn the wide part inside out. Fill the bag with cream.




Then we cut off the tip of the bag, leaving a hole with a diameter of about 1 cm. Apply cream to the sides of the cake.



Smooth out the cream with a spatula. The spatula should be moistened with water and shaken, and then leveled. So the cream will not stretch too much behind the shoulder blade.



Apply cream to the top of the cake and level it.
